This special appetizer always makes it to our neighborhood parties and is the first to disappear at the buffet table. It's attractive, delicious-and easy! -Laurie Casper, Coraopolis, Pennsylvania

2 blocks (8 ounces each) white cheddar cheese
2 packages (8 ounces each) cream cheese
3/4 cup chopped roasted sweet red peppers
1/2 cup olive oil
1/4 cup white wine vinegar
1/4 cup balsamic vinegar
3 tablespoons chopped green onions
3 tablespoons minced fresh parsley
2 tablespoons minced fresh basil
1 tablespoon sugar
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
Assorted crackers or toasted sliced French bread

Steps:

  • Slice each block of cheddar cheese into twenty 1/4-in. slices. Cut each block of cream cheese into 18 slices. Create four 6-in.-long blocks of stacked cheeses, sandwiching 9 cream cheese slices between 10 cheddar slices for each stack. Place in a 13x9-in. dish., In a small bowl, combine the roasted peppers, oil, vinegars, onions, herbs, sugar, garlic, salt and pepper; pour over cheese stacks. , Cover and refrigerate overnight, turning cheese blocks once. Drain excess marinade. Serve cheese with crackers or toasted bread.

Being from America's Dairyland, I'm always on the lookout for new ways to serve cheese. I received this delicious recipe from a friend a few years ago and am happy to share it with others. -Arline Roggenbuck, Shawano, Wisconsin

Number Of Ingredients 9

1 pound mozzarella cheese, cut into 1-inch cubes
1 jar (7 ounces) roasted red peppers, drained and cut into bite-size pieces
6 fresh thyme sprigs
2 garlic cloves, minced
1-1/4 cups olive oil
2 tablespoons minced fresh rosemary
2 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
Bread or crackers

Steps:

  • In a quart jar with a tight-fitting lid, layer a third of the cheese, peppers, thyme and garlic. Repeat layers twice. , In a small bowl, whisk the oil, rosemary, Italian seasoning and pepper flakes. Pour into jar; seal and turn upside down. Refrigerate overnight, turning several times. Serve with bread or crackers.

Great for entertaining. I've only tried cheddar and Colby-jack so far, but I'm sure other cheeses would work as well. Or use an assortment! The nutritional info is inaccurate since you don't actually eat the marinade.

Number Of Ingredients 10

8 ounces hard cheese, cut into cubes
1/3 cup extra virgin olive oil
1/3 cup white wine vinegar
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon dried oregano
1/4 teaspoon italian seasoning
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1 garlic clove, minced

Steps:

  • Place cheese cubes in a pint jar.
  • Mix the rest of the ingredients in a bowl or measuring cup and pour over cheese.
  • Screw lid on jar securely and shake well to coat the cheese. Let marinade 12-24 hours at least shaking and rotating jar occasionally.
  • Remove cheese from marinade and serve with toothpicks.

This is a very colorful and tasty appetizer. Because it has such a stunning presentation, it is a great appetizer for the holidays. I take this to every function and gathering we attend - only because everyone else requests it!

½ cup olive oil
½ cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
¾ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

Steps:

  • In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
  • Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
  • To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

Let sit for several days to blend flavors better. Try using Sun Dried tomatoes instead of the red peppers. Serve with baguette slices, tomatoes, on top of a salad, as part of a cheese tray. Time does not include refrigeration time.

Feta (Marinated) image

A great marinated feta cheese cube(s) with all time wonderful coriander, peppercorns, capers, and bay leaves. Thyme also included on warm toasts. *Time* for cooking does not include marinate time.

12 ounces creamy feta cheese
2 garlic cloves, sliced
1/2 teaspoon peppercorn
8 coriander seeds
2 tablespoons drained capers
1 bay leaf
olive oil, to cover
fresh thyme sprig
hot toast
chopped tomato

Steps:

  • Carefully cut feta into cubes.
  • Add garlic slices, peppercorns, coriander seeds, capers, bay leaf to your food processor and pulse. (Or use a mortar and pestle and crush).
  • Put feta in a jar with a top, or use a bowl to add all ingredients together.
  • Layer ingredients starting with feta, ingredients, topping with Thyme sprigs on top.
  • Pour enough olive oil to cover cubes of cheese.
  • Let marinate in refrigerator for 2 weeks for optimal taste, however; even overnight can be used with good results.
  • At end of marinating time, just simply pick out the feta.
  • Serve with fresh toast points and some chopped fresh tomatoes and it will be ummm -- ummm -- good.
