FEMMES' REVENGE CARIBBEAN CURRY MIX
A delicious blend which truly captures the flavors of the islands. It is great on fish, chicken and also on fruit. Mix in oil for a curry paste or use as a dry rub. If you want it hotter, use more cayenne. We like it a little heavy on the cinnamon and cloves.

Steps:
- Grind all whole spices and seeds and bay leaves to a powder.
- Combine all the ingredients and store in an airtight jar.
- Note: While you can use pre-ground spices, the flavor is really better if you grind whole cloves, nutmeg, etc.

CURRY COLESLAW
A little "zing" to the all-known coleslaw. Eventhough there are just the two of us, I make the whole recipe. It keeps well in the fridge.

- In a large bowl, mix cabbage, onions and peas.
- In a separate bowl, mix sour cream, mayonnaise, vinegar, curry powder, ginger, and cayenne pepper.
- Toss with the slaw to coat.
- Cover and refrigerate.

BRUNEI CURRY SPICE MIX (REMPAH)
Rempah, a common curry blend in Brunei, will infuse your meal with the most haunting flavors of garlic, ginger, lemongrass, spicy chili powder and golden turmeric. The entire kitchen smells like paradise when you cook with Rempah. You can eat Rempah in any curry - vegetarian, chicken, fish, meat. Steps:
- Add all ingredients to a small food processor. Process till almost smooth.
- There'll be some small pieces but don't worry, you'll cook everything soft when you use it to make a curry or whatever you're making. You just need a little oil and a hot pan.
- You can add in some coconut milk to make it richer, thin out with water if you need to. Add veggies and if you wish meat or fish and you have a flavorful dish!
