MATCHA ALMOND CAKE

1/2 cup unsalted butter, plus more to grease the pan
1 cup all-purpose flour, plus more for dusting the pan
1 1/2 teaspoons baking powder
1/4 teaspoon fine table salt
5 ounces cream cheese, softened
3/4 cup granulated sugar
2 large eggs
2 1/2 teaspoons matcha green tea powder
3/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1/3 cup sliced almonds, optional
1/2 cup confectioners' sugar
2 teaspoons fresh lemon juice
1/8 teaspoon almond extract

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Butter and flour a 9-by-5-inch loaf pan.
  • Combine the flour, baking powder and salt in a medium bowl.
  • Combine the butter, cream cheese and sugar in a large bowl until light and fluffy. Beat in the eggs one at a time, then stir in the matcha, almond extract and vanilla. Gently stir in the flour mixture with a wooden spoon until it's just incorporated, being careful not to overmix.
  • Pour the batter into the prepared pan and sprinkle the almonds evenly over the top, if desired. You can put as many or as few of the almonds as you like or none at all! I think it adds a wonderful crunch to the top of the cake.
  • Bake until a toothpick inserted in the center of the cake comes out clean, 40 to 55 minutes.
  • Let cool in the pan for 10 minutes, then turn it out onto a wire rack. Meanwhile, quickly put together the glaze while the cake is still pretty hot.
  • For the glaze: Whisk together the confectioners' sugar, lemon juice and almond extract in a small bowl. Whisk in some water, 1 tablespoon at a time, until the mixture is smooth and loose. Drizzle the glaze over the top of the cake with a spoon and brush the sides using a pastry brush. Cool until the glaze creates nice sugary crust on the outside.

MATCHA MACAROON MONSTERS

Macaroons are traditionally made around Passover since they don't have any leaveners, but I make them all year round because they're delicious! This version has my favorite natural green food coloring, matcha, to make them look like monsters.

1 cup (283 grams) sweetened condensed milk (reserve the rest of the can to add to your morning coffee!)
1 tablespoon culinary-grade matcha
One 14-ounce (396-gram) bag sweetened shredded coconut
2 large egg whites
1/4 teaspoon kosher salt
4 ounces dark chocolate, chopped
Coarse silver sanding sugar, for dipping
Candy eyeballs, for decorating

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 350 degrees F. Line two baking sheets with parchment and set aside.
  • In a large mixing bowl, whisk together the condensed milk and matcha. Mix in the coconut and set aside.
  • In a separate large mixing bowl, add the egg whites and salt. Using a hand mixer, beat until stiff peaks form. Using a rubber spatula, fold the egg whites into the coconut mixture. Spoon lightly packed 2-inch balls (you can use a 2-inch cookie scoop or weigh 1.5 ounces) of the mixture onto the baking sheets, spaced 1 inch apart.
  • Bake in the oven until golden brown; begin checking for doneness at 18 minutes. Remove from the oven and let cool for a few minutes on the pans. Transfer to a wire rack to cool completely. Allow the baking sheets to cool completely. You'll use them again.
  • Melt the chocolate in a microwave in 30-second increments, stirring after each, or in a heat-safe bowl over a pot of simmering water, stirring often. Dip the bottoms of the macaroons in the chocolate, scraping off any excess. Then dip in the silver sanding sugar and return to the parchment-lined baking sheet. Attach the candy eyeballs using the chocolate as glue. Let the macaroons set at room temperature or in the fridge. Enjoy!
  • The macaroons can be kept at room temperature for about 3 days or in the fridge for up to a week.

MATCHA MONSTER MERINGUES

3 large egg whites
Pinch of salt
1/2 teaspoon cream of tartar
3/4 cup superfine sugar
1/2 teaspoon pure vanilla extract
Candy eyeballs, for decorating
2 tablespoons matcha powder (ceremonial grade)

Steps:

  • Preheat the oven to 250˚ F. Line two baking sheets with parchment paper. Beat the egg whites and salt in a large bowl with a mixer on medium speed until frothy. Add the cream of tartar and increase the speed to medium high; beat in the sugar 1 tablespoon at a time, then beat in the vanilla. Continue beating until the meringue is thick, glossy and holds stiff peaks, about 6 more minutes.
  • Transfer the meringue to a large piping bag fitted with a large round tip. Pipe into spiral cone shapes, 2 inches in diameter and 3 inches tall, about 2 inches apart on the baking sheets. Decorate each meringue with a candy eyeball. Dust with the matcha.
  • Transfer the meringues to the oven and bake 1 hour. Turn off the oven and let the meringues stand in the oven until dry, about 3 hours or overnight.

