We took everything you love about a margarita and turned it into a burger. The spicy black bean patty is made with cilantro, jalapeño, and fresh scallions. Paired with homemade tequila-pickled vegetables provide a tangy crunch, while creamy guacamole and queso panela help cool things off. We brush store-bought burger buns with egg wash, sprinkle with coarse sea salt, and toast in the oven for a finishing touch.

1 carrot, thinly sliced into rounds
1 large jalapeño, thinly sliced into rounds
½ small white onion, thinly sliced into half moons
2 garlics, smashed
½ cup tequila blanco
¼ cup distilled white vinegar
1 small dried bay leaf
1 teaspoon whole black peppercorn
1 teaspoon dried mexican oregano
1 teaspoon sugar
1 teaspoon kosher salt
½ cup ice
¼ cup fresh lime juice
2 large garlics, minced
1 fresno chilie, seeded and minced
2 large ripe avocados, peeled and pitted
1 teaspoon kosher salt
2 cans black beans, drained and rinsed
1 cup panko breadcrumbs
1 bunch fresh cilantro, chopped
1 bunch scallions, sliced
1 large jalapeño, minced
1 teaspoon kosher salt
1 ½ teaspoons ground cumin
½ teaspoon McCormick® Smoked Paprika
2 large eggs
2 tablespoons olive oil
4 plain burger buns
1 large egg, beaten
1 tablespoon coarse sea salt
8 slices queso panela
4 Margaritas

Steps:

  • Make the tequila pickles: In a large, high-walled skillet, heat the olive oil over medium heat. Add the carrots, jalapeño, onion, and garlic and sauté, stirring constantly, until the vegetables start to become tender but do not change color, about 3 minutes. Transfer the vegetables to a 16-ounce airtight, heat-proof container.
  • Return the pan to medium heat and add the tequila, white vinegar, bay leaf, black peppercorn, oregano, sugar, and salt. Bring to a boil and cook until reduced by ⅓, about 2 minutes. Pour the mixture over the vegetables and let sit for 10 minutes. Add the ice to the container and stir until completely melted. Cover and refrigerate until ready to use. The pickles can be made up to 1 week ahead.
  • Make the guacamole: In a large bowl, combine the lime juice, garlic, and Fresno chile. Let sit at room temperature for 10 minutes. Add the avocados and salt and use a fork to mash together. Cover with plastic wrap, pressing directly against the surface of the guacamole. Refrigerate until ready to use.
  • Make the black bean burgers: Preheat the oven to 375°F (190°C).
  • Add the black beans to a large bowl and use a potato masher to break down the beans until semi-smooth, with some beans left whole for texture. Add the panko bread crumbs, cilantro, scallions, jalapeño, salt, cumin, paprika, and eggs. Stir with a wooden spoon to combine. Shape the mixture into 4 patties. Place the patties on a plate and refrigerate for 30 minutes.
  • Meanwhile, place the intact burger buns on a baking sheet. Brush the top of each bun with the beaten egg, then top with the sea salt. Transfer to the oven and bake until the egg wash turns golden brown, about 5 minutes.
  • Heat a large skillet over medium-high heat. Add the olive oil, then place the black bean patties in the pan in a single layer, working in batches if needed to avoid overcrowding. Cook until the patties begin to turn golden brown, about 3 minutes per side.
  • Assemble the burgers: Open the buns and spoon guacamole onto each bottom bun, spreading to cover completely. Place 2 slices of queso panela over the guacamole and top with a burger patty, followed by tequila pickles. Place the top bun on top. Serve with classic margaritas.

4 tablespoons unsalted butter
2 large yellow onions, thinly sliced into half moons
⅓ cup rye whiskey
1 teaspoon kosher salt
2 large navel oranges
¼ cup dijon mustard
¼ cup yellow mustard
1 teaspoon orange bitters
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
2 lb ground beef
1 tablespoon olive oil
8 slices american cheese
4 burger buns
1 large egg, beaten
1 tablespoon sesame seed
1 cup iceberg lettuce, shredded
8 slices beefsteak tomatoes

Steps:

