Danish Brunede Kartofler - Caramelized Browned Potatoes - are a great side dish to any meal! They are a small potato with a sweet caramelized coating.

Number Of Ingredients 4

15 small new potatoes (you can find these in a can with canned veggies, about 2 cans)
1/4 cup sugar
1/4 cup butter
2 Tbsp. water

Steps:

  • Drain potatoes and pat dry.
  • In a large skillet cook the sugar on medium-low heat until completely melted. DO NOT STIR!
  • When melted and slightly darkened around the edges, add the butter and stir until it becomes kind of a syrupy mixture.
  • Add the potatoes and a little bit of water (if the mixture starts to stiffen and form lumps turn the heat up and it will melt again).
  • Moving the skillet around, gently cover each potato in the mixture, continuing to cook for about 6-8 minutes.

24 small new potatoes
1/2 c fresh parsley, chopped
1 tsp fresh dill, chopped
1/4 lb butter
1 Tbsp caraway seed

Steps:

  • 1. Boil potatoes until tender in salted water. Drain. Peel. (I don't peel mine).
  • 2. Garnish with parsley and dill and serve doused with melted butter to which the caraway seeds have been added.

Sticky, sweet and such a treat, these potatoes, inspired by a classic sweet-and-savory Danish dish, are a must try. True to their title, the potatoes are actually tossed with a homemade caramel sauce-don't worry, it's just sugar and butter. A clever technique developed by the Betty Crocker Kitchens makes quick work of a tricky step. Where most traditional recipes call for combining the potatoes with hot caramel on your stovetop, where it's easy to burn the caramel and make a mess, this version calls for combining them in the oven. So you'll end up with creamy potatoes coated in rich caramel, with barely any fuss. We highly recommend serving these alongside pork and cabbage, as the Danes traditionally do at Christmastime.

2 lb unpeeled fingerling or baby creamer potatoes
4 tablespoons butter, melted
1/4 cup sugar
1/2 teaspoon salt

Steps:

  • Heat oven to 425°F. Line 9-inch square metal pan with foil; spray with cooking spray. In 4-quart saucepan, heat 2 quarts water to boiling over high heat. Add potatoes; reduce heat and simmer 15 to 20 minutes, or until just tender when pierced with paring knife. Drain; transfer to cutting board to cool. When cool enough to handle, carefully peel potatoes by hand; discard peels.
  • In large bowl, mix melted butter, sugar and salt. Add potatoes; toss to coat. Place in pan in single layer. Bake 40 to 45 minutes, stirring occasionally, until sauce is bubbling and caramelized. Let stand 5 minutes before serving.

This is so much better when made with cabbage and potatoes straight from the ground. Most people I know use just a couple of tablespoons of spicy or hot sweet mustard, but I just use regular yellow mustard (and more of it) due to personal preference. I also use a lower fat pork & alligator sausage from Winn-Dixie that might not be available everywhere. I'm sure it would work with any kind.

4 tablespoons light butter
1 slice turkey bacon, chopped
1 medium onion, thinly sliced
1 medium green cabbage, chopped
4 medium potatoes, sliced
4 -5 leaves red cabbage (for color) (optional)
4 tablespoons vinegar (red wine or cider)
1/2 cup reduced-sodium fat-free beef broth
2 tablespoons caraway seeds
1 lb low-fat sausage (alligator and pork or other low fat)
1/4 cup mustard
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a large skillet, heat the butter and bacon.
  • Add the onion, potato and cabbage and cook until cabbage is wilted.
  • Add the caraway, vinegar and stock.
  • Bring to a boil; cover, reduce heat, and simmer for 12 minutes.
  • While simmering, lightly brown the sausage in another small skillet.
  • Add the sausage to the cabbage mixture and cook all, uncovered, for another 6 minutes.
  • Stir in the mustard and season with salt and pepper.

1 large onion, sliced
1 tablespoon granulated sugar
1 tablespoon vinegar
1 teaspoon salt
1 dash white pepper

Steps:

  • Boil potatoes. Cool, peel and slice 1/4-inch thick. Set aside.
  • Melt butter in frying pan. Add onions and sauté for 5 minutes, stirring occasionally. Add potatoes. Sauté for 5 minutes or as long as needed, turning potatoes to brown both sides.
  • Add remaining ingredients. Cook for 5 minutes longer.

1 tablespoon caraway seeds

Steps:

  • Peel potatoes and in a 3- to 4-quart saucepan cover with salted cold water by 2 inches. Simmer potatoes until just tender, 12 to 15 minutes, and drain in a colander.
  • While potatoes are cooking, in a small heavy skillet dry-roast seeds over moderate heat, shaking skillet, until fragrant and slightly darker, being careful not to burn them, 3 to 4 minutes. Transfer seeds to a small bowl and cool. With mortar and pestle or in an electric coffee/spice grinder grind seeds coarse.
  • In a heavy skillet melt butter over moderately low heat and add potatoes, stirring and shaking skillet to coat. Sprinkle potatoes with ground seeds, parsley, and salt and pepper to taste and stir, shaking skillet occasionally, to coat.
