RAISED PORK PIE

Raised pork pie image

Unsure how to make a pork pie? This traditional hot water crust pastry filled with pork shoulder and belly will ensure success

Provided by Valerie Barrett

Categories     Lunch

Time 3h5m

Number Of Ingredients 15

800g pork shoulder, minced or finely chopped
400g pork belly, half minced and half chopped
250g smoked bacon, cubed
½ tsp ground mace
2 large pinches ground nutmeg
1 tbsp fresh chopped sage
1 tsp fresh chopped thyme
½ tsp salt
1 tsp ground white pepper
575g plain flour
200g lard
220ml water
1 egg, beaten
6 gelatine leaves
300ml chicken stock

Steps:

  • Heat the oven to 180C/160C fan/gas 4. In a large bowl mix together all the ingredients for the filling.
  • To make the pastry, put the flour in a large bowl, then put the lard and water into a small pan and heat gently until the lard melts. Bring just to the boil and then stir into the flour using a wooden spoon. When the mixture is cool enough to handle, (it should still feel very warm) knead well until smooth.
  • Cut off 1/4 of the dough, wrap in cling film and reserve for the lid. Roll out the remaining dough to a circle and then place in the base of a non-stick 20cm springform cake tin. Working quickly while the dough is warm and pliable, press the dough evenly over the base and up the sides of the tin. Make sure there are no holes. Fill with the meat mixture and pack down well. Roll out the dough for the lid. Place on top of the pie. Pinch all around the edge to seal the pie. Make a hole for steam in the centre, using the handle of a wooden spoon.
  • Cook in the oven for 30 mins then reduce the heat to 160C/140C fan/gas 3 and cook for 90 minutes. Brush the top with beaten egg and return to the oven for a further 20 mins. Leave until cold.
  • Soak the gelatine in cold water for about 5 mins, then remove and squeeze out the excess water. Heat the stock until almost boiling. Remove from the heat and stir in the gelatine. Leave to cool to room temperature.
  • Use a small funnel to pour the stock into the pie through the hole in the top. Pour in a little at a time allowing a few seconds before each addition. Place in the fridge to set overnight.Watch our pork pie video for techniques and tips.

MARY'S PAPRIKA PORK IN A POT

Mary's paprika pork in a pot image

Delicious and simple paprika pork dish, easy to make, great for home freezing

Provided by Mary Cadogan

Categories     Dinner, Lunch, Main course, Supper

Time 1h

Number Of Ingredients 5

3 onions , thinly sliced
600g pork fillet
2 tbsp paprika
300ml/½ pint chicken or vegetable stock
100ml crème fraîche (about half a tub)

Steps:

  • Heat 2 tbsp oil in a pan add the onions and fry for 10-15 minutes, stirring occasionally until softened and lightly coloured.
  • Cut the pork into sizeable chunks, then add to the pan and stir over a fairly high heat to seal and brown them all over. Stir in the paprika, cook briefly, then add the stock and bring to the boil.
  • Cover and cook for 30-35 minutes, until the pork is tender. Stir in the crème fraîche and simmer for a further 2 minutes. (You can prepare the dish to this point up to 2 days ahead or freeze for up to 3 months.) If you have a few chives or a bit of parsley handy, snip this over the pork before serving with rice and a green vegetable - broccoli or stir-fried cabbage make the perfect accompaniment to this simple but delicious dish.

  • For the filling, roughly chop the pork and put it into a food-processor. Pulse briefly until it looks like coarse minced meat. Be careful not to over-process or it will become too smooth – you want to have a bit of texture.
  • Now make the pastry. Put the flour and salt into a large heatproof bowl. Tip the lard and butter into a small pan and pour in 150ml water. Heat this over a medium heat so the fats can melt, then raise the heat.
  • Tip the dough onto a lightly floured surface and knead briefly until smooth. Wrap it in clingfilm and chill for 30–40 minutes. Try not to leave it much longer as this type of pastry can easily harden over time and become difficult to handle.
  • Lightly butter 6 small pudding moulds. Preheat your oven to 200°C/180°C fan/400°F/Gas 6. Divide the meat filling into six equal amounts. Cut the dough in half and keep one half wrapped while you shape the other half into a disc and roll out on a well-floured surface, to about 3mm thick.
  • Line three of the small pudding moulds with the larger circles, pressing the pastry well against and up the sides, pressing and smoothing it with your fingers (you'll find this pastry quite pliable) so it evenly covers the inside of the moulds, smoothing out any thicker folds that have formed.
  • Spoon a portion of the filling into each pastry-lined mould and press it down so that it is well packed in. It should sit slightly below the top of each tin.
  • Brush the pastry edges with egg and cover with the pastry lids, pressing them down onto the filling. Press the edges well together to seal, then flute them to decorate.
  • Brush the pastry with beaten egg to glaze and make a hole in the middle of each lid with a skewer to create a small vent. Repeat with the remaining half of the pastry and filling so you have six pies.
  • Sit the pies on a baking sheet and bake for 40–45 minutes until the pastry is a rich golden brown. Remove them from the oven and let them sit for about 30 minutes.
