An incredibly delicious, made-from-scratch Meatball Casserole with creamy mashed potatoes. This casserole is the ultimate crowd-pleaser - juicy meatballs with a homemade marinara sauce over creamy mashed potatoes with lots of cheesy goodness!

1 recipe Italian meatballs
1 recipe mashed potatoes
2 cups mozzarella cheese (shredded)
2 tablespoon fresh parsley (chopped)

Steps:

  • Prepare mashed potatoes and meatballs: Prepare mashed potatoes as specified in my recipe here. Prepare Italian meatballs including sauce as specified in my recipe here.
  • Prep oven: Preheat the oven to 350°F.
  • Prepare casserole dish: Spray a 9x13-inch casserole dish with a bit of cooking spray (I used my Le Creuset Braiser, link under equipment).
  • Assemble casserole: Layer the mashed potatoes in the bottom of your casserole dish. Arrange the meatballs on top of the mashed potatoes evenly.
  • Bake: Transfer the casserole dish to the oven and bake for 20 minutes or until heated through. Sprinkle with mozzarella cheese evenly over the meatballs and bake for another 10 minutes or until the cheese has melted and starts to brown.
  • Serve: Garnish with parsley and serve warm.

Meatballs & Mashed Potatoes is straight up comfort food. The rich gravy brings it all together for one satisfying meal.

4 medium potatoes (cubed)
1 pound ground beef
3 tablespoons breadcrumbs
3 tablespoons milk
1 cup water
1 packet brown gravy mix
2 tablespoons butter
1/2 cup milk

Steps:

  • Fill a large pot halfway with water. Add the cubed potatoes and cook at a gentle boil until tender, about 15 minutes.
  • Meanwhile, add the breadcrumbs and milk to a bowl and allow to soak until it turns into a paste.
  • Combine the ground beef with the paste and mix together thoroughly with your hands.
  • Form evenly sized meatballs, around 1 1/4 inch in diameter, compacting the meat into a sturdy ball.
  • Add the meatballs to a large skillet over medium-high heat. Allow them to brown on one side before turning them over. Attempt to evenly brown the balls on each side. This process takes about 10 minutes.
  • When finished, remove the meatballs from the pan. Add water to the pan and whisk in the brown gravy mix. Simmer until slightly thickened.
  • When the potatoes have finished cooking, drain the water. Mash the potatoes with a masher or hand mixer. Add butter and milk and stir well to combine.
  • Serve meatballs with mashed potatoes and gravy over top.

2 cups refrigerated potato wedges (from 1 lb. 4-oz. pkg.)
1 (10 3/4-oz.) can condensed cream of onion soup
1/4 cup water
2 cups frozen broccoli florets (from 1-lb. pkg.)
24 frozen cooked meatballs (about 12 oz.), thawed
1/4 cup sour cream

Steps:

  • In 12-inch nonstick skillet, combine potatoes, soup and water; stir gently to mix. Bring to a boil. Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • Stir in broccoli and meatballs; simmer 10 to 15 minutes or until broccoli and potatoes are tender, stirring occasionally.
  • Stir in sour cream; cook just until thoroughly heated, stirring occasionally.

2 eggs
1/2 cup dry bread crumbs
1 envelope onion soup mix
1-1/2 pounds lean ground beef (90% lean)
2 tablespoons all-purpose flour
6 medium potatoes, peeled and thinly sliced
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup 2% milk
Paprika, optional

Steps:

  • In a large bowl, combine the eggs, bread crumbs and soup mix. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat; drain. Sprinkle with flour; gently roll to coat. , Place half of the potatoes in a greased 2-1/2-qt. baking dish. Top with meatballs and remaining potatoes. In a small bowl, combine soup and milk until blended; pour over potatoes. Sprinkle with paprika if desired. , Cover and bake at 350° for 60-65 minutes or until the potatoes are tender.

Take inspiration from the classic tapas dish patatas bravas with this recipe. The addition of homemade pork meatballs makes it the ideal Friday night family treat

3½ tbsp olive oil
1 onion, finely chopped
3 garlic cloves, crushed
1½-2 tsp hot smoked paprika (depending on how spicy you like it)
400g can chopped tomatoes
2 tsp sugar
100g pitted black olives
400g pork mince
70g fresh breadcrumbs
1 egg yolk
pinch of chilli flakes
small bunch of parsley, finely chopped
1kg white potatoes, cut into 3cm cubes
aïoli, to serve (optional; see tip, below)

Steps:

  • Heat 1 tbsp olive oil in a saucepan and fry the onions with a pinch of salt for 10 mins until soft. Stir in two-thirds of the garlic and cook for 1 min more. Add the paprika and cook for another minute, then stir in the tomatoes and sugar. Season to taste. Cook for 15 mins until thickened. Remove from the heat, stir through the olives and set aside.
  • Heat the oven to 220C/200C fan/gas 8. Put the mince in a large bowl with the breadcrumbs, the rest of the garlic, the egg yolk, chilli flakes and half the parsley. Season. Mix using your hands until well combined. Divide into 12 pieces, weighing for accuracy if you like, then roll into meatballs. Cover and put in the fridge to chill while you prepare the potatoes.
  • Toss the potatoes in a roasting tin with 1½ tbsp of the remaining oil and some seasoning. Roast for 40 mins until golden, tossing halfway through. Heat the rest of the oil in a frying pan over a medium-high heat and fry the meatballs for 5 mins, stirring until evenly browned. Add the meatballs to the tin with the potatoes and roast for 10 mins more. Reheat the tomato sauce, if needed, then spoon over the meatballs and potatoes. Top with the remaining chopped parsley and serve with some aïoli, if you like.

3 cups frozen broccoli florets, thawed
2 medium potatoes, peeled and cubed
3 medium carrots, sliced
1 medium onion, chopped
1 pound smoked kielbasa or Polish sausage, halved and cut into 1-inch pieces
1/2 pound lean ground beef
1 can (14-1/2 ounces) beef broth
Lemon-pepper seasoning to taste

Steps:

  • Preheat oven to 350°. Combine broccoli, potatoes, carrots and onion. Transfer to a greased 13x9-in. baking dish. Sprinkle with sausage. Shape beef into 1-in. balls; arrange over top. Pour broth over casserole; sprinkle with lemon-pepper seasoning. Bake, uncovered, until meatballs are no longer pink, about 40 minutes.
