EASY CORNED BEEF PASTA BAKE



Easy Corned Beef Pasta Bake image

Delicious, easy corned beef pasta bake can be made ahead of time and then baked for a warming and substantial family supper. Make it in advance to pop in the oven when you get home.

1 tbs olive oil
1 onion (peeled and chopped)
2 cloves garlic (peeled and chopped)
3 rashers bacon (chopped)
1 red pepper (deseeded and sliced)
1/2 tsp dried chillis (optional)
1 can chopped tomatoes (or bottle of pasatta)
340 g Princes corned beef (1 can) (diced)
250 g pasta (any small shapes)
100 g cheddar or other hard cheese (grated)

Steps:

  • Pour the olive oil into a large frying pan, add the onion and bacon, and fry, After a couple of minutes, add the garlic and cook until the onion is starting to turn golden.
  • Add the pepper, season with pepper and salt and fry until soft.
  • Add the canned tomatoes, the chilli and cook for about 5 minutes. The sauce will start to reduce and thicken.
  • Once the sauce has thickened add in the corned beef. Stir and cook for few more minutes until you have a rich thick corned beef sauce.
  • While the sauce is cooking, bring a large pan of water to the boil, salt well, add the pasta and cook for a few minutes less than the time on the packet instructions.
  • Drain the pasta, reserving some of the cooking water. Return to the pan and stir in the corned beef pasta bake sauce. Add a few spoons of the cooking water if needed to loosen the mixture.
  • Transfer to a shallow oven proof dish. Sprinkle with half the cheese, reserving the rest.
  • Bake at 160°C fan / Gas Mark 4 for 15-20 minutes if cooking right away, or for about 30 minutes if cooking from chilled. When you have about five minutes left to go, add the rest of the cheese and cook until golden and piping hot throughout.

1 8oz package Macaroni
1 can Cream of Chicken Soup
1 can Corned Beef, cut up
1 cup Milk
¼ lb. Cheddar Cheese, grated
1 small Onion, diced
2 Tablespoons Butter, melted
½ cup Panko Bread Crumbs

Steps:

  • Cook pasta about 3 minutes less than called for according to box directions.
  • Drain the pasta. Set aside.
  • Dice the onion.
  • Grate the cheddar cheese.
  • Place onion and cheese in a large mixing bowl.
  • Add the can of cream of chicken soup.
  • Add the milk.
  • Stir until fully combined.
  • Add the cut up corned beef.
  • Fold the beef into the other ingredients.
  • Butter a 13x9x2 casserole dish.
  • Pour the beef and pasta mixture into the buttered dish.
  • Place two tablespoons of butter in a small bowl. Melt butter in microwave.
  • Stir the half cup of bread crumbs into the melted butter until fully coated.
  • Spread the buttered bread crumbs over the top of the dish.
  • Bake at 350F degrees for 30 minutes or until bubbly hot and lightly browned on top.
  • Remove from oven when done. Set on folded towel and let cool for 10-15 minutes before serving.

2 cups elbow macaroni cooked and drained
2 (12-ounce) cans corned beef
1 teaspoon salt
1 teaspoon pepper
1 small onion, chopped
6 tablespoons unsalted butter
3 cups milk
6 tablespoons flour
1 1/2 tubes of Ritz crackers, crushed
3 cups Velveeta cheese, shredded
1 teaspoon cayenne pepper, optional

Steps:

  • Preheat oven to 375°F WHITE SAUCE: In a small, heavy saucepan, melt 6 tablespoons of butter over low heat. Blend 6 tablespoons of flour into the melted butter. Add 3/4 teaspoon of salt. Cook over low heat, stirring, for 3 to 4 minutes. Cooking for this length of time will minimize 'flour' taste. Slowly add 3 cups of milk, stirring constantly and continue cooking slowly until smooth and thickened. Add the 3 cups of Velveeta Cheese and stir until melted and smooth. CASSEROLE: Take a 2 1/2 quart casserole dish and spray it with cooking spray then add 1/2 of the macaroni. Crumble 1 can of corned beef over macaroni and sprinkle 1/2 of the onion on top of that along with 1/8 teaspoon of salt and 1/2 teaspoon of pepper.. Now make another layer of macaroni and place the 2nd can of corned beef and the rest of the onion on top as before. Sprinkle the last 1/8 teaspoon of salt and the 1/2 teaspoon of pepper. Now pour the white sauce over casserole and poke holes through casserole with a knife so that the sauce permeates the casserole. Add cayenne pepper at this time if desired and top with the crumbled crackers. Place in the preheated oven for 30 minutes to complete dish.

4 cups coarsely shredded cabbage
2 cups chopped leftover corned beef

1 (10 3/4 ounce) can condensed cream of mushroom soup
1 1/4 cups milk
1 tablespoon spicy brown mustard
1/4 teaspoon ground black pepper
1 1/2 cups finely chopped cheddar cheese
1/2 cup dry breadcrumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375°F
  • Spray 13x9-inch baking dish with cooking spray.
  • Bring water to a boil in large saucepan over high heat.
  • Add macaroni; cook 5 minutes, stirring occasionally.
  • Add cabbage; cook an additional 5 minutes, stirring occasionally.
  • Drain well.
  • Return to saucepan; stir in corned beef and onions.
  • Mix soup, milk, mustard and pepper in small bowl until well blended.
  • Pour over corned beef mixture; toss to coat.
  • Stir in cheese. Spoon into prepared baking dish.
  • Combine bread crumbs and butter in small bowl; sprinkle over corned beef mixture.
  • Bake 30 minutes, or until hot.
  • NOTE:
  • If using leftovers simply omit the part about cooking the cabbage.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

1 package (7 ounces) small shell pasta, cooked and drained
1 cup milk
1/2 cup chopped onion
2 bread slices, cubed
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Transfer to a greased 2-qt. baking dish. Toss bread cubes with butter; sprinkle over top., Bake, uncovered, at 350° for 30 minutes. Cover and bake 15 minutes longer or until golden brown. Let stand 10 minutes before serving.

1 can(s) corned beef
1 can(s) cream of chicken soup

  • 1. Cook macaroni according to package. Then add the rest of the ingredient's together. Put into a medium to large casserole dish,layer of the noodles and a layer of the meat and repeat then add some cheese on top and Bake at 350* for 45 mins.

1 1/2 c elbow macaroni
1 can(s) 12 oz. canned corned beef
1/4 lb velveeta cheese, cubed
1/2 c diced onion (or 2 tablespoons dehydrated onion)
1 can(s) cream of chicken soup
1 c milk
1/2 c buttered breadcrumbs

Steps:

  • 1. Cook elbow macaroni according to package directions to al dente. Drain.
  • 2. While macaroni is cooking, crumble corned beef. Combine cheese, onion, soup and milk; add corned beef.
  • 3. Lightly toss cooked macaroni with meat & cheese mixture and pour into a buttered 2 quart casserole dish. (I often do all the mixing right into the casserole dish to make one less dish to clean)
  • 4. Top with buttered breadcrumbs if desired.
  • 5. Bake for 1 hour at 375 until top is golden brown and cheese is bubbly.