  • Make the whiskey-caramelized onions: In a large, high-walled skillet, melt the butter over medium-low heat. Add the onions and cook, stirring occasionally, until they caramelize and turn golden brown, about 45 minutes. Add the whiskey and salt and stir to combine. Remove the pan from the heat and let sit until ready to use.
  • Make the roasted orange mustard: Turn the broiler on high.
  • Use a sharp knife to remove the peel from the orange, then slice the orange crosswise into ½-inch rounds. Arrange the rounds in a single layer on a baking sheet.
  • Broil the orange slices until they begin to brown and crisp on the top, about 10 minutes.
  • Remove the oranges from the oven and transfer to a large bowl to cool slightly. Use a potato masher to mash the juice from the oranges, and then strain through a fine-mesh sieve, pressing on the flesh to extract as much juice as possible. You should have about ¼ cup of roasted orange juice.
  • In a medium bowl, whisk together the orange juice, Dijon mustard, yellow mustard, and bitters until smooth. Refrigerate until ready to use.
  • Make the smash burgers: Reduce the oven temperature to 375°F (190°C).
  • Divide the ground beef into 8 4-ounce portions, being careful not to work the meat too much.
  • In a small bowl, mix together the salt, pepper, and coriander.
  • Heat a large cast-iron skillet over medium-high heat until nearly smoking. Pour the olive oil into the hot pan. Place 2 portions of ground beef, or as many as will fit without overcrowding, in the pan and use a flat metal spatula to flatten into patties. Use the back of a wooden spoon to press the spatula more firmly to flatten each patty even more. Season each patty generously with the salt mixture. Once the patties turn golden brown on the bottoms and the edges are crispy, about 2 minutes, flip and continue cooking until the other side is golden brown, about 2 more minutes. Top each patty with 1 slice of American cheese and let melt, about 30 seconds. Remove from the pan and repeat with the remaining ground beef.
  • Assemble the burgers: Place the intact burger buns on a baking sheet. Brush the top of each bun with beaten egg, then sprinkle with the sesame seeds. Transfer to the oven and bake until the egg wash turns golden brown, about 5 minutes.
  • Open the buns and place ¼ cup of shredded lettuce on each bottom bun, followed by 2 tomato slices, a patty, ¼ cup caramelized onions, and a second patty. Spread 2 tablespoons of the orange mustard over the undersides of the top buns, then place on top of the burgers. Serve with old fashioneds.

1 tablespoon kosher salt, plus more to taste
1 tablespoon sugar
5 whole black peppercorns
¼ teaspoon coriander seeds
1 small red onion, thinly sliced
¾ cup mayonnaise
¼ cup ketchup
2 tablespoons pickle, finely chopped
1 clove garlic, minced
1 teaspoon white wine vinegar
2 lb ground beef, 80/20
2 teaspoons kosher salt, to taste
1 teaspoon freshly ground black pepper, to taste
1 tablespoon grapeseed oil
4 slices cheddar cheese
4 sesame buns
1 tomato, sliced, for serving
4 leaves bibb lettuce, for serving

Steps:

  • Make the pickled red onions: In a small pot, combine the water, apple cider vinegar, salt, sugar, peppercorns, and coriander seeds, and bring to a boil over medium-high heat, stirring until the sugar dissolves.
  • Turn off the heat and add the sliced onion, making sure they are fully submerged. Let cool to room temperature for 30 minutes before serving.
  • Make the Thousand Island Dressing: In a medium bowl, whisk together the mayonnaise, ketchup, pickles, garlic, and vinegar.
  • In a large bowl, season the ground beef generously with salt and pepper. Use your hands to mix until evenly combined.
  • Divide the beef into 4 8-ounce portions and form into patties. Place on a cutting board. Use your thumb to press a divot into the center of each burger.
  • Heat the grapeseed oil in a cast iron or stainless steel skillet over medium-high heat until nearly smoking. Add the burger patties and cook for 3-4 minutes, without disturbing, until browned.
  • Use a spatula to flip the burgers over and place a slice of cheddar on each one. Cook for another 3-4 minutes, until the burgers are cooked through and cheese has melted.
  • Place on sesame buns and top with the pickled red onions, Thousand Island Dressing, tomato, and lettuce. Serve with French fries.

Steps:

  • Make the chicken burgers: Line a baking sheet with parchment paper.
  • In a small bowl, mix together the McCormick® Garlic Powder, ground ginger, cumin, coriander, turmeric, paprika, chili powder, and salt.
  • Add the ground chicken to a large bowl with the spice mix, red onion, jalapeño, if using, and egg. Using clean hands or a spatula, mix until just combined, being careful not to overmix to prevent tough burgers.
  • Divide the chicken mixture into 4 portions and shape into 1-inch-thick patties. Place on the prepared baking sheet. Using the back of a spoon or your thumb, gently press down on the center of each patty (this will help keep them flat during cooking). Chill the patties in the refrigerator for 30 minutes, until slightly more firm.

Steps:

  • Roll 2 of the limes on a cutting board to help release the juice. Cut the limes in half and juice them using a citrus press, straining the seeds out if necessary. This should yield approximately 1 ounce of fresh lime juice.
  • Add the cubed ice to a tall shaker.
  • Add the tequila, lime juice, simple syrup, Ocean Spray 100% Juice Cranberry, and Triple sec and shake vigorously for 30 seconds.
  • Place the kosher salt in a small dish. Cut the remaining lime into quarter wedges.
  • Using one wedge, run the lime around the edge of 2 rocks glasses. Dip the glasses in the salt to make a salted rim.
  • Fill the glasses with fresh ice and strain the contents of the shaker over the fresh ice into the glasses.
  • Serve with the remaining lime wedges and enjoy!
