LOW CARB BREAKFAST BALLS
I used to live off of these when I was low carbing. They freeze really well. I also occasionally mixed in TVP (texturized vegetable protein) and flax for some extra fiber.

Steps:
- Mix all the ingredients together until thoroughly blended (it is best to use your hands or an electric mixer).
- Form into about 4 dozen 1 to 1 1/2 inch balls and place on a cookie sheet or broiler pan.
- Bake at 375°F for about 25 minutes.
- Once they are cool, they can be sorted into individual zip bags and frozen for a grab-and-go breakfast.
- NOTE: for Scotch Eggs, mold a bit of the raw meat mixture around a peeled hard-boiled egg (or eggs) and bake at 350°F for 30 minutes.

OATMEAL ENERGY BALLS
Enjoy these Oatmeal Energy Balls for breakfast! With one batter, you can make four different types of energy balls. This recipe is quick and easy to make, and you can make it ahead of time, so breakfast is ready by the time you wake up.

Steps:
- In a large bowl, combine everything together using a spatula. It should all come together and form a sticky but slightly crumbly batter. If the mixture is too dry, add a bit more peanut butter and honey. If the mixture is too sticky, add a bit more oats. See notes.
- Divide the batter into 4 medium bowls. If you have a scale, each bowl should weigh 95 grams, but it's fine to just estimate. You can also make these Oatmeal Energy Balls with one mix-in. Skip this step, and make sure you adjust the mix-in recipe accordingly.
- For each bowl, add in the mix-in of choice, and mix until everything is well combined.
- Cover the bowl and place it in the refrigerator for about 10 minutes. This will make it easier to press into balls.
- Press and roll the batter into roughly 1-inch balls. You should be able to make 6 Oatmeal Energy Balls with each mix-in. Enjoy immediately, and store any leftovers in a covered container in the refrigerator.

KETO PEANUT BUTTER PROTEIN BALLS (5 INGREDIENTS)
Steps:
- Combine the peanut butter, protein powder, sweetener, and vanilla in a powerful blender or food processor. Process until uniform, scraping down the sides as necessary. The mixture should be very dense, but able to be pressed together. If it's too thin, you can add more protein powder and/or sweetener to taste.
- Freeze the dough for about 20 minutes to make the mixture firmer and less sticky.
- Use a small cookie scoop (or a spoon) to grab balls of dough. Roll into balls, preferably using cold hands (wash them with cold water first).
- Roll protein balls in chopped peanuts to coat the outside. You can enjoy them right away, or refrigerate for 20 minutes to make them firmer. Keep refrigerated.
