For The French Toast
3 large eggs
1/2 c. whole milk
1 tbsp. sugar
pinch of kosher salt
Pinch of freshly ground nutmeg
Clarified Butter, for the pan
4 thick slices brioche
For The Sandwiches
Dijon mustard
12 very thin ham slices
1 c. finely grated Gruyère cheese

Steps:

  • Make the French toast: In a medium, shallow bowl, whisk together eggs, milk, sugar, salt and nutmeg.
  • In a nonstick skillet set over medium heat, melt enough clarified butter to coat the bottom of the pan. Dip a slice of brioche into the egg mixture, and let rest for about 15 seconds on each side before transferring to the hot pan. Cook until golden brown on both sides, about 2 minutes per side. Transfer to a wire rack, then repeat with remaining bread slices.
  • Make the sandwiches: Heat broiler.
  • Spread each slice of warm French toast with as much Dijon mustard as you'd like. Top each piece with three slices ham and sprinkle with Gruyère. Place on a baking sheet.
  • Broil for about 2 minutes, until ham is toasted and cheese is bubbling and melted. (Keep an eye on the sandwiches; they burn quickly.) Serve warm.

1 tablespoon mayonnaise
1 teaspoon mustard
1 cup ham, finely chopped
1/2 cup swiss cheese, shredded

Steps:

  • Unroll dough and separate into 4 rectangles; press seams to seal.
  • Combine mayonnaise and mustard; spread over rectangles, leaving a 1/2-inch border.
  • Sprinkle ham and cheese evenly over half of each rectangle.
  • Moisten edges with water. Fold dough over and punch edges to seal.
  • Bake at 375°F for 10 minutes or until puffed and golden.

2 cups ham, diced (recipe says you can use chicken)
2 cups cheddar cheese, shredded
1/2 cup onion
1 tablespoon pickle relish
7 tablespoons mayonnaise
12 hot dog buns

Steps:

  • Grind ham, cheese, onion, and pickle.
  • Add enough mayonnaise to moisten, and some pickle juice.
  • Spread on buns put under broiler until cheese starts to bubble, 5 minutes.
  • I have seen these wrapped in foil paper and baked. They freeze these and bake them; recipe said 350 degrees Fahrenheit for 50 minutes or until cheese melts.

Steps:

  • Preheat oven to 350.
  • Without separating into individual rolls, cut tops off.
