Pappardelle with Lobster, Spicy Tomato Sauce, and Mint image

Broad pappardelle are often reserved for special-occasion dishes -- this lobster-and-mint sauce definitely qualifies. Veteran pasta eaters will know: Just pick up one pappardella at a time; once you have it wrapped around the fork, you'll have a substantial, delicious bundle.

Number Of Ingredients 10

1 1/2 pounds cooked lobster meat
1 1/2 cups extra-virgin olive oil
5 garlic cloves, minced
3/4 cup fresh lemon juice (3 to 4 lemons)
3 small dried red chiles, crumbled
Coarse salt
1 pound pappardelle
1/2 cup Tomato Sauce for Pappardelle with Lobster
Freshly ground pepper
3/4 cup fresh mint leaves

Steps:

  • Marinate lobster meat in oil, garlic, lemon juice, and chiles in a large nonreactive bowl 30 minutes.
  • Bring a large pot of water to a boil; add salt. Add pasta; cook until al dente. Drain. Heat tomato sauce in a large skillet over medium-high heat until hot.
  • Add lobster, marinade, and pasta to skillet. Season with salt and pepper. Cook, tossing well, until pasta and lobster are heated through. Transfer to a serving dish, and scatter mint on top.

1 1 1/2-pound live lobster
4 tablespoons olive oil
1 tablespoon minced garlic
Crushed red chili flakes to taste
1 pound long pasta, like linguine
1/2 cup chopped mint, or to taste

Steps:

  • Bring a large pot of water to a boil and salt it. Put about an inch of water into another large pot, add a not-too-big pinch of salt, put in lobster and cover pot. Steam lobster until it is red, about 3 minutes; you do not have to cook it through. Remove it and keep water simmering with cover off. As soon as you can, remove lobster's tail and claws; return body to simmering liquid. Remove meat from claws and tail and return shells to pot; chop meat roughly.
  • Put olive oil in a large skillet over medium heat. Add garlic and lobster meat and toss; cook until it sizzles, then add chili flakes and lower heat. Strain lobster-cooking water, discarding body and shells; you will want a couple of cups.
  • Meanwhile, cook pasta until it is not even close to tender, but just bending. Drain it, reserving some cooking liquid if you have less than 2 cups of lobster liquid. Add pasta to lobster/garlic mixture, with about a cup of lobster liquid. Cook, stirring occasionally, until pasta is tender, adding more liquid as necessary. Stop cooking when pasta is tender, taking care not to add too much liquid.
  • Taste and add more salt, chili flakes or olive oil if you like. Stir in the mint and serve.

CREAMY LOBSTER LINGUINE

3 tablespoons extra-virgin olive oil
2 slices bacon, chopped
3 shallots, minced
2 cloves garlic, chopped
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
2 cups tomato puree
1/4 cup cream
1 pound linguine
1/4 cup freshly grated Parmesan, plus more for serving
1 cup baby arugula, roughly chopped
1/2 cup fresh basil leaves, roughly chopped
1/4 cup fresh tarragon leaves, roughly chopped
1 cup frozen peas, thawed
Two 1 1/2-pound lobsters, steamed, meat removed

Steps:

  • Heat a large straight-sided skillet over medium heat. Add the olive oil and bacon and cook until the bacon is beginning to crisp, 8 minutes. Add the shallots, garlic and red pepper flakes and cook for an additional 3 minutes, until fragrant. Add the salt, tomato puree and cream; stir to combine. Reduce the heat to low and simmer for 5 minutes.
  • Bring a large pot of salted water to a boil. Cook the linguine for 1 minute less than the package instructions, about 10 minutes. Using tongs, remove the pasta from the water and add it directly to the pan with the sauce. Sprinkle the cheese directly on the naked pasta and toss to coat in sauce. Add up to 1 cup of the pasta water to loosen the sauce as needed. Stir in the arugula, basil, tarragon, peas and lobster meat; simmer until everything is heated through, 1 minute. Serve with additional Parmesan if desired.

