When our daughter decided to enter 'Kinderfest' cooking competition in our hometown during Octoberfest, she was sure to win!!! Ah, but just a small glitch, her precious Black Forest Cake had shifted and was slightly lopsided!!! Ah, but she received a big reward from her parents, as we were so proud of our little girls achivement...

Number Of Ingredients 12

8 egg yolks
8 egg whites
6 ounces sugar
1 tablespoon warm water
5 ounces cake flour
3 ounces ground almonds
1 1/2 ounces cocoa
1 (28 ounce) can of cooked black cherries, stoned
1 1/2 pints whipped cream, to which the
2 ounces kirsch, have been incorporated
grated chocolate
maraschino cherry

Steps:

  • Sift the cocoa and the flour together and set aside.
  • Mix the egg yolks and the sugar together and the mixture becomes light in colour.
  • Add the warm water and mix well with an electric beater for about 5 minutes.
  • Incorporate the cocoa/flour mixture to the egg yolks, with a spatula.
  • Then, gently fold in the almonds.
  • Beat the egg whites until they hold stiff peaks.
  • Fold the egg whites into the batter.
  • Butter and flour generously a 10 inch springform mould.
  • Pour the batter into the mould.
  • Bake the cake in a preheated oven at 350 degrees for 30-40 minutes.
  • Remove the cake from the oven and let it cool for 5 minutes.
  • Unmold and let it cool for an additional 5 minutes.
  • Cut the cake into 3 layers lengthwise.
  • Spread some cherries and a layer of whipped cream on the bottom cake layer.
  • Top with the second layer.
  • Cover this layer with some cherries and cover with whipped cream.
  • Add the third and top layer of cake.
  • Garnish with the remaining whipped cream.
  • Sprinkle with the grated chocolate and top with the maraschino cherries.

I made this cake last night and put it together this morning. It has no eggs, dairy or butter in it. The only beef I have with the recipe is the cashew icing is a bit watery, and I'd use firmer cherries next time, the canned seem a bit runny. Other then that this is a wonderful recipe and worth taking the time to make. The cake is very moist and the hint of cherry liquor comes through just right. I baked my cake in two 8" round cake tins and cut each one in half thus having 4 layers instead of 3. This recipe came from the Vegetarian Times Cookbook. The cake is very sturdy which was great when cutting the layers in half and it takes the syrup very well and doesn't fall apart.

1 cup water
1 cup honey
1/2 cup applesauce
1 teaspoon vanilla extract
1 teaspoon vinegar
2 cups whole wheat pastry flour (or unbleached white flour)
3/4 cup unsweetened cocoa powder
1 tablespoon baking powder
1 teaspoon baking soda
1/2 cup water
1/4 cup honey
2 orange slices (or lemon and cut thin)
1/3 cup kirsch (or other cherry liquor or light golden rum)
3/4 cup raw cashews
3/4 cup water
2 teaspoons vanilla extract
1/2 cup honey
10 ounces firm tofu
3 ounces semisweet chocolate (melted)
16 ounces pitted cherries (from a jar or frozen, drained...not maraschino)

Steps:

  • FOR THE CAKE:.
  • Preheat oven to 350'F. Combine the liquid ingredients in a large bowl and whisk well.
  • Sift together the dry ingredients and whisk into the liquid ingredients. Pour into a 9 in greased and floured cake pan and bake for about 35 minutes. It should be springy to the touch.
  • Cool completely (I left mine over night) and remove from pan. Cut into 3 thin horizontal layers.
  • FOR THE SYRUP:.
  • Combine the water, honey and citrus slices in a small pan and oil for 3 minutes. Let cool, then add the kirsch or rum.
  • Set aside.
  • FOR THE ICING:.
  • In a blender (like a vita mix) combine the cashews, water and vanilla. Blend well until smooth and creamy.
  • Add the honey and tofu and blend again. Remove 2 cups of this mixture and set aside for the vanilla icing that will go on the top and sides of the cake.
  • To the mixture left in the blender add the 3 ounces of melted chocolate. I used a 72% dark chocolate bar and melted the chocolate in the microwave.
  • Blend it well and chill both of the icings before using. I put them in the fridge overnight.
  • TO ASSEMBLE THE CAKE:.
  • Carefully remove the cake from its tin and with a gentle hand slice into 3 layers. Brush some syrup onto the bottom layer and spread half the chocolate icing on top of it.
  • Place the middle cake layer on top of the bottom layer and brush it with more syrup and the rest of the chocolate icing. Put down a layer of cherries and dot with the vanilla icing to act as a glue. Put the top layer on.
  • Brush it with the cherry syrup. Frost with the remaining cashew icing and decorate with the rest of the cherries.
  • Chill for several hours before serving. The cake may be kept covered if your not serving it until the following day. After 3 days the icing may discolor.

