1 tablespoon olive oil
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 cup sugar snap peas
1 cup carrots (sliced)
1 cup mushrooms (sliced)
2 cups broccoli
1 cup baby corn
1/2 cup water chestnuts
¼ cup soy sauce
3 garlic cloves minced
3 Tablespoons brown sugar
1 teaspoon sesame oil
1/2 cup chicken broth
1 tablespoon cornstarch
chopped green onions and sesame seeds for garnish (optional)

Steps:

  • In a wok or large skillet add 1 Tablespoon olive oil over medium high heat. Add bell pepper, peas, carrots, mushrooms, broccoli, baby corn, and water chestnuts. Sauté 2-3 minutes until veggies are almost tender.
  • In a small whisk together soy sauce, garlic, brown sugar, sesame oil, chicken broth, and cornstarch.
  • Pour over veggies and cook until the sauce has thickened. Garnish with chopped green onions and sesame seeds if desired

Put together four adult sized lunches in just 30 minutes with this Meal Prep Veggie Stir Fry, and you'll have produce-packed, plant-based lunches to enjoy all week long!

1/2 cup low-sodium soy sauce
1/4 cup water
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
2 tablespoons cornstarch or arrowroot powder
1 tablespoon sesame oil
1 tablespoon fresh grated ginger root
1/2 teaspoon red pepper flakes, plus more to taste
Water
1 pound fresh broccoli, cut into florets
2 tablespoons avocado oil
1 large green bell pepper, cut into bite-sized pieces
1 large red bell pepper, cut into bite-sized pieces
1 large white onion, cut into bite-sized pieces
2 cloves garlic, minced
8 ounces crimini mushrooms, sliced
1 (14 ounce) can baby corn, drained and halved
4 cups of brown rice, quinoa, or stir fry noodles, for serving
Sliced green onions and sesame seeds, for serving

Steps:

  • In a small mixing bowl, whisk together all the sauce ingredients until well-mixed. Set aside.
  • Heat a wok or other large, deep skillet over high heat. Fill with 1/2 inch of water, and then add the broccoli. Steam the broccoli until just bright green and slightly tender, about 5 minutes. Remove broccoli with slotted spoon and set aside, drain remaining water, and wipe wok clean.
  • Return wok to high heat, and add in the avocado oil. Add in the red and green bell pepper, and cook for 1 minute. Then add in the onion and garlic and cook for an additional minute. Add in the mushrooms, and cook until the mushrooms begin to soften and darken, about 5 minutes. Then add in the baby corn and broccoli and stir well.
  • Stir the sauce again, and then pour over the stir fry. Heat until just thickened, about 30 seconds, and then remove from heat.
  • Scoop 1 cup of rice, quinoa, or stir fry noodles into a food storage container. Then add in 1/4 of the stir fry mixture. Sprinkle with sesame seeds. Place sliced green onions in a small, airtight container with the stir fry.
  • Let containers cool, with lids open, for about 15 minutes, then cover, and store in fridge for up to a week.
  • To reheat in microwave: Remove lid and green onions, and microwave stir fry and rice at full power for 1-2 minutes, stopping and stirring halfway through. Once hot, sprinkle on sliced green onions and serve.

3 chicken breasts, cubed
salt, to taste
pepper, to taste
1 teaspoon garlic, crushed
½ cup soy sauce
⅓ cup honey
1 ½ tablespoons sesame seed, more to garnish
1 onion, sliced
2 small bell peppers, thinly sliced
2 cups broccoli
1 green onion, thinly sliced
white rice, cooked

Steps:

  • In a pan, cook cut chicken over medium-high heat until almost done. Salt and pepper to taste.
  • Reduce heat to medium and stir in the crushed garlic.
  • Add in the soy sauce, honey, and 1 tablespoon of the sesame seeds. Stir until thickened.
  • Remove the chicken from the pan, leaving the sauce, and add the vegetables to the pan.
  • Cover the pan for several minutes and cook until the vegetables begin to soften, then remove the lid and stir until the sauce is thick again.
  • Split the rice, vegetables, and chicken evenly between 4 containers. Top with a sprinkle of sesame seeds and sliced green onion. Refrigerate for up to 4 days.

100 g broccoli
100 g cauliflower
100 g carrot
100 g snow peas
100 g capsicums
1 teaspoon salt
3/4 teaspoon sugar
Dash ground white pepper
1 tablespoon oyster sauce
1/4 teaspoon cornflour
2 tablespoons water
1 tablespoon chopped garlic
1 tablespoons vegetable oil

Steps:

  • Cut the broccoli and cauliflower into florets.
  • Peel and cut the carrots into wedges.
  • Remove the stings of the snow peas.
  • Cut the capsicums into triangular pieces
  • Blanch the vegetables. Drained and set aside.
  • Heat up the vegetable oil in the wok.
  • Saute the garlic until fragrant over low heat.
  • Add the salt, sugar, ground white pepper, oyster sauce, cornflour and water. Cook until the sauce becomes translucent.
  • Add the blanched vegetables. Stir-fried over high heat until it turns fragrant.
  • Dish out and serve.

This is a quick and easy vegetable stir-fry, perfect to use up whatever fresh vegetables you have in your fridge. I used purple cauliflower because it looks so pretty but regular cauliflower works as well of course.

2 tablespoons canola oil
1 small onion, diced
1 clove garlic, minced
½ cup sliced carrots
½ cup purple cauliflower, chopped
½ cup chopped fresh broccoli florets
½ cup sliced fresh mushrooms
4 tablespoons soy sauce
¾ cup water
1 cup cherry tomatoes, halved
salt and freshly ground black pepper to taste
1 tablespoon fresh basil, chopped, or to taste
2 cups cooked rice
1 teaspoon toasted sesame seeds

Steps:

  • Heat oil a large skillet over medium heat and cook onion until soft and translucent, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Add veggies in the following order with approximately 2 minutes of sauteing between each addition: carrots, cauliflower, broccoli, and mushrooms last. Pour in soy sauce and mix until all vegetables are well coated with sauce. Cook for 2 minutes.
  • Pour in water and add tomatoes, salt, and pepper. Bring to a boil, reduce heat, and bring to a simmer. Cook until all vegetables are fork-tender, but not too soft, 3 to 5 minutes. Add basil towards the end.
  • Serve warm on a bed of rice sprinkled with sesame seeds.
