This recipe has wonderful flavor and the water chestnuts give it great texture. My husband loves meat but he'd prefer this over regular hamburgers anyway! Make batches ahead of time and freeze the patties using waxed paper to separate.

1 pound lean ground turkey
½ cup finely chopped onion
⅓ cup chopped water chestnuts
2 tablespoons chopped green bell pepper
2 cloves garlic, minced
1 tablespoon dried parsley
1 tablespoon soy sauce
1 tablespoon cold water
2 teaspoons minced fresh ginger root
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground turkey, onion, water chestnuts, bell pepper, garlic, parsley, soy sauce, water, ginger, salt, and pepper in a bowl; shape into 4 patties.
  • Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 lb 93% lean ground turkey
1/4 cup carrots, minced
1/4 cup scallions, minced
1/4 cup minced cilantro
2 tsp fresh ginger, minced
2 garlic cloves, minced
1 tbsp soy sauce
1 jalapeno, seeded and minced (adjust based on spice preferences)
1/2 cup nonfat Greek yogurt (or Paleo mayo)
2 tbsp sweet chili sauce
1 tbsp lime juice
1 tbsp olive oil
1/4 tsp garlic powder
1/4 tsp salt

Steps:

  • Combine the turkey, cilantro, ginger, garlic, carrots, scallions, soy sauce, and jalapeno if using in a bowl. Be careful not to overwork the meat or it will become tough.
  • In a small bowl combine the yogurt, sweet chili sauce, lime juice, olive oil, garlic powder, and salt. If possible, make the yogurt sauce earlier in the day and store in the fridge to let the flavors combines.
  • Form the meat into four patties and brush with vegetable oil. Grill or cook in a skillet for about 5 minutes per side until cooked through. Serve with yogurt sauce.

1 egg white
1 tablespoon soy sauce
1/2 cup dry bread crumbs
1 tablespoon finely chopped onion
1 garlic clove, minced
1/4 teaspoon ground ginger
1/8 teaspoon pepper
12 ounces ground turkey

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble turkey over mixture and mix just until combined. Shape into four patties. In a nonstick skillet coated with cooking spray, cook turkey over medium heat for 6-8 minutes on each side or until a thermometer reaches 165°.

Found this in the KC Star about 20 yrs ago and I love it. It's fast, lo-fat and oh so very good. I usually double it for leftovers, if you do, start with 1/2 c. of breadcrumbs.

1 lb ground turkey
1/3 cup Progresso Plain Bread Crumbs
1 egg
3/4 teaspoon garlic salt
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons soy sauce
4 teaspoons cornstarch
2 teaspoons sugar
2 teaspoons vinegar
1 dash black pepper
2 celery ribs, cut diagonally
1 medium onion, cut into thin rings
1 medium green pepper, cut into 3/4-inch pieces
salt & pepper
2 medium tomatoes, cut into wedges

Steps:

  • Combine turkey, bread crumbs,egg and garlic salt. Form into patties.
  • Heat oil in a large skillet over medium-high heat. Saute patties about 3 minutes on each side or until browned.
  • While patties cook, combine broth, soy sauce, cornstarch, sugar, vinegar, and black pepper. When both sides are browned, pour sauce mixture over patties and bring to a boil, stirring occasionally. Reduce heat and add celery, onion and green pepper. Simmer, covered, 6 minutes. Season to taste with salt & pepper and add tomatoes. Simmer another 2 to 3 minutes, or until done. Enjoy.

2 fresh lemongrass stalks, root ends trimmed and 1 or 2 tough outer leaves discarded from each
2 garlic cloves, chopped
3 tablespoons chopped shallot
1 tablespoon finely chopped peeled ginger
1 (3-inch) fresh serrano or jalapeño chile, finely chopped, including seeds
1 teaspoon water
4 teaspoons Asian fish sauce, divided
1 1/2 pounds ground turkey (dark meat only)
1/4 cup fresh lime juice
1/4 cup vegetable oil
1/2 teaspoon sugar
1/2 teaspoon dried hot red-pepper flakes
4 kaiser rolls, split and grilled
2 cups mixed fresh mint, basil, and cilantro leaves
Equipment: a mini food processor

Steps:

  • Thinly slice bottom 6 inches of lemongrass (1/4 cup), discarding remainder. Finely grind lemongrass, garlic, shallot, ginger, and chile with water and 2 teaspoons fish sauce in mini food processor, scraping down side frequently, until a paste forms.
  • Mix paste and turkey with your hands until just combined (do not overmix) and form into 4 (3/4-inch-thick) patties (4 inches in diameter). Chill patties, covered with plastic wrap, 1 hour (to allow flavors to develop).
  • Whisk together lime juice, oil, sugar, red-pepper flakes, 1/8 teaspoon salt, and remaining 2 teaspoons fish sauce until sugar is dissolved.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas).
  • Oil grill rack, then grill patties, covered only if using a gas grill, turning over once, until just cooked through, 10 to 12 minutes total.
  • Whisk lime-juice sauce, then drizzle cut side of a bottom bun evenly with 1 tablespoon sauce. Top with a patty and 1/2 cup mixed herbs. Drizzle herbs with 1 tablespoon sauce and top with bun. Assemble 3 more burgers in same manner.

Serve in rolls with toppings as desired. Freeze option: Cover and freeze patties on a waxed paper-lined baking sheet until firm. Transfer to a large freezer container; return to freezer. To use, grill frozen patties as directed, increasing time as necessary for a thermometer to read 165°.

1 orange
1/3 cup Hawaiian stir-fry sauce
1 tablespoon packed brown sugar
1 package (1 pound) seasoned turkey patties
1 bag (16 ounces) fresh stir-fry vegetables

Steps:

  • Grate 1 teaspoon peel from orange. Peel orange; discard peel. Cut orange into thin wedges or slices.
  • Mix stir-fry sauce, brown sugar and orange peel.
  • Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook turkey in skillet about 3 minutes on each side or until light brown.
  • Move turkey to one side of skillet. Add stir-fry sauce mixture and vegetables to other side of skillet; stir well to coat vegetables with sauce.
  • Heat to boiling; reduce heat to medium. Cover and cook 10 to 12 minutes; stirring occasionally, until vegetables are crisp-tender. Stir in orange wedges. Serve turkey topped with vegetable mixture.

1/2 cup chopped fresh mushrooms
1/4 cup chopped green onions (4 medium)

2 tablespoons reduced-sodium soy sauce
1 teaspoon chopped garlic in water (from 4.5-oz jar)
1 tablespoon teriyaki baste and glaze (from 12-oz bottle)

Steps:

  • Heat closed contact grill for 5 minutes.
  • Meanwhile, in large bowl, mix all ingredients except teriyaki baste and glaze. Shape mixture into 6 patties, 1/2 inch thick.
