LOUISIANA CAJUN TURKEY BURGERS WITH ÉTOUFFéE RELISH AND CREAMY CAJUN SAUCE
Fire up the grill and serve Louisiana Cajun Turkey Burgers with Étouffée Relish and Creamy Cajun Sauce this weekend! This spicy twist on a classic turkey burger makes for a delicious entree at barbecues or grill outs. Jennie-O 1/3 lb. Seasoned Turkey Burgers serve as the base. Topped with purple, green and gold Étouffée Relish and a Creamy Cajun Sauce for sweet-spicy Louisiana flair, these burgers are sure to be a summertime hit!

- In a heavy-bottomed skillet, melt the butter and olive oil together over medium-low heat.
- When the butter has completely melted, add the onion and bell peppers.
- Season with salt and the red pepper flakes.
- Cook low and slow for 35-45 minutes, or until the vegetables have softened significantly and can be easily smeared on a slice of bread or a burger. (It's the consistency that you're looking for here! We want 'em soft, but not indistinguishable.)
- When the relish is done, remove from the heat, and set aside.
- In a bowl, combine the mustard and mayonnaise.
- Taste the sauce, then add 1-2 teaspoons of the hot sauce to taste. (Do this slowly so you don't singe your tastebuds.)
- Set aside for later.
- Heat the grill or a grill pan to medium-high heat.
- Place the frozen Jennie-O burgers onto the preheated grill, a few inches from the heating source. Cook for 9-10 minutes on each side, turning twice, until the internal temperature of the burgers reads 165°F.
- While the burgers cook, toast the onion buns on the grill, too, just enough to have grill marks on the bread, then remove.
- Dollop some of the sauce onto the bottoms of the buns, then add a leaf of butter lettuce. Set aside for when the burgers have finished.
- Once the burgers have cooked, remove from the heat using a spatula.
- Transfer the cooked burgers on top of the prepared buns.
- Smear Étouffée Relish on top of the burgers, then top with more sauce and the top of the bun.
- Serve immediately, and enjoy!

- Mayonnaise:
- Whisk together the mayonnaise, mustards, hot sauce, cornichons, green onion and parsley in a small bowl and season with salt and pepper, to taste. Cover and refrigerate for at least 1 hour.
- Burger:
- Stir together the paprika, pepper, salt, thyme, garlic powder, onion powder and cayenne in a small bowl.
- Mold the meat into patties. Brush with oil, season both sides with salt. Sprinkle 1 side of each patty with the spice mixture, making sure to rub the spices into the meat, then drizzle with oil before grilling.
- Preheat grill to high.
- Heat the 2 tablespoons of oil in a cast iron skillet on top of the grates of the grill until it begins to shimmer. If using cast iron pan, place the burger in the pan and cook until slightly charred and the spices have formed a crust, about 1 1/2 minutes (be careful not to burn the spices.) Turn the burger over, lower the heat to medium and continue cooking to desired doneness. If using a grill, grill the burgers on the grates of the grill for about same amount of time. Top each burger with 2 slices of cheese during the last 30 seconds of cooking, until cheese is melted.
- Put the burgers on the buns, top with the ham, some of the onions and some of the mayonnaise sauce and potato chips. Use a skewer to hold the burger together.

- Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.
- While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.
- To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.
