TWO-CHEESE LINGUINE



Two-Cheese Linguine image

An easy cheese sauce turns ordinary pasta into a special side dish that's the perfect accompaniment to the steaks.

Number Of Ingredients 9

1 package (7 ounces) linguine
2 tablespoons butter
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups whole milk
3/4 cup shredded mozzarella cheese
1/4 cup shredded Parmesan cheese
2 tablespoons lemon juice

Steps:

  • Cook linguine according to package directions. , Meanwhile, in a skillet over low heat, melt butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; boil and stir for 2 minutes or until thickened. Remove from the heat. Combine cheeses; toss with lemon juice. Add to the sauce; stir until cheese begins to melt. Drain linguine; add the cheese sauce and toss to coat.

1 lb linguine
2 ounces olive oil
1/4 cup shallot, chopped finely
1 clove garlic
1 (16 ounce) can Italian-style tomatoes, chopped
1 (113 g) package rondele cheese
1/4 cup white wine
1 teaspoon basil
salt and pepper

Steps:

  • Cook linquine until al dente, approx 10 mins, and cool.
  • In a saute pan heat oil over medium heat.
  • Add shallots and garlic.
  • Cook 2 minutes.
  • Add tomatoes, white wine and basil.
  • Simmer over medium heat for about 3 minutes.
  • Add the rondele cheese.
  • When the cheese has melted add the linguine.
  • Let it heat through until the linguine is hot.
  • Enjoy.

Not your ordinary chicken breasts, more like cordon blue, but very simple to prepare. It makes a special meal and would be great served with any kind of vegetable, rice or pasta.

4 boneless skinless chicken breasts
6 tablespoons olive oil
1/2 cup flour
2 eggs, beaten
6 tablespoons rondele garlic & herb spreadable cheese
1/4 lb butter
2 scallions, minced
1 clove garlic, minced
8 tablespoons grated parmesan cheese

Steps:

  • Pound chicken to 1/4 inch thickness.
  • Place 1 1/2 TBS Rondele cheese in center of chicken breast and roll chicken to cover cheese.
  • Dredge chicken in flour.
  • Mix eggs and parmesan cheese to make a batter.
  • Dip flour coated chicken in the egg batter.
  • Saute chicken in skillet with olive oil on medium heat until golden brown.
  • Place chicken in a baking dish.
  • Drain olive oil from skillet and add butter, then add green onions and garlic, and saute for about 2 minutes.
  • Pour this mixture over the chicken in the bakng dish.
  • Bake in 375* preheated oven for 30 minutes until cooked through.

  • Boil a salted pot of water and cook the pasta al dente according to package directions. Important: reserve about a cup of the pasta water before you drain it (I just use a Pyrex measuring cup).
  • Drain the pasta, then add it right back into the pot it was cooked in (take it off the burner). Add the Boursin cheese and a small splash (a few tablespoons or so) of the pasta water. Toss (I use two spoons) until you've got the sauce the consistency that you want, gradually adding in more of the pasta water as needed. You likely won't need to use most of it.
  • Add in the spinach and continue tossing the pasta until everything is nicely coated in sauce. Cover the pot and let it wilt for a minute or two, then serve. Add some salt & pepper if needed.