  • Mix pie filling and almond flavoring.
  • While cake is still warm, poke top with fork and spread cherry pie filling over cake.
  • While cake cooks, prepare pudding, adding extra vanilla flavoring.
  • Fold in whipped topping.
  • Spread pudding mixture over cake, carefully covering cherry pie filling.
  • Decorate with chocolate sprinkles and maraschino cherries.
  • Cover and refrigerate.

Steps:

  • Mix cherry pie filling and almond extract.
  • While cake is still warm, poke top all over with fork and spread the cherry filling mixture all over the top.
  • When you prepare vanilla pudding, make it as directed on box, but add the vanilla extract to it with the milk.
  • Fold Cool Whip into pudding.
  • Spread pudding mixture over cake, covering the cherry pie filling.

This cake isn't meant to be very sweet but is rather a dessert for adults with deep rich flavours and enough alcohol to make your head spin! If you cannot get fresh cherries you can use canned Bing cherries but please do not use cherry pie filling because it will take away from the authentic taste of the cake. If can't find Kirsch do not use another type of alcohol because it will not turn out the same - instead use cherry juice. Because of the high alcohol content only serve this to adults.

1 2/3 cups all-purpose flour
2/3 cup cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups buttermilk
1/2 cup kirsch
1/2 cup unsalted butter
3 cups icing sugar
1 pinch salt
1/4 cup espresso
1 1/2 lbs fresh black cherries
2 cups heavy whipping cream
1/2 teaspoon vanilla
1/8 cup kirsch
2 tablespoons dry milk
2 tablespoons icing sugar
1/2 cup shaved dark chocolate

Steps:

  • Pit most of the cherries leaving about 10 for decoration on top of the cake. Take the pitted cherries and soak them in a jar of the 1/2 cup Kirsch overnight.
  • Preheat the oven to 350°F Line the bottom of three 9 inch round cake pans with parchment.
  • Sift the dry cake ingredients together.
  • Cream the shortening and sugar. Add the eggs and vanilla and mix well.
  • Add the dry ingredients alternately with the buttermilk and mix well.
  • Pour evenly into the cake pans. Bake for 20 minutes or until a tooth pick comes out clean.
  • Cool and remove the cakes. Prick the tops of the cakes with a toothpick and pour the 1/2 cup of Kirsch (that the cherries soaked in) onto the cake.
  • In a bowl beat the butter until light and creamy. Add the icing sugar, salt and espresso and mix well. If the icing is too thick add Kirsch or cherry juice.
  • Cut the cherries into halves.
  • Place the base layer on top of your cake tray, spread 1/2 of the filling over one top, cover with cherries and top with another layer of cake.
  • Spread the second half of the filling over that layer of cake, cover with cherries and top with the third layer of cake. Cover this and let sit in the fridge for a day or two to allow the kirsch to soak into the cake and become moist.
  • The day you're going to serve this cake prepare the icing. Whip the cream until it forms stiff peaks.
  • Gently fold in the dry milk and icing sugar.
  • Add the vanilla and pour in the Kirsch until it's a good consistency.
  • If you like more icing double this recipe. Spread the icing over all of the cake.
  • Place the fresh, intact cherries on top for decoration and cover the top with the chocolate shavings. Serve and enjoy!
