1 tablespoon peanut oil
3 tablespoons unsalted butter
6 ounces beef tenderloin steaks, cut into thin strips
1/2 cup mixed vegetables, julienned (such as carrots, asparagus)
1 ounce enoki mushrooms
1/2 cup shiitake mushroom, quartered
1 tablespoon scallion, chopped
1 tablespoon ginger, chopped
1 tablespoon garlic, chopped
salt & freshly ground black pepper, to taste
1/3 cup plum wine
1/2 teaspoon ground cinnamon
2/3 cup beef broth
2 cups cooked Chinese egg noodles
2 tablespoons rice wine
8 -10 endive
2 tablespoons green onions, chopped

Steps:

  • In a large skillet or wok, heat the peanut oil and 1 tablespoon butter. Over high heat, add the tenderloin strips and lightly sear on all sides. Remove the meat from the pan and set aside. Add the vegetables, enoki and shiitake mushrooms, scallion, ginger, and garlic and cook for 3 minutes. Season with salt and pepper, to taste.
  • Deglaze the pan with plum wine, add the cinnamon and reduce by half. Add the beef broth and continue to reduce by half. Whisk in the remaining 2 tablespoons butter. Add the cooked noodles, the reserved meat, and the rice wine, and just heat through. Correct seasoning, to taste.
  • Place the endive around the edges of a large platter. Spoon the steak, noodles, and sauce in the center of the endive and garnish with chopped scallions. Serve immediately.

1/2 pound Asian vermicelli noodles
2 tablespoons sesame oil
1 onion, julienned
1 carrot, julienned
1 red bell pepper, julienned
3 scallions, cut into 1-inch lengths
1/2 cup dried wood ear mushrooms
2 cloves minced garlic
1 teaspoon sugar
Salt and freshly ground black pepper
1/2 pound spinach, stems discarded
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds

Steps:

  • In a bowl, soak the vermicelli in hot water for 15 minutes. Drain the noodles, drop into a pot of boiling water for 30 seconds, and then rinse in cold water. Cut the noodles with kitchen shears.
  • Heat a large pan. Add 2 tablespoons sesame oil. Add the onion, carrot, red bell pepper, scallions, mushrooms, garlic, sugar, salt and pepper. Let cook for a few minutes, stirring, until the vegetables are cooked but still a little crisp. Transfer the vegetables to a bowl. To the pan add 1 more tablespoon sesame oil. Add the noodles, spinach, salt and pepper. Let cook for 1 to 2 minutes, stirring. Add to the vegetables with 1 tablespoon soy sauce and 1 tablespoon toasted sesame seeds and combine.
  • Transfer to a platter. Serve hot or at room temperature.

ROSALIA'S CHICKEN STEW WITH VEGETABLES



Rosalia's Chicken Stew with Vegetables image

2 1/2 pounds chicken, preferably freerange, cut into 8 pieces
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
30 cippolini or pearl onions, peeled
3/4 pound carrots, sliced into 1/2inch rounds
8 small red or white rose potatoes
1 bay leaf
1 cup dry white wine
4 cups chicken stock, preferably homemade
2 1/2 ounces whole almonds
3 large cloves garlic
1/2 teaspoon loosely packed saffron threads
3 hardboiled eggs, separated, whites finely chopped

Steps:

