TAPIOCA PUDDING
This homemade Tapioca Pudding recipe is a creamy, classic dessert that is easy to make and naturally gluten-free! It is the perfect dessert to make ahead and one that the whole family loves!

Steps:
- Add milk, cream, sugar and salt to a saucepan over medium heat. Bring to a simmer, then stir in tapioca and reduce heat to low. Cook, stirring often, until mixture has slightly thickened, and the tapioca pearls have plumped and softened, about 45 minutes.
- Add the eggs to a bowl and whisk to combine.
- Add a spoonful of hot tapioca mixture to the beaten eggs, stirring well as you pour it in. Repeat with another few spoonfuls of hot tapioca, stirring after each. (This helps temper the eggs and bring them to a warm temperature without "scrambling" them.)
- Add tempered egg mixture to the saucepan with tapioca and stir well to combine. Cook for 2-5 more minutes, just until thickened (keep in mind it will continue to thicken as it cools). Remove from heat and stir in vanilla.
- Transfer to a serving bowl and place a piece of plastic wrap directly on the surface of the pudding (to keep it from forming a rubbery skin on the surface). Allow it to cool before serving. Serve either warm or chilled.

LOW FAT TAPIOCA JELLO
This is a real refreshing low fat dessert and easy to make too, orange Jell-O can be replace with any other flavor, but I find that orange seems to be the best --- plan ahead the tapioca needs to sit for 8 hours, or overnight:)

Steps:
- Boil the water in a saucepan; add the tapioca.
- Soak the tapioca in the water for 8 hours, or overnight.
- The next day, boil for 10 minutes until almost clear.
- Add the sugar and Jell-O; let cool until stiff.
- Add in the fruit; mix.
- Top with whipped topping if desired.
- Divide into serving dishes; serve and enjoy!

- In a saucepan mix together vanilla pudding mix, tapioca and strawberry gelatin. Stir in warm water. Cook over medium heat until thickened. Remove from the heat and chill in the refrigerator until slightly thickened but not set.
- Stir in sliced strawberries; mix well. Fold in whipped topping until blended. Pour into a 9-inch square pan.
- Refrigerate 4 hours or overnight.
- Cut into squares to serve.

- 1. In a 2-qt. saucepan, mix milk, sugar, egg whites, and tapioca and let stand for 5 minutes. Bring mixture just to a boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and nutmeg.
- 2. Transfer pudding to a medium bowl. Place plastic wrap directly on surface and let pudding stand at room temperature for 20 minutes.
- 3. Stir and pour into 4 individual serving dishes. Sprinkle with almonds if desired. Serve warm or chilled.
