My Foolproof Creme Anglaise is a sweet custard-like sauce, the name of which is French for "English cream," and my method truly is foolproof.

1 cup (8floz/225ml) cream ((any type of fresh cream will do))
1 1/2 cups (12floz/340ml) whole milk
1/2 cup (4oz/115g) sugar, (divided )
1 vanilla bean, (split lengthwise and scraped )
6 egg yolks

Steps:

  • In a medium heavy bottomed saucepan add the cream, milk, 1/4 cup sugar, vanilla pod and beans.
  • Simmer over medium heat until the mixture starts to bubble around the edge of the pan, for about 2 minutes, do not let it boil. Remove from the heat and let stand for 20 minutes.
  • While the cream mixture is infusing, whisk the egg yolks with remaining 1/4 cup of sugar in a medium bowl.
  • Ladle some of the hot cream mixture into the egg yolk mixture, then swiftly whisk to combine. Add another ladle of the infused milk to the eggs until the egg mixture is warm to the touch. This method is called tempering and it prevents the eggs from curdling.
  • Pour the tempered cream and egg mixture into the remaining cream in the saucepan, then return the pan to the heat.
  • Continue to cook over medium heat while constantly stirring until the custard coats the back of a spoon, this will take about 5 to 7 minutes.
  • Once the custard has thickened, remove from the heat and strain through a sieve into a medium bowl to remove any lumps and the vanilla pod.
  • Place the custard in an ice bath to cool it down quickly and prevent overcooking.
  • Once cooled, cover and store in the fridge in an airtight container for up 4 days. Serve with pies, crisps and cobblers.

Flavoured with a hint of lemon and with the signature shell shape, these adorable mini butter cakes make for a lovely afternoon tea, or a pretty finish for any meal. Best served hot and fresh out of the oven. Keep the batter in a piping bag, then 10 minutes in the oven is all it takes!

3/4 cup + 1 tbsp plain flour (all purpose flour)
1 1/4 tsp baking powder
3 large eggs (, at room temperature (Note 1))
2/3 cup caster sugar (superfine sugar) ((ordinary / granulated sugar ok too))
1 tsp salt
1 tbsp vegetable oil ((or other neutral oil))
3 tbsp milk (, full fat (low fat ok too))
2 tsp honey ((or maple syrup))
2 tsp vanilla extract
2 tsp lemon zest
135g / 9.5 tbsp unsalted butter (, melted, warm (not hot))
Canola oil spray ((or other neutral oil))
Icing sugar / powdered sugar ((optional, for dusting))

Steps:

  • Sift flour: Sift the flour and baking powder into a bowl.
  • Whisk eggs and sugar: Whisk the eggs and sugar vigorously for 2 minutes until it becomes paler in colour and it's foamy (or 1 minute on speed 6 with handheld beater).
  • Mix flour in 3 parts: Add the flour mixture in 3 parts, whisking gently in between until combined.
  • Add everything else except butter: Add salt, oil, milk, honey, vanilla and lemon. Mix until combined.
  • Add butter: Add butter, mix gently with a rubber spatula until combined. The batter is fairly thin but should leave a faint ribbon briefly on the surface (see video).
  • Cover and refrigerate: Cover with plastic wrap touching the surface and leave it in the fridge overnight (minimum 6 hours).

1/2 cup whole milk
1/2 cup whipping cream
1 2-inch piece vanilla bean, split
3 large egg yolks
3 tablespoons sugar

Steps:

  • Combine milk and cream in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring milk mixture to simmer. Remove from heat.
  • Whisk egg yolks and sugar in medium bowl to blend. Gradually whisk hot milk mixture into yolk mixture. Return custard to saucepan. Stir over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes (do not boil). Strain sauce into bowl. Cover and chill. (Can be made 1 day ahead.)

  • Cream together the butter and sugar until fluffy. Add in the flour, eggs, baking powder and vanilla bean paste until well combined.
  • Grease the madeleine mould with a little butter and divide the mixture between the 8 moulds.
  • Place in the oven and bake for 8-10 minutes at 200°C/180°C fan/400°F/Gas 6 or until risen and golden.
  • Allow to cool in the mould for 5 minutes and then very carefully remove and transfer to a cooling rack.
  • Once slightly cooled, trim the cakes if they have domed so that they are flat. Turn upside down so that the widest part of the madeleine is the bottom.
