PEAR-LIME GELATIN SALAD
A "must" at our family reunions is this easy make-ahead gelatin salad. Try decorating the top with maraschino cherries. The red and lime-green color is especially pretty for the holidays.

- Drain pears, reserving juice; set pears aside. In a small saucepan, bring juice to a boil. Stir in gelatin until dissolved. Remove from the heat; cool slightly. , In a food processor, combine pears and cream cheese; cover and process until smooth. Transfer to a large bowl; stir in gelatin mixture until blended. Stir in the pineapple and 3/4 cup pecans. Fold in whipped topping. , Pour into an ungreased 11x7-in. dish. Refrigerate until set. Sprinkle with remaining pecans. Cut into squares.

EASY PEAR LIME JELL-O SALAD
A deliciously refreshing salad that lends itself well for St. Patrick's Day, Christmas, and Easter.

- Pour lime gelatin into a clean glass mixing bowl. Add 2 cups hot water; stir for 2 minutes or until gelatin is completely dissolved.
- Using a colander, drain the pears and reserve the juice.
- Add 3/4 cup cold water and the pear juice (should be around 3/4 cup of juice) to the gelatin mixture; stir.
- Chop pears into bite-sized segments and gently stir them into the gelatin. Refrigerate until the gelatin is fully set.
- Use a large spoon and stir the gelatin until it is in small clumps. Stir in whipped topping. Serve.
- Refrigerate leftovers.

- 1. Boil water and pear juice, enough to make one cup. First Mixture: Stir 1 packet gelatin with a little cold water, stir in lime juice,then add the warm juice and the mashed pears add one or two Tbs. simple syrup, and stir in softened cream cheese, and whip together well.Optional: add four drops of green food coloring. Chill until thickened.
- 2. In another bowl combine 1 cup boiling hot water and Lime Jello and stir well, let cool, and then add 8 oz. of Cool Whip. Chill until thickened.
- 3. Prepare a mold by spraying with oil; I used a bundt pan. Place slices of the second can of pears in the bottom, spoon the first mixture of Pears/juice/cream cheese into the mold. Then add the final layer of Lime Jello/Cool Whip and cover tightly with foil and chill overnight. If making early in the a.m. it should be fine by evening.
- 4. Turn the mold upside down over a serving platter, and tap gently to loosen gelatin. Decorate with marashino cherries if desired. It's great for dessert or on lettuce as a salad.
LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

- Dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth. Stir in vanilla, oranges, pineapple, soda and pecans. I have not tried this one yet but I thought It sounded interesting so I thought I'd save it here until I can try it myself. For more texture you could add 1/2 cup of chopped nuts to this salad. Cook time is chill time.

- In a small saucepan, add 1 cup of pear juice and bring to a boil.
- Remove from heat.
- In a large bowl combine dry lime gelatin with pear juice and stir until gelatin is dissolved.
- Chill until partially set.
- In a medium bowl, cream the cream cheese with milk until blended and smooth.
- In a small bowl, mash pears until smooth. Mix with the cream cheese mixture and mix until smooth.
- Combine gelatin mixture and cream cheese mixture and blend until smooth.
- Fold in cool whip.
- Pour into a mold or leave in a bowl and chill 2-3 hours or until set.

- 1. Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. 2. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. (OPTION: Cut pears into small pieces, and do NOT blend in with remaining ingredients.) 3. Pour back into the bowl, and gently whisk in the whipped topping. Transfer to a mold or serving bowl, cover and refrigerate until firm, at least 4 hours. 4. To unmold, dip the mold briefly into hot tap water to loosen the gelatin, then invert onto a plate.
