SPICY TURKEY TACOS
Great way to use all that leftover turkey! Serve tacos with lettuce, shredded cheese, and sour cream.

- Combine turkey, cilantro, jalapeno pepper, and taco seasoning mix in a slow cooker; pour in enough chicken broth to almost cover all the ingredients.
- Cook on Low for at least 3 hours.
- Heat a griddle over medium-low heat and cook tortillas until warmed, about 30 seconds per side. Fill tortillas with turkey mixture.

- Heat taco shells according to package directions., Meanwhile, in a large nonstick skillet, cook turkey and onion over medium heat until meat is no longer pink. Stir in salsa and spices; heat through. Serve immediately, or cool before placing in a freezer container. , To serve, fill each taco shell with 1/3 cup turkey mixture. Serve with lettuce, cheese, sour cream and, if desired, optional ingredients., Freeze option: Freeze cooled meat mixture in freezer containers for up to 3 months. - Heat oven to 375°F.
- Cook turkey in large skillet until done. Meanwhile, add hot water to stuffing mix; stir just until moistened.
- Add beans, tomato sauce, barbecue sauce, hot sauce and seasonings to turkey; mix lightly. Spoon into 3-qt. casserole sprayed with cooking spray. Top with stuffing, spreading to within 2 inches of edge of casserole.
- Bake 25 min. Sprinkle with cheese and crushed chips; bake 5 min. or until cheese is melted. Top with lettuce and onions just before serving.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, chili powder, salt, pepper and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Place 1/4 cup salsa in each of two greased 8-in. square baking dishes. Top each with a fourth of the tortillas and 1/4 cup salsa. , Divide the meat mixture, sour cream and corn between the two casseroles. Top with remaining tortillas, salsa and cheese. , Cover and freeze one casserole for up to 1 month. Cover and bake second casserole at 350° for 35 minutes.
