LINGUINE WITH CREAMY MUSHROOM SAUCE

Linguine with Creamy Mushroom Sauce image

This easy pasta recipe is an excuse to buy wild mushrooms, available at many grocery stores these days. Or if you prefer white buttons, those will work well too. The creamy linguine is ready in 40 minutes, so it's quick enough for an easy weeknight recipe but it feels fancy enough for entertaining.

Provided by Carolyn Malcoun

Categories     Healthy Linguine Recipes

Time 40m

Number Of Ingredients 13

8 ounces whole-wheat linguine pasta
2 tablespoons extra-virgin olive oil
6 cloves garlic, sliced
1 ½ pounds mixed mushrooms, sliced
1 cup diced shallots
1 tablespoon chopped fresh thyme
1 cup dry white wine
½ cup sour cream or crème fraîche
¼ cup grated Parmesan cheese plus more for garnish
1 tablespoon butter
½ teaspoon salt
¼ teaspoon ground pepper
Finely chopped fresh parsley for garnish

Steps:

  • Bring a large pot of water to a boil over high heat. Cook pasta according to package directions. Reserve 1/2 cup of the pasta water, then drain the pasta.
  • Meanwhile, heat oil and garlic in a large skillet over medium heat until fragrant, about 2 minutes. Add mushrooms, shallots and thyme and increase heat to high. Cook, stirring occasionally, until the liquid the mushrooms release has evaporated and the mushrooms are starting to brown, 11 to 13 minutes.
  • Add wine to the pan and cook until it is reduced by about half, about 3 minutes. Stir in the reserved pasta water, sour cream (or crème fraîche), Parmesan, butter, salt and pepper. Add the pasta and toss to coat. Serve topped with more Parmesan and parsley, if desired.

PASTA WITH WALNUT SAUCE

Pasta with Walnut Sauce image

Provided by Nigella Lawson : Food Network

Categories     main-dish

Time 20m

Yield 8 to 10 servings

Number Of Ingredients 9

6 ounces shelled walnuts
1/2 clove garlic, minced
1 slice bread, crusts removed
2/3 cup whole milk
1 ounce grated Parmesan, plus more for garnish
3 to 4 tablespoons olive oil (preferably Ligurian)
Salt and pepper
2 pounds any flat short pasta
1/2 cup chopped Italian parsley, for garnish

Steps:

  • Put a large saucepan of water on to boil, and toast the walnuts in a dry frying pan until they begin to make a nutty aroma. Put the bread in a bowl and cover with the milk. Put most of the toasted walnuts (reserving about 1 ounce for garnish) into a blender along with the garlic, bread soaked in milk, and Parmesan. Blend until it turns smooth and creamy, then pour in the oil and season well with salt and pepper before blending again.
  • Pour into a bowl, and set aside.
  • Add pasta to boiling water with salt and cook for the required amount of time. When pasta is al dente, reserve a cup of the pasta cooking liquid and then drain the pasta, but put it in to a large bowl while it's still dripping slightly with water. Sprinkle a little olive oil over the pasta to prevent it sticking together, and then add the walnut sauce, mixing it into the pasta (splash in a little pasta cooking liquid to make the sauce less thick if needed).
  • Roughly chop the remaining walnuts and toss them over the top along with some more Parmesan and the chopped parsley.

LINGUINE WITH CREAMY NUT SAUCE

Linguine with Creamy Nut Sauce image

Number Of Ingredients 9

1/2 cup walnuts
2 tablespoons pine nuts
4 tablespoons unsalted butter
1 clove small garlic, very finely chopped
1 tablespoon chopped fresh flat-leaf parsley
1/4 cup whole or part-skim ricotta cheese, mascarpone, or heavy cream
salt
1 pound linguini noodle
1/2 cup freshly grated Parmigiano-Reggiano

Steps:

  • 1 Place the walnuts and pine nuts in a food processor or blender. Grind the nuts just until fine. (Don't overprocess into a paste.) 2 In a medium skillet, melt the butter over medium heat. Add the garlic and parsley and cook 1 minute. Stir in the ground nuts and ricotta. Stir to blend and heat through. 3 Meanwhile, bring about 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta, gently pushing it down until the pasta is completely covered with water. Stir well. Cook, stirring often, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta. 4 In a large heated serving bowl, toss the pasta with the sauce and grated cheese. Add a little of the cooking water if the pasta seems dry. Serve immediately. LINGUINE WITH GARLIC SAUCE

Linguine With Garlic Sauce image

Linguine with bacon, spinach and pine nuts in a creamy garlic sauce. This recipe is from Taste of Home. The only change I would make is to cut back on the amount of cream cheese, to me, it almost overpowered the garlic flavor. I will make it again though, very good!
