MEATLOAF WITH GREEN BEANS
Dressed up with a little cheese, this classic meatloaf is an easy everyday choice. A combination of ground meat and a different cheese would also taste great -- try pork and beef with Gruyere or Monterey Jack cheese.

- Preheat oven to 375. In a medium bowl, combine breadcrumbs, milk, ketchup, cheese, scallion, carrot, 1/2 teaspoon salt, and teaspoon pepper. Add beef and gently combine. Transfer mixture to a rimmed baking sheet and form into a 2 1/2-by-4-inch loaf. Bake until cooked through, about 30 minutes.
- Meanwhile, in a small skillet, heat oil over medium. Add green beans and 1 tablespoon water. Season with salt and pepper. Cover and cook until water is absorbed, about 3 minutes. Uncover and cook, stirring occasionally, until beans are crisp-tender, about 3 minutes. Serve alongside meatloaf.

- In a large bowl, beat eggs, milk, ketchup, salt and pepper. Add beef and mix well. Pat half of the meat mixture into a greased 9x5-in. loaf pan; set aside. , For stuffing, saute the mushrooms and onion in butter until tender, about 3 minutes. Add bread crumbs, parsley, thyme, salt and pepper; saute until crumbs are lightly browned. Spoon over meat layer; cover with remaining meat mixture and press down gently. Bake at 350° for 1 hour or until a thermometer reads 160°, draining fat as necessary.

SIMPLY DIVINE MEAT LOAF WITH SPINACH

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.
- Bake 45 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, to a minimum internal temperature of 160 degrees F (70 degrees C). Let stand 5 minutes before slicing.

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish. , Bake, uncovered, at 350° for 65-75 minutes or until meat is no longer pink and a thermometer reads 160°. Let stand for 10 minutes before slicing.

BACON-GRUYERE MEAT LOAF WITH ROASTED CARROTS AND ONIONS
Steps:
- Heat oven to 400. In a medium bowl, combine the beef, bread crumbs, ketchup, grated onion, bacon, garlic, egg, 1/2 cup of the gruyere, 1/2 tsp. salt and 1/4 tsp pepper. Transfer the mixture to an 8-4 inch loaf pan and sprinkle with the remaining 1/4 cup cheese. Meanwhile, on large rimmed baking sheet, toss the onion wedges and carrots with the oil, 1/2 tsp salt and 1/4 tsp. pepper. Roast the meat loaf until cooked through 40-45 minutes. Pour off any accumulated fat and let rest 10 minutes before slicing. At same time roast the vegetables, tossing once, until tender, 35-40 minutes. slice loaf and serve with vegetables and addl. ketchup.

- Preheat oven to 350°F. Line a 9- x 5-inch loaf pan with aluminum foil and spray with cooking spray.
- In a large skillet, heat oil and butter over medium-high heat. Add onions and sugar to pan; cook, stirring occasionally with a wooden spoon, for 20 minutes. Stir in garlic and cook an additional 5 minutes or until onions are browned and very soft.
- Deglaze the pan by adding sherry and scraping brown bits from the bottom of the pan with a wooden spoon. Cook an additional 3 minutes or until sherry has evaporated. Cool for 5 minutes.
- In a large bowl add half of the caramelized onions, bread crumbs, milk, beef broth, parsley, thyme, Worcestershire sauce, salt, pepper and eggs. Stir to combine. Add in ground beef and gently mix with your hands to combine. Do not overmix.
