MASHED BUTTERNUT SQUASH
Mashed butternut squash is an easy, versatile, and healthy side dish you can pair with so many dishes. Savory, naturally vegan, and absolutely delicious!

Steps:
- Place a rack in the center of your oven and preheat the oven to 350 degrees F. For easy clean up, line a rimmed baking sheet with parchment paper or aluminum foil.
- Wash and dry the squash. Trim off the top and bottom ends, then carefully slice it in half lengthwise. (No need to peel it.) Scoop out the seeds. Place it cut-side up on the prepared baking sheet.
- Brush the cut sides of the squash with 1 tablespoon of the olive oil and the maple syrup. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bake for 1 hour 15 minutes, or longer depending upon the size of your squash, until very tender and the squash pierces easily with a fork. Let rest until cool enough to handle.
- Carefully scoop out the flesh and place it in the bowl of a stand mixer or a large mixing bowl. Add the nutmeg, cayenne, milk, Parmesan, parsley, and remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mash the butternut squash, either by hand with a potato mixer, or with an electric hand mixer on low speed, or the paddle attachment of a stand mixer on low speed, until it is as smooth as you like (we leave ours a bit chunky). Taste and adjust the seasoning as you like. Enjoy hot.

- Heat a large skillet over medium-high heat. Add the olive oil and butter.
- Once the oil is hot and the butter is bubbling, add the yellow squash. Stir the squash to coat them in the butter and oil. Sauté for 5 minutes. Stir again and flip the squash over and cook for 4 more minutes.
- Add the garlic and thyme to the pan. Stir to combine and cook for an additional 2 minutes.
- Remove the squash from the heat and add the chopped basil, lemon juice, salt, and pepper. Stir and serve immediately.

SOUTHERN BAKED YELLOW SQUASH
I coaxed this easy (and forgiving) recipe from its maker after tasting it at a pot luck, and was surprised by its simplicity. Just a few ingredients make a delicious summer side dish for anything barbecued, grilled, or smoked - especially if the squash is home grown!

- Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
- Place the squash in a large saucepan, cover with water, and boil until soft, about 15 minutes. Drain the squash well, place in a large mixing bowl, and mash until slightly chunky. Stir in 1/2 cup of bread crumbs, onion, eggs, 1/4 cup of butter, sugar, salt, and pepper until thoroughly combined, and spread mixture into the prepared baking dish. Drizzle the top of the casserole with 1/4 cup melted butter, and sprinkle 1/4 cup bread crumbs over the butter.
- Bake in the preheated oven until the casserole is cooked through and the top is golden brown, about 1 hour.

EASY SUMMER SQUASH MASH
My ex-mother-in-law gave me this recipe years ago and every time I make it I receive praise from my family and friends. I don't believe there has ever been one person who does not love Summer Squash made this way. Also, I have found that people who do not ordinarily like squash, like this recipe. I hope you will try this unique way of cooking Summer Squash.

Steps:
- Wash, core and quarter Squash and place in sauce pan.
- Add water, cover and place on stove. Bring to boil and then turn down to simmer. Cook until Squash is fork tender.
- Drain water.
- Mash as you would potatoes. Add butter and continue mashing until butter is incorporated. This will be chunky.
- Add salt to taste and serve. Yum!

- Place the squash and onion in a colander, sprinkle with salt, and drain about 30 minutes, until no longer moist.
- In a bowl, mix the squash and onion, flour, cornmeal, egg, and cheese. Season with pepper.

Steps:
- Place squash in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- In a bowl, mix the squash, cornbread, margarine, sage, cream of mushroom soup, egg, onion, sugar, salt and pepper, and milk. Transfer to the prepared baking dish.
- Bake 30 minutes in the preheated oven, or until lightly browned.

- Brush a few drops of olive oil on the yellow squash, prick with a fork and place on a foil lined baking sheet. Roast for about 20 to 25 minutes until done. It is well done when a fork can be pierced through easily.
