MAKER'S MARK CHOCOLATE BREAD PUDDING

I've had this for so long, I don't even remember where I got it! I haven't tried it, and I'm posting it here so I don't lose it. It sounds good, and my husband loves bread pudding, so this may be one I'll try soon. Prep time includes refrigeration time, and cooking time is just an estimate, as the original recipe really didn't give a cooking time.

1/2 cup heavy cream
3/4 cup half-and-half
3 ounces semi-sweet chocolate chips
4 cups French bread cubes
1/2 cup sugar
1/4 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon Bourbon
1 egg

Steps:

  • Preheat oven to 350 degrees.
  • Mix the cream and half and half together in a large saucepan. Heat until near boiling.
  • Place the chocolate chips in a large bowl and pour the hot cream mixture over the chips.
  • Stir until all the chocolate is melted.
  • Combine chocolate mixture with the bread cubes.
  • Whisk together sugar, cinnamon, vanilla, bourbon and egg.
  • Add to chocolate and bread mixture and combine well.
  • Pour into a 2-quart baking dish and refrigerate for 15-30 minutes before baking.
  • Bake, uncovered, until set and a cake tester comes out clean.
  • Serve warm. Top with whipped cream if desired.

I am a big fan of never wasting things, so of course when I have old bread around I don't wanna waste it. So I'm always playing around with different bread pudding recipes. You can't go wrong with chocolate and cherries.

1 cup heavy cream
1 cup milk
48 jarred wild cherries, such as Amarena Fabbri, plus 1/2 cup liquid from the jar
1/2 cup maple syrup
Pinch fine salt
5 large eggs
1 cup dark chocolate (63 percent)
1 baguette, medium diced
1 cup cold heavy cream
2 tablespoons brandy
2 tablespoons granulated sugar

Steps:

  • For the pudding: Preheat the oven to 350 degrees F.
  • In a medium pot add the cream, milk, liquid from the cherries, maple syrup and salt and bring to a boil.
  • In a separate bowl crack and whisk the eggs. In a larger bowl add the dark chocolate.
  • Pour the warm liquid into the dark chocolate and whisk until the chocolate has melted. Slowly whisk in the eggs. Mix in the diced baguette and let it sit for 30 minutes.
  • Place a cherry into each of eight 4-ounce ramekins, then fill the ramekins with the bread pudding mixture.
  • Place ramekins on a baking sheet and bake for 30 minutes.
  • For the brandy whipped cream: Whip the cream, brandy and granulated sugar until it holds stiff peaks. Serve the puddings topped with the cream.

DARK CHOCOLATE CROISSANT BREAD PUDDING

8 croissants, torn into 2-inch pieces
1 cup semisweet chocolate chunks
8 large eggs
1 cup sugar
1 tablespoon grated orange zest
1-1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
3 cups 2% milk
1 cup orange juice
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. Place croissants in a greased 13x9-in. baking dish; sprinkle with chocolate chunks. In a large bowl, whisk eggs, sugar, orange zest, cinnamon, nutmeg and salt until blended. Stir in milk, orange juice and vanilla; pour over top. Let stand about 15 minutes or until bread is softened., Bake, uncovered, 40-45 minutes or until puffed and golden brown; cover loosely with foil during last 10 minutes if top browns too quickly. Serve warm.

When cooked the sugar becomes crunchy and adds an elegant finish. This recipe was printed in the March 2003 edition of Bon Appetit and is reported to be served at the Red Fish Grill in New Orleans. I made this for my best friends birthday bash last year. Not low in anything!

1 3/4 cups whipping cream
1/2 cup sugar, plus
2 tablespoons sugar
1/4 cup whole milk
1 1/4 cups semi-sweet chocolate chips
1 large egg
1 teaspoon vanilla extract
4 cups French bread, cut into 1 inch cubes

Steps:

  • Preheat oven to 325 degrees.
  • Lightly spray a 1-1/2 quart shallow baking dish with non-stick cooking spray.
  • Bring 1/2 cup sugar, cream and whole milk to a simmer, stir until sugar dissolves.
  • Remove from heat and add 1 cup of the chocolate chips whisking until melted and smooth.
  • In a large bowl, lightly beat egg and vanilla just till blended.
  • Slowly whisk the hot chocolate mixture into the egg mixture.
  • Allow custard to cool for 10 minutes, stirring often.
  • Add bread cubes and remaining chocolate chips to the custard mixture.
  • Toss lightly to coat.
  • Pour mixture into prepared baking dish, sprinkle with 2 Tbsp of sugar.
  • Bake until the custard thickens and center is just set, about 50 minutes.
  • Serve warm.

SIMPLE CHOCOLATE BREAD PUDDING

We've not tried this yet, but I can't wait to! From Easy to Bake, Easy to Make. I think I'm going to try substituting the white chocolate for marshmellows. I'm also going to try omitting the cocoa and serving this with warm caramel topping sometime. If you don't have any stale bread to use up, let a couple of slices sit out uncovered for a couple of hours before using. Prep time includes cutting up the bread. Bake time includes standing time.

3/4 cup sugar
1/4 cup unsweetened cocoa powder
2 cups milk
3 large eggs
1 teaspoon vanilla extract
1 cup white chocolate chips

Steps:

  • Spray a 9 inch square baking dish with nonstick cooking spray. Place the bread inside the dish.
  • Combine the sugar and cocoa powder in a large dish. Add milk, eggs and vanilla and mix throroughly. Pour over bread dish.
  • Let stand 30 minutes or until liquid is absorbed.
  • Preheat oven to 350 degrees. Sprinkle chips over the top of the bread mixture, pressing them inches.
  • Bake 35-45 minutes, until a knife inserted into the middle comes out clean.
  • Serve warm or cold. Store in the refrigerator.

2 ounces semisweet chocolate
1/2 cup half-and-half cream
2/3 cup sugar
1/2 cup 2% milk
1 large egg, room temperature
1 teaspoon vanilla extract

4 slices day-old bread, crusts removed, cut into cubes (about 3 cups)
Optional toppings: Confectioners' sugar and whipped cream

Steps:

  • In a small microwave-safe bowl, melt chocolate; stir until smooth. Stir in cream; set aside. , In a large bowl, whisk sugar, milk, egg, vanilla and salt. Stir in chocolate mixture. Add bread cubes and toss to coat. Let stand for 15 minutes. , Spoon into 2 greased 2-cup souffle dishes. Bake at 350° until a knife inserted in the center comes out clean, 30-35 minutes. , If desired, sprinkle with confectioners' sugar and top with a dollop of whipped cream.
