HERBY CAULIFLOWER SALAD WITH CHICKPEAS
Thanks to a light lemony dressing and lots of fresh herbs, this simple raw cauliflower salad recipe tastes surprisingly delicious and lasts in the fridge for days. The pickled onions are an optional ingredient, but they do take the salad to the next level. Here's our recipe for pickled onions, so you can see how simple they are to make. We break the cauliflower down into tiny florets, but another option is to use a food processor and make a chunky cauliflower rice. Take a look at our cauliflower rice recipe to see how we do it.

Steps:
- Cut away leaves and the core from the cauliflower. Then cut or pull the cauliflower apart into little florets and add to a large bowl. Chop longer stems into small pieces, and then add to the bowl with florets.
- Season with 1/2 teaspoon of fine sea salt and 1/2 teaspoon ground black pepper, and then toss the cauliflower around the bowl until all the florets have had a chance to be seasoned.
- To make the dressing, whisk the lemon zest, lemon juice, olive oil, red pepper flakes, and a pinch of salt together until creamy and emulsified.
- Add the chickpeas, herbs, pickled onions, and the dressing to the cauliflower. Toss until everything is evenly coated. Taste, and then season with additional salt, pepper or lemon juice.
- The cauliflower salad does taste best when given some time to marinate. When possible, let the salad marinate, stirring from time to time, for at least 30 minutes before serving. The salad will keep, covered in the refrigerator, up to one week.

SPICY MARINATED CAULIFLOWER SALAD
Simple cauliflower salad dressed in a homemade vinegar dressing that is a perfect side for a summertime BBQ, picnic, or potluck. My inspiration came from my love of giardiniera. Feel free to omit the crushed red pepper flakes for a non-spicy version.

- Combine cauliflower, bell pepper, carrot, onion, celery, olives, parsley, salt, and pepper in a large bowl.

CAULIFLOWER SALAD WITH CAPERS, PARSLEY AND VINEGAR
This tangy winter salad is likely to convert anyone who doubts just how good cauliflower can be. Make sure you steam the cauliflower until thoroughly tender so that it absorbs the dressing. The dish is lovely with a mix of colorful cauliflowers, but can look nice with the standard white variety.

Steps:
- Place the cauliflower in a steaming basket over one inch of boiling water; cover and steam one minute. Lift the lid for 15 seconds, then cover again and steam for six to eight minutes until tender. Refresh with cold water, then drain on paper towels.
- In a large bowl, mix together the garlic, parsley, capers, vinegar and olive oil. Season generously with salt and pepper. Add the cauliflower and toss together. Marinate, stirring from time to time, for 30 minutes if possible before serving. Serve warm, cold or at room temperature.

- To make the vinaigrette, in a small resealable jar, combine all dressing ingredients. Cover and shake well. (Keeps up to two weeks in the refrigerator.)
- To make the salad, fit food processor with the slicing blade. With food processor running, feed cauliflower into the chute. (Slices should be about 1/8-inch thick.) In a large bowl, combine cauliflower, carrots, grapes, raisins, and scallions. Pour dressing over salad and toss gently to coat. Cover and refrigerate for at least 30 minutes before serving.
- Replace the cauliflower with three cups shredded green cabbage and two cups thinly sliced Brussels sprouts. Replace the grapes and raisins with one cup dried cranberries and 1/2 cup sunflower seeds. In the dressing, replace the cilantro, curry powder, and cumin with one tablespoon grainy mustard and four scallions, chopped.
- Replace the cauliflower with 1 bunch broccoli, sliced, and 1/2 red onion, thinly sliced. Replace the grapes and raisins with one cup chopped apples and 1/2 cup toasted sliced almonds and. Add 1/4 cup of mayonnaise or yogurt to the dressing. Replace the cilantro, curry powder, and cumin with 1/2 cup chopped parsley.
