This is something I enjoy having as a side dish with Puerto Rican or Cuban dishes.

malanga coco
water
1 tsp salt
olive oil

Steps:

  • 1. cut ends off and peel malanga with a knife. cut into 1/2" to 1" disks. Place in pan of salted water and boil until tender, about 20 to 30 minutes. serve with a drizzle of olive oil.

  • Malanga Mashed Faux-Tatoes. If you are nightshade-free or just looking for a healthier way to eat mashed potatoes, try malanga! This mashed malanga is a great substitute for mashed potatoes.
  • Gluten-free Malanga Fritters. These malanga fritters are gluten-free and stay together with the addition of parmesan cheese. Frituras de malanga crisp up nicely and have a delicious flavor.
