DATE & NUT DIP OR SPREAD
This recipe is from Kraft, a great dip for fruit or spread on toast or bagels. I'm not keen on almond essence so used coconut when I made this, I served it on bagels for brekky, yummo!

- Add dates, almonds, cinnamon and almond essence, mix well & chill.
- Serve with cracker biscuits or fresh fruit as a dip or use as a spread on bagels, mmm yum!
CHEDDAR DIP OR SPREAD
This dip or spread has a great fresh taste. Serve it right after making it for a softer dip. For a spread, refrigerate before serving. Please use a good quality cheese as a generic brand has extra oil added and will separate out.

- Cut-up cheese in 1-inch cubes and put in food processor bowl along with the mayo. Process 'til smooth.
- Add the onions and pepper sauce. Process another minute.
- Transfer cheese mixture to a small mixing bowl.
- Add chopped cilantro and combine well.
- If serving immediately as a dip, pile into a bowl and garnish with a cilantro sprig.
- For a firmer spread-like consistency, refrigerate at least two-hours.
- Serve with crackers and celery sticks.

- Mix softened cream cheese and sour cream well.
- Add parmesan, onion and ham. Drain pineapple well and add to mixture.
- Refrigerate for 2 hours for flavors to meld. Use as a dip or spread on crackers or baguettes.

Feel free to add or reduce any of the ingredients to your liking as it will probably take you a few tries to find the way you like the best. - Shred cheese coarsely but with short strokes (we use muenster because it is so cheap and yummy and it is extremely moist, but you can use any other cheese of similar consistency. Don't use a cheese like parmesan or romano because the spread won't have the right texture.
- Combine mayonnaise, sour cream (you can also use low-fat yogurt in place of sour cream to save a few calories) and shredded cheese.
- Use a garlic press to mince the garlic directly over cheese mixture (you should use a garlic press because it will evenly distribute the juice of the garlic).
- If you crush it on a cutting board you will lose all the juice and your spread won't have the right flavor.
- Feel free to add additional cloves of garlic if you can handle it.
- My wife and I haven't been able to make it past five.
- Mix well and serve.
- We usually eat spread on a cracker or dark bread like rye but you can put it on just about anything.
- Enjoy.
