SEAFOOD SALAD



Seafood Salad image

A retro classic, this old-fashioned seafood salad recipe comes together in just 10 minutes!

Number Of Ingredients 7

16 ounces imitation crab
½ cup mayonnaise
1 stalk celery, diced
2 tablespoons finely chopped red onion
1 tablespoon chopped fresh dill
½ teaspoon Old Bay seasoning
Salt and pepper, to taste

Steps:

  • Break the imitation crab into bite-size chunks or chop with a knife; place in a large bowl.
  • Add the remaining ingredients and gently toss to combine. Season with salt and pepper, to taste.
  • Cover and refrigerate until ready to serve.

Number Of Ingredients 13

Kosher salt
Good olive oil
1 pound small pasta shells, such as Ronzoni
Kernels from 8 ears of corn (about 6 cups)
12 scallions, white and green parts, thinly sliced
2 yellow or orange bell peppers, seeded and small-diced
2 pints cherry tomatoes, halved
2 pounds cooked fresh lobster meat, medium-diced
1 1/2 cups good mayonnaise
1 cup sour cream
1/2 cup freshly squeezed lemon juice (4 lemons)
Freshly ground black pepper
1 1/2 cups minced fresh dill

Steps:

  • Bring a large pot of water to a boil and add 2 tablespoons of salt and some olive oil. Add the pasta and cook it for 8 to 10 minutes, until al dente. Add the corn to the pasta and cook it for another 2 minutes, until the corn is tender. Drain the pasta and corn together in a colander and pour them into a large mixing bowl. Add the scallions, diced pepper, tomatoes, and lobster, tossing gently to combine. Allow to cool slightly.
  • In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, 4 teaspoons salt, and 2 teaspoons pepper until smooth. Pour over the pasta and mix well to bind the ingredients. Stir in the dill. Cover with plastic wrap and chill for up to 6 hours to allow the flavors to develop. Check the seasonings and serve chilled or at room temperature.

I came up with this recipe one hot summer day. It is an easy, delicious and colorful one dish meal that we all love to eat on hot days.

1 package(s) rotini pasta (12 oz)
2 cup(s) frozen peas
1 package(s) imitation crabmeat or lobster chunks (8 oz)
1/2 cup(s) mayonnaise
1/3 cup(s) tartar sauce

Steps:

  • Cook peas with the pasta in salty water according to package directions. Drain and run under cold tap water til cool.
  • Mix all ingredients together and stir well till well coated with sauces. Cover an refrigerate till ready to serve.

IMITATION CRAB (OR LOBSTER) SALAD

I evolved this over the years based on something a grocery used to make. Feel free to add other crunchy or yummy stuff to your liking. Cucumbers and green peppers come to mind.

3 ounces imitation crabmeat (or lobster, it is usually Pollack. Sometimes packed in 4 oz, either is fine)
1 cup celery, chopped
1/4 cup onion, chopped (Vidalia, red or yellow)
1 apple, chopped (or use whatever fruit is in season)
1/4 cup plain yogurt (or Greek plain)
1/4 cup mayonnaise (if this will sit out, just use yogurt)
2 tablespoons lemon juice
salt
pepper

Steps:

  • Mix it all up and enjoy.
  • Serving ideas:.
  • Over a bed of lettuce.
  • In an opened tomato.
  • With more fruit around the edge.
  • On crackers.
  • As a sandwich.
