SOUR CREAM CHEDDAR PASTA SALAD



Sour Cream Cheddar Pasta Salad image

A creamy sour cream pasta salad with cheddar cheese. A perfect barbecue side dish recipe or any time you need a macaroni salad to serve with dinner.

1 box Cellentani pasta, elbow or jumbo elbow macaroni
1/4 cup finely diced red pepper
1/4 cup finely diced green pepper
1/2 cup finely diced celery
1 cup mayonnaise ((Hellman's or Duke's))
3/4 cup sour cream
1 tablespoon granulated white sugar
3 tablespoons white vinegar
1/4 cup milk
1 1/2 cups shredded sharp cheddar cheese
1 teaspoon salt

Steps:

  • Boil the pasta following the directions on the box.
  • Drain the pasta well. Rinse under cold water until the pasta is cool to touch. Leave the pasta draining in the colander.
  • In a small bowl mix the sugar and vinegar until the sugar is dissolved. Set aside.
  • In large mixing bowl combine the mayonnaise, sour cream and milk mixing well. Add the vinegar and sugar mixture to the large mixing bowl with the mayo mixture. Mix or whisk until well combined.
  • Pour the well drain and cold pasta into the mixing bowl with the dressing. Toss with a large spoon until the pasta is evenly coating with the dressing.
  • Add the diced vegetables and shredded sharp cheddar cheese to the bowl. Toss until the vegetables and cheese are evenly mixed in with the pasta.
  • Salt the salad and mix well.
  • Cover and chill in the refrigerator at least 2 hours before serving.
  • Makes 8 to 10 servings.

16 oz pkg med. shell macaroni
2 c. cubed cheddar cheese
1 c. chopped celery
1/2 c. chopped green pepper
1/4 c. chopped onion
1 c. sour cream
1 c. salad dressing or mayonnaise
1/4 c. milk
1/2 c. sweet relish
1 1/2 tsp. prepared mustard
4 tsp. vinegar
1 tsp. celery salt
pepper

Steps:

  • In large pan cook macaroni in a large amount of boiling salted water until tender, drain, cool until room temperature. Toss with cheese, celery, green pepper and onion. Combine sour cream, salad dressing or mayonnaise, add milk, stir in relish, vinegar, mustard, salt. Toss with macaroni mixture. Cover and chill several hours.

4 cups of cooked elbow noodles (about 2 cups dried)
1 bell pepper cut into small chunks
2 celery sticks cut into small chunks
2 tbsp chopped red onion
1/2 - 3/4 cup cheddar cheese chunks
1/2 cup mayonnaise
1/2 cup sour cream
2 tbsp vinegar
1 tbsp prepared mustard
1 tsp sugar
1/8 tsp salt
1/4 tsp ground pepper

Steps:

  • In a large pot, boil the elbow macaroni according to package directions. Drain in a colander, then rinse with cold water.
  • Blend together the mayo, mustard, sour cream, vinegar, sugar and salt and pepper.
  • In a large bowl, combine the noodles and chopped vegetables, then toss with the dressing.
  • Let rest in the fridge for at least 30 minutes (1 hour or more is best).
  • Serve and enjoy!

I have looked all over for a great macaroni salad; this one is it! It's easy and is a huge hit at every function I take it to. The sauce for this is a great creamy sauce. I like my salads to have a lot of creamy dressing, so I always make an extra half batch of the wet mix and add it as necessary to get the salad more wet because the pasta soaks up the sauce.

1 teaspoon dry mustard powder
¾ teaspoon garlic powder
½ teaspoon paprika

Make sure the macaroni salad is cold when you serve it; the only time macaroni has to be served hot is when it's covered in mounds of cheese, like this Southern Macaroni and Cheese.
