I got this recipe from Cooking Light magazine--it is wonderful, and wherever I take it, there are never any leftovers. I'm posting the "lightened" version. I usually use the full fat versions of the sour cream, instant pudding mix, and whipped topping, but that's just how my family likes it!

9 tablespoons butter or 9 tablespoons margarine, softened
1/2 cup sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/8 teaspoon salt
2 (11 ounce) cans mandarin oranges in light syrup, undrained
1/4 cup sugar
1 (16 ounce) carton low-fat sour cream
1 (8 ounce) carton nonfat sour cream
2 (3 1/2 ounce) packages vanilla instant pudding mix or 2 (3 1/2 ounce) packages sugar-free instant vanilla pudding mix
1 (8 ounce) container frozen reduced-calorie whipped topping, thawed
mint sprig (optional)

Steps:

  • Preheat oven to 400°.
  • To prepare crust, combine the butter, 1/2 cup sugar, and vanilla in large bowl. Beat at medium speed with hand-held mixer until light and fluffy (about 2 min.). Add flour and salt to butter mixture; beating at low speed until well-blended.
  • Pat dough into a 13" X 9" baking dish coated with cooking spray, and pierce bottom of dough several times with a fork. Bake for 12 minutes or until lightly browned. Cool crust on a wire rack. Turn oven off.
  • To prepare filling, drain mandarin oranges over a large bowl, reserving 1/2 cup juice. Combine juice, 1/4 cup sugar, sour creams, and both boxes pudding mix in a large bowl. Gently fold in the mandarin orange segments. Spoon orange mixture over crust, spreading evenly. Top with whipped topping. Chill 1 hour. Garnish with mint, if desired.

22 ounces mandarin oranges
20 large marshmallows
3 ounces orange Jell-O
8 ounces cream cheese, softened
8 ounces Cool Whip

Steps:

  • Pour reserved juice of mandarin oranges in a 2 cup measuring cup.
  • Add enough water to make 2 cups of liquid.
  • Heat to boiling.add marshmallows, stir to melt.
  • Add dry jello, and mix well.Let cool.
  • Mash oranges, mix with cream cheese, then add to cooled marshmallow mixture.
  • Fold in whipped topping and chill till ready to serve.

2 cups sour cream
1 lb confectioners' sugar
2 (11 ounce) cans mandarin oranges, drained
1 (11 ounce) can pineapple chunks, drained
1 cup coconut
1 (16 ounce) bag miniature marshmallows

Steps:

  • Mix sour cream and confectioners sugar until well blended.
  • Add fruit, coconut, and the desired amount of marshmallows.
  • Chill for at least 2 hours before serving.

This is a light and easy chicken dish with a brightly-flavored sauce of Mandarin orange juice, lemon juice, soy sauce, and honey. The chicken is then served with the oranges and topped with slivered almonds and chow mein noodles on a bed of rice. The whole thing takes about 15 minutes to prepare and about 30 minutes to cook, so long as you defrosted the chicken ahead of time. Enjoy!

1 (11 ounce) can mandarin oranges, reserve liquid
3 tablespoons honey
1 lemon, juice of
2 tablespoons soy sauce
1 teaspoon dried ginger
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 lbs boneless skinless chicken breasts, cut into strips
2 tablespoons butter
2 tablespoons oil
chopped cashews or slivered almonds, as garnish
3 cups hot cooked rice

Steps:

  • Make the sauce by combining reserved orange juice with honey, soy sauce, lemon juice,, and ginger in a small bowl.
  • Blend well and set aside.
  • Combine flour with salt and pepper in a shallow pie pan.
  • Set aside.
  • Trim off any fat and white veins from chicken breasts and slice each breast into about three strips.
  • Dry between double layers of paper towels.
  • Heat butter and oil in large skillet or wok over medium-high heat.
  • Coat all sides of chicken strips in seasoned flour and brown lightly in skillet.
  • Reserve browned pieces on a plate lined with paper towels.
  • When all chicken is browned, pour sauce into wok or skillet.
  • Place chicken in the sauce and turn to coat.
  • Reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, or until chicken is tender and white throughout and sauce begins to caramelize on the chicken.
  • Turn several times during cooking to coat evenly with sauce.
  • Meanwhile, prepare rice.
  • When chicken is done, remove from heat and quickly stir in the Mandarin oranges.
  • Sprinkle with your chosen garnish and serve over rice.
