NO-BAKE MARSHMALLOW SLICE

Steps:
- Prepare a 23-25cm slice or cake tin with cooking spray and baking paper (allows paper to stick)
- Crush the biscuits, leaving some pieces a little chunkier sized crumb, I use a food processor to make this easier.
- Using kitchen scissors or sharp knife, slice the marshmallows - I usually slice off a third then cut the remaining bit in half and set aside.
- In a large pot add the butter, condensed milk, brown sugar and cocoa and over a low heat melt until completely combined, stirring occasionally.
- Once melted add the vanilla and stir in well.
- Once the ingredients fully combined & melted, pour into this the crushed biscuits and the marshmallows - quickly combine all the ingredients.
- Spoon mixture into the lined slice tin. Firmly press down with the back of a spoon.
- Allow to set in the fridge before slicing - ideally overnight.
- Slice into squares to serve, storing in an airtight container in the fridge.

- In a large microwave-safe bowl, microwave chocolate chips and oil, uncovered, at 50% power until chocolate is melted, stirring every 30 seconds, 1 to 1-1/2 minutes. Stir in cereal until blended; fold in marshmallows. Drop by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until firm, about 15 minutes.

MARSHMALLOW DROPS (NO-BAKE)
I clipped this recipe for no-bake cookies from the newspaper many years ago. I haven't made it yet, but it sounds like it would be good by the list of ingredients. NOTE: Prep time does not include standing (cooling) time.

Steps:
- Melt the butter and sugar in a heavy saucepan. Remove from heat & add the eggs. Return to heat. Cook and stir over "medium" until mixture is thick and bubbly (should take about 2 minutes).
- Remove from heat and let stand for 25 minutes at room temperature, stirring once or twice. If you are adding peanut butter, do so at this point.
- Stir in the vanilla, then the graham cracker crumbs.
- Blend in the marshmallows, nuts and coconut.
- Drop rounded teaspoons onto waxed paper lined cookie sheet.
- Store in refrigerator.

Steps:
- In large bowl, mix cereal, peanuts and marshmallows.
- In medium microwavable bowl, microwave butterscotch chips and peanut butter uncovered on Medium to Medium-High (50 to 75%) in 1-minute increments, stirring after each minute, just until mixture is smooth and melted. This should take 3 to 4 minutes.
- Pour over cereal mixture, using large wooden spoon to mix until cereal mixture is thoroughly coated. Drop by spoonfuls onto waxed or cooking parchment paper.
- Let stand 15 to 20 minutes to set.

- In a large non-stick pan, melt butter over medium-high heat. Once melted add 1 and 1/2 bags of marshmallows, stirring until marshmallows melt completely. Stir in vanilla extract.
- Remove from heat and quickly fold in ritz. Stir in remaining 1/2 bag of marshmallows and then fold in the rolos as fast as you can. I poured 75% of them in and did one quick fold (saving the rest for pressing into the top for decoration). Transfer mixture to prepared pan and spread evenly using a buttered spatula. If you saved any rolos, press them into the top of the marshmallow treats now.
- Allow to cool completely. You can speed up this process by cooling them in the refrigerator. When cooled, cut into squares and serve immediately or store in an airtight container for up to a week.
