Macadamia Nut Granola image

I prefer to make cereal for my family which we serve with yoghurt. This is our favourite special treat. Good for brunch with friends. This makes 16 cups and therefore will serve sixteen people or store for use over a week.

Number Of Ingredients 8

750 g rolled oats
1 1/2 cups brown sugar (or less or Splenda)
1 1/2 cups wheat germ
250 g flaked coconut
250 g macadamia nuts, roughly chopped
1/4 cup canola oil
3/4 cup honey
2 teaspoons vanilla extract

Steps:

  • Mix together all dry ingredients.
  • Mix oil, honey, vanilla extract in a small saucepan.
  • Heat and bring to boil, then remove from heat.
  • Stir into dry ingredients until well combined.
  • Preheat oven to 170 degrees celcius.
  • Spread mixture onto to two baking trays lined with baking paper.
  • Bake 15 minutes stirring every so often.
  • Remove from oven and allow to cool.
  • Store in airtight container.

This fabulous granola is from the Smitten Kitchen cookbook. Best granola I've ever eaten and super clean!

Number Of Ingredients 10

3 cups rolled oats
1 cup shredded coconut
1 cup pecans, coarsely chopped
1/4 cup toasted wheat germ
2 tablespoons olive oil
1/2 teaspoon salt
1/2 cup maple syrup
1/2 cup honey
1/4 teaspoon cinnamon
1 large egg white

Steps:

  • Preheat oven to 300 degrees.
  • Combine all ingredients but the egg whites in a large bowl, tossing to coat evenly.
  • Whisk egg white in a small bowl until frothy. Stir into granola mixture, distributing it throughout.
  • Spread in a single layer on a parchment-lined baking sheet. Bake for 45-55 minutes or until browned and dry to the touch.
  • Halfway through baking, use a large spatula to turn over sections of the granola. Rotate the pan if granola bakes unevenly.
  • Once finished baking, cool completely and then break into desired sized clusters.
  • Enjoy!
