MEATLOAF FOR ONE
When cooking for ourselves alone, we tend not to indulge in the comfort food of family-sized meals such as meatloaf. We're intimidated with thoughts of leftovers or of breaking down recipes for a single portion. This recipe will give you one dinner and perhaps a sandwich or enough to share with a friend.

ALL IN ONE MEATLOAF
A great way to include all four food groups in one dish, and sneak a wide variety of vegetables into your family's diet. The texture is very soft, making it easy for baby to mash or chew. Breadcrumbs can be made ahead of time and stored in the freezer in a baggie.

EAT ONE-FREEZE ONE MEAT LOAF
I COULD have called this recipe "Busy Lady's Meat Loaf". It's quick to prepare and you just thaw, heat and serve the second loaf. This is an original recipe. I enjoy creating my own. When our son was growing up, he'd ask, "Is this one of your originals or did it come from a cookbook?" -Bonnie Baumgardner Sylva, North Carolina