1 3/4 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
2/3 cup brewed coffee
1/2 cup unrefined coconut oil
1/3 cup unsweetened cocoa powder
4 ounces semisweet chocolate, chopped
One 14-ounce can coconut milk
1 teaspoon vanilla
2 large eggs, lightly beaten
16 ounces white chocolate, chopped (or white chocolate chips)
2 teaspoons cooking-grade matcha
Candy eyeballs, for decorating

Steps:

  • Preheat the oven to 350 degrees F. Generously grease a 10- to 12-cup bundt pan with the butter, then dust it with flour, tapping out any excess.
  • Whisk together the flour, sugar, baking soda and salt in a large mixing bowl; set aside.
  • Heat the coffee, coconut oil, cocoa powder, semisweet chocolate and 1/3 cup of the coconut milk in a small saucepan over medium heat, stirring frequently, until the chocolate is melted and makes a smooth sauce, 4 to 5 minutes. Fold the chocolate mixture into the flour mixture until smooth and combined. Fold in the vanilla and eggs until smooth.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, 45 to 55 minutes. Let the cake cool in the pan for 10 minutes, then turn it out onto a cooling rack set inside a baking sheet to cool completely, 1 to 2 hours.
  • Meanwhile, make the ganache: Put the white chocolate in a heatsafe bowl; set aside.
  • Sift the matcha into a saucepan and whisk in 1/4 cup of the coconut milk. Keep whisking until no lumps remain. Whisk in the remaining coconut milk. Set over medium heat and cook, stirring often, until the mixture just begins to boil. Pour it over the white chocolate, let it sit for a few seconds, then stir it all together until the chocolate melts. Let the ganache cool slightly, stirring often, until no longer hot to the touch and thickened but still pourable.
  • Pour 1 cup of the ganache over the cake and refrigerate until hardened, about 10 minutes. Pour the remaining ganache over the cake and refrigerate until hardened, about 10 minutes. Scrape the ganache at the bottom of the baking sheet back into the bowl and pour it over top once more. Let it harden, about 10 minutes.
  • Decorate the cake with candy eyeballs, then slice and serve.

½ cup canola oil
2 ¼ cups all-purpose flour
1 tablespoon baking powder
1 cup whole milk
3 drops orange food coloring
3 drops purple food coloring
3 drops black food coloring
1 tablespoon cocoa powder
4 cups powdered sugar
½ cup milk, or water
2 drops orange food coloring
2 drops black food coloring
candy corn
1 ice cream sugar cone, green

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large bowl, combine the sugar, vanilla, salt, and eggs. Beat with an electric hand mixer for 2-3 minutes, until pale in color.
  • Add the canola oil and beat until incorporated.
  • In a medium bowl, mix together the flour and baking powder.
  • Add half of the flour to the egg mixture and beat until almost completely combined. Add half of the milk and beat to incorporate. Add the remaining flour and then the rest of the milk and beat just until no flour streaks remain.
  • Divide the batter between 3 medium bowls evenly. Add the orange food coloring to one bowl, the purple food coloring to another, and the black food coloring to the last. Sift the cocoa powder into the bowl with the black food coloring. Stir each batter well with a rubber spatula to combine.
  • Grease a bundt pan and add ½ cup (120 ml) of batter at a time, alternating between colors to create a marbled effect, until all of the batter is used.
  • Bake for 40-45 minutes, or until a toothpick inserted near the center of the cake comes out clean. Let cool before decorating.
  • To make the glaze, add the powdered sugar and milk to a large bowl and whisk until thick and smooth.
  • Transfer about 2 tablespoons of the glaze to a small bowl. Add orange food coloring to the large bowl of glaze and black food coloring to the small bowl. Mix well until the colors are smooth.
  • Pour the orange glaze over the cake, coating evenly. Let dry for 5 minutes, then use a spoon to drizzle lines of black glaze over the cake to look like pumpkin ridges.
  • Fill the center with candy corn and top with the green sugar cone as a "stem."
  • Enjoy!