SPICY LOBSTER PASTA

2 tablespoons olive oil
1/4 teaspoon crushed red chile flakes
4 cloves garlic, minced
1 Fresno chile, minced (leave in the ribs and seeds for extra spice)
1 medium yellow onion, minced
1/2 cup dry white wine
One 28-ounce can whole tomatoes (preferably San Marzano)
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1 pound spaghetti
Two 8-ounce lobster tails, fresh or frozen and defrosted
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh mint
Good-quality extra-virgin olive oil, for drizzling, optional

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the chile flakes, garlic, Fresno chile and onions and cook until the onions are tender and fragrant, 5 to 7 minutes. Add the white wine and bring to a low simmer. Stir in the tomatoes, salt and pepper. Reduce the heat to low, cover and simmer until reduced slightly, 35 to 40 minutes.
  • Bring a large pot of water to a boil. Add the spaghetti and cook until al dente according to the package instructions. Reserve 1/2 cup pasta water, then drain the pasta and keep warm.
  • Add the lobster tails to the sauce, cover and cook for about 5 minutes (they will not be cooked through at this point). Remove the lobster to a cutting board and carefully use a knife to split open the tails on the backside. Remove the meat and coarsely chop.
  • Add the lobster meat back to the sauce along with a few tablespoons of the pasta water and the spaghetti. Toss to coat, adding more pasta water if the sauce is too dry. Toss in the parsley and mint. Drizzle with a good-quality extra-virgin olive oil, if desired. Serve immediately.

I had a whole steamed lobster left over from Valentine's Day, so I used it in this quick, easy microwave recipe.

1 1/4 lbs lobsters, steamed, shelled, and cut into chunks
3 garlic cloves, minced
2 tablespoons butter
3 tablespoons extra virgin olive oil
3 scallions, sliced
salt and pepper
1/4 teaspoon red pepper flakes, to taste
1/2 lb whole wheat spaghetti

Steps:

  • In a large pot bring water to a boil.
  • Add spaghetti and cook 9 minutes, until al dente.
  • Separate the lobster tail and cut in half lengthwise, then into slices crosswise.
  • Crack the claws and take out the meat.
  • Add butter, garlic, and olive oil to a large microwave safe bowl and cook for 2 minutes until garlic softens.
  • Add scallions, spices, and lobster and microwave an additional 1 1/2- 2 minutes until heated through.
  • Drain spaghetti and add to bowl, toss and serve.

  • Bring a large pot of water to a boil for the pasta. Add about a tablespoon of salt and keep at a simmer while you prepare the other ingredients.
  • In a large skillet that has a lid, melt the butter over medium high heat. Add the shallot and teaspoon salt and cook, stirring occasionally, about 2 minutes until softened. Add the tomatoes and cook over high heat for 2-3 minutes. Watch carefully as you don’t want the shallots to burn, but want a fairly high heat here so the tomatoes start to burst. When they look like they are just starting to break down and the pan is super hot, pour in the wine. Cook for a minute or two to let some of the wine cook off, then cover with the lid and turn to low.
  • When the pasta is just one minute shy of being done, add the lobster meat to the tomatoes along with the lemon zest and capers (if using). Stir for a minute.

  • Fill a large pot with a tight-fitting lid with 2" of cold water. Generously season with salt and bring to a boil. Add lobsters to pot, cover, and steam until shells are bright red, about 8 minutes. (Better to slightly undercook the lobsters since you will be reheating the meat before serving.) Transfer lobsters to a large rimmed baking sheet and let sit until cool enough to handle.
  • Break down those lobsters! (Never picked lobster meat before? That’s what YouTube is for!) Cut or tear off small legs and eat them (they make for a great snack). Remove tail meat, cut tail meat in half lengthwise, and cut each half into bite-size pieces; transfer to a medium bowl. Remove meat from knuckles and claws, doing your best to keep the meat as intact as possible (it’s nice to have a whole claw for each person); add knuckle and claw meat to bowl with tail meat and chill until ready to serve.
  • With a sturdy knife, hack carapace and shells into 1" pieces and transfer to a large Dutch oven or pot. Add onion, celery, garlic, basil, cream, and red pepper flakes. Bring to a boil, then reduce heat to medium and simmer, uncovered and stirring occasionally, until cream is reduced by half, about 45 minutes.
  • Strain lobster cream through a fine-mesh sieve into a medium bowl, pressing on solids to get as much liquid out as possible; discard solids. (If cream isn’t reduced to about 2 cups, don’t sweat it—you can always reduce it a bit more before adding the pasta.)