  • Rinse the chicken well under cold running water and pat dry with paper towels. Season generously with salt and pepper. In a large heavy skillet, heat the olive oil over medium/high heat. Brown the chicken pieces evenly on all sides, then transfer to a covered heatproof casserole. Add the onions and carrots to the hot skillet and cook, stirring occasionally, for about 10 minutes, until golden. Transfer them to the casserole with the chicken. Place the potatoes around the edges of the casserole and again season with salt and pepper. Add the bay leaf.
  • Pour off most of the fat from the skillet and, over high heat, deglaze it with the white wine. Cook, stirring and scraping the bottom and sides of the pan to release all the flavorful bits into the liquid, for about 3 minutes. Pour the wine over the chicken, add the stock and bring up to the boil. Reduce the heat to very low, cover and simmer for 25 to 30 minutes, until the chicken thighs test done. Check the pan occasionally to make sure the liquid is kept at a slow simmer. If it boils the chicken will be tough.
  • Transfer the chicken and vegetables to a platter with a slotted spoon and discard the bay leaf.
  • To make the picada: combine the almonds and garlic in a food processor and process them to a fine paste. Add the saffron and the hardboiled egg yolks only, process again and add enough of the liquid from the casserole to make a smooth paste. Return the casserole to mediumhigh heat and whisk the picada into the cooking liquid. Simmer until the sauce is reduced to about 3 cups, and taste for seasoning. Return the chicken and vegetables to the pan and turn to coat them with the sauce and heat through. Serve in the pan, sprinkled with the egg whites.

3 ounces peanut oil, plus 3 ounces
1 1/2 pounds beef top round, trimmed and cut into julienne
4 ounces soy sauce
2 tablespoons granulated sugar
10 scallions, washed, trimmed and cut into 1-inch strips
10 ounces peeled and julienned Spanish onion
10 ounces mushrooms, washed, stems trimmed and thinly sliced
1 pound tofu, cut into small dice
10 ounces spinach, washed, stemmed and cut chiffonade
8 ounces bamboo shoots, julienned
10 ounces mirin*
1 1/2 pounds shirataki noodles, cooked, cooled and cut into thirds

Steps:

  • In a wok, heat 3 ounces of peanut oil. Add beef strips and stir-fry quickly, just to brown meat. Season with soy sauce and sugar, then remove and set aside.
  • Clean the wok, and heat the remaining 3 ounces of peanut oil. Add scallions, onions, mushrooms, tofu, spinach, and bamboo shoots. Stir-fry quickly, about 2 minutes. Add mirin and noodles and return cooked meat to the mixture. Stir-fry an additional minute or just until hot and well-incorporated.
  • Remove from wok and serve at once on a preheated dinner plate.

COUSCOUS WITH VEGETABLES



Couscous with Vegetables image

12 ounces couscous (not instant)
1 large red or green pepper
1 large eggplant sliced 1/4-inch thick
1 large zucchini, sliced 1/4 inch thick
Salt
Turmeric
Cumin
Black pepper
2 tomatoes, sliced

Steps:

  • Soak the couscous in cold water for 10 minutes to loosen the grains. Then steam over a saucepan of boiling water or stock for a further 5 minutes. This prevents the couscous from getting sticky and lumpy.
  • Meanwhile burn the outside of the pepper over a naked gas flame. When the skin is black place pepper into plastic bag and seal. Rub from the outside to remove all the pepper skin.
  • Roast the aubergine and zucchini in a preheated 220 degrees F oven.
  • When all vegetables are ready finely chop them up and mix into the couscous. Add salt, tumeric, cumin, and black pepper, to taste. Steam for a further 5 minutes. Garnish with sliced tomatoes and serve.

BAKED SALMON FILLETS AND VEGETABLES

2 tablespoons butter
1 small carrot and 1 small stalk celery, each peeled and grated
4 large mushroom caps. thinly sliced
2 scallions, cut into 3 inch julienne
1/4 cup heavy cream, fish stock or lemon juice

Steps:

  • Preheat the oven to 325 degrees. Butter 2 pieces of foil or parchment paper and set aside. Season salmon with salt and pepper. Saute the vegetables in the butter for 2 to 3 minutes just until they begin to get tender. Add the cream and cook until most of it has been absorbed by the vegetables; season with salt and pepper. Place each salmon fillet on the piece of buttered parchment or foil and top with cooked vegetables. Seal the salmon and place the pouch on a baking sheet. Bake for 10 minutes. Remove the pouches from the oven transfer the salmon, vegetables and their juices to a heated plate. Serve as is just with French bread or with a side dish of cucumber curls and mint.
