LIGHTER MEATLOAF
I can't remember where I got this because I just have it saved in my Weight Watchers database now, but I've made it many times including for company and it's always a hit. I love that it mostly uses turkey but is still really moist and doesn't taste "light" at all. My husband loves it too! If you follow Weight Watchers it's 4 points for a serving (1/6 of the recipe). I usually serve it with sweet potatoes or steamed veggies.

Steps:
- Preheat oven to 350°F; spray loaf pan with cooking spray.
- Combine beef, turkey, onion, and oats in a large bowl, set aside.
- Mix together tomato sauce, Worcestershire sauce, hot pepper sauce, egg whites, salt, and pepper. Add to meat mixture and mix well with hands.
- Press into pan and bake for 60-70 minutes. (Note: add an extra egg white if meatloaf does not hold together properly).

Steps:
- Coat a medium skillet with nonstick spray. Heat to medium.
- Add the onion, carrot, green pepper and mushrooms. Cook for 5 minutes or until tender. Remove from heat and set aside.
- In a large bowl stir together the egg whites, crushed crackers, milk, 2 tablespoons of the chili sauce, Italian seasoning, and black pepper. Add the cooked vegetables and ground beef; mix well with hands.
- Firmly pat the mixture into a 7.5 x 3.5 x 2 inch loaf pan. Invert the loaf pan into a shallow baking dish.
- Bake at 350°F for 30 minutes.
- In a small bowl, combine remaining chili sauce, brown sugar, vinegar, and hot sauce. Spoon over meatloaf.
- Bake for 15-20 minutes more, or until internal temperature reaches 160°F.
- Let stand for 10 minutes.
- Cut into 6 equal slices and serve.

- Preheat oven to 350 degrees.
- Mix all ingredients in a large bowl until combined well.
- Spray a 9x5 loaf pan with non-cooking spray.
- Place ground turkey mixture into laof pan and shape.
- Bake at 350 degrees for 1 hour and 10 minutes or until no loger pink in the middle.
