This recipe for hard ginger nut biscuits is possibly one of the oldest ones I have in my possession. My English grandma used it many years ago. The cookies are fabulous for dunking. [Recipe originally submitted to Allrecipes.co.uk]

2 tablespoons golden syrup
8 ounces self-rising flour
4 ounces white sugar
1 teaspoon ground ginger
4 ounces margarine
1 teaspoon baking soda

Steps:

  • Preheat the oven to 180 degrees F (82 degrees C). Grease 2 baking sheets or line with parchment paper.
  • Warm golden syrup in a saucepan over low heat, about 2 minutes. Allow to cool slightly in the saucepan.
  • Combine flour, sugar, and ginger in a bowl. Rub in margarine. Mix in baking soda. Stir flour mixture into the golden syrup in the saucepan until dough is well combined.
  • Take a small, walnut-sized piece of dough and roll it into a ball; continue with remaining dough. Space biscuits evenly apart on the prepared baking sheets.
  • Bake in the preheated oven until biscuits are slightly cracked on the surface, 10 to 15 minutes. Transfer to a wire rack to cool.

Steps:

  • Preheat oven to 190C/fan 170C/gas 5. Grease two baking sheets.
  • Melt butter, sugar and golden syrup in a pan until melted and the sugar has dissolved. Leave to cool slightly.
  • Sift flour and ground ginger into sugar mixture and stir well.
  • Using wetted hands make walnut sized balls of the mixture and arrange well spaced out onto the baking sheets. Flatten slightly then bake in the centre of the oven for 15-20 minutes.
  • Remove from the oven and transfer to a waire rack to cool completely.

I was so pleased with these tasty classic biscuits. The texture is just like that of a non gluten free Ginger Nut, and as any coeliac knows it's the texture that usually suffers in adapting recipes. The recipe calls for 1lb 4oz of flour, however, this system doesn't like mixing pounds and ounces,,,hence "20oz flour."For a more authentic touch sprinkle some sugar on the dough just before baking.

6 ounces butter, softened
8 ounces soft brown sugar
8 ounces granulated sugar
2 eggs, beaten
4 ounces molasses
1 tablespoon apple cider vinegar
20 ounces gluten-free flour
2 teaspoons xanthan gum
1 1/2 teaspoons baking soda
2 tablespoons ground ginger
1 teaspoon cinnamon
1/4 teaspoon ground cloves
granulated sugar (for dredging) (optional)

Steps:

  • Preheat the oven to 160°.
  • Cream the butter and both sugars together until soft.
  • Mix the eggs, molasses and cider vinegar together.
  • Add to the creamed butter and sugar and blend well.
  • Sieve the flour, spices, xanthan gum, and baking soda into the butter and molasses mixture and stir until the flour is just incorporated. ( do not over mix).
  • With a teaspoon an a very clean finger, evenly place a heaped teaspoon full of the mixture on a lined baking sheet, approximately 1 inch apart.
  • Flatten the dough slightly by gently patting with a palette knife dipped in water.
  • Dredge the biscuits with a very light dusting of granulated sugar(Optional).
  • Bake for 15 mins, they will still appear soft, but they do crisp up when completely cool.
  • Leave to cool slightly before transferring to a cooling rack to cool .

Use fresh and ground ginger to make these moreish biscuits. They're perfect served with a cuppa for afternoon tea, or as a treat anytime

100g salted butter , cubed
75g light brown soft sugar
1 tbsp grated fresh ginger
100g golden syrup
250g self-raising flour
1½ tbsp ground ginger
1 tsp bicarbonate of soda
1 small egg yolk, beaten

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Line two large baking trays with baking parchment. In a saucepan over a low heat, melt the butter, sugar, fresh ginger and golden syrup and leave to cool.
  • Mix the flour, ground ginger and bicarbonate of soda together in a bowl with a wooden spoon. Gradually stir in the cooled sugar mixture and the egg yolk and knead briefly to make a dough.
  • Roll the dough into 20g balls and put on the prepared baking trays with 3cm between each to allow for spreading. Bake for 8-10 mins until golden brown. Leave to cool on the trays for a min, then transfer to a cooling rack to cool completely.

Another recipe from the family cookbooks that I inherited from my Mother and my Grandmother. I can almost smell these baking when I close my eyes and think of Gran. A "memory" recipe as well as a yummy treat. If you make these into very little balls, about the size of an oversized marble or a gobstopper then you will get the cookies as shown in my photograph, and the centers will be ever so slightly chewy. These are traditionally a very hard crisp biscuit (cookie) made for dunking into tea or coffee, and the bigger you make the balls the crunchier the end result. Usually I store these in an airtight container to keep them crisp, but if you made some of these crunchier and you want them REALLY chewy after all, just leave some out of the container for a while and hey presto... divine which ever way you prefer them. 1 cup sugar
1 cup golden syrup
3 cups flour
1 tablespoon ground ginger (heaped)
1 teaspoon baking soda

Steps:

  • Pre heat oven to 350°F (180°C).
  • Cream the butter and the sugar.
  • Add the golden syrup and the dry ingredients.
  • Mix everything together and roll into little balls. Put onto a greased baking tray, pressing the balls down very slightly with a fork.
  • Bake at 350°F and 180°C for 15 minutes.
  • Cool on a wire rack and keep in an airtight container once cold.

  • Pre-heat your oven to 180°c (160°c for fan assisted ovens or Gas Mark 4) and grease a few baking sheets with a little butter and set aside.
  • Add the butter/margarine and golden syrup to a small pan and gently warm over a low-medium heat, until just melted. Alternatively in a microwave-proof bowl, in short bursts in the microwave.
  • In a large bowl, mix together the flour, ground ginger and sugar, before adding the melted butter/margarine and syrup. Mix well to create a sticky dough.
  • Roll the dough into balls (about 1 tbp of dough per ball) and place onto your pre-greased baking sheets, with a reasonable amount of space between them - they do spread whilst baking.
