MEAN CHEF'S GRILLED SALMON WITH RED CURRANT GLAZE
Adopted from Mean Chef, who described it as "Very yummy, quick and easy grilled salmon"; this reminds me a bit of a lamb dish I love, Lamb Shrewsbury. I think that the sweet-tart sauce is a good foil for the rich, strong flavor of salmon. The sauce is fairly sweet, so some may wish to add more balsamic vinegar and/or lemon juice to increase the tartness.

Steps:
- Preheat an outdoor grill (to high if using a gas grill) and oil the grill grate.
- Melt ½ cup jelly in a small saucepan over low heat.
- Season salmon with salt and pepper and brush both sides with melted jelly.
- Grill until fish is opaque in the thickest part, about 8 minutes.
- Turn the pieces halfway through cooking time.
- While salmon is cooking, melt remaining ½ cup jelly over low heat.
- Add lemon juice, vinegar and mustard.
- Whisk in the olive oil and season with salt and pepper.
- Keep warm.
- Set the grilled salmon on individual plates, spoon the sauce partly over and around the fish, and garnish with fruit if using.
- notes: The salmon can also be cooked in a preheated 450-degree oven.
- Place a heavy, oven-proof 12-inch skillet on medium heat 5 minutes.
- Pour about 2 teaspoons olive oil into pan.
- Put salmon into the pan and brown.
- (If using fillet with skin, the skin side should be facing up.) Turn and pour melted jelly over salmon; season with salt and pepper.
- Place skillet in oven and bake a total of 12 minutes per inch of thickness.
- Or brown the salmon in 2 batches, transfer to a baking dish and bake.

SIMPLEST GRILLED SALMON
For those who love seafood but don't like to cook it, fearing that the scent will overpower their kitchens, the grill is among the greatest of gifts. And cooking salmon on the grill couldn't be easier. You can use a charcoal or a gas grill, and you only need olive oil, salt and pepper to bring out the salmon's rich flavor. A clean grill is crucial for cooking fish, which doesn't have a lot of fat, meaning it's more liable to stick to the grate. Scrape and oil, always.

- Build a medium-high fire on a clean gas or charcoal grill. (If the grill isn't clean, the salmon will stick to the grate.)
- Season the salmon with salt and pepper, lightly oil the grate of the grill, then place the fillets skin-side up over the fire and cook for about 2 to 3 minutes, until lightly browned.
- Gently flip the salmon over and cook 3 to 4 minutes more for medium rare. You can cook a little longer if you'd like, but take care not to overcook.

SWEET GLAZED SALMON
This recipe is the most delicious salmon recipe, easy to prepare and very refreshing. Everyone that ate this dish loved it. I made this recipe, and it is easily my favorite.

Steps:
- Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
- Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
- Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.
