This fig bread can either be made in a bundt pan or as a loaf or miniature loaves. It is a very versatile recipe so please feel free to experiment by tossing in any other types of nuts or fruits (i.e. dates, raisins, and/or walnuts) to spice it up to your liking. What makes this a "Southern" recipe are the spices that are used. Figs are indigenous to this area (Louisiana) but dried figs would work just as well. If you are to use dried figs, I would definitely soak them (like you would raisins) for about an hour or more to "puff them out." Note: Dependent on the baking vessel of your choice, the cooking times will vary. Rule of thumb: Bake until a toothpick or knife is inserted into the center and comes out clean. Do not over bake or the "bread/cake" will come out dry. Also, don't forget to grease and lightly flour your baking dish so that the pastry comes out easily when removed after baking. Let the baking dish fully cool before "dumping out."

2 cups ripe figs, mashed (can substitute dried figs soaked in water 1 hour then drained)
3 eggs
2 cups Splenda sugar substitute
1/2 cup sugar
3/4 cup applesauce (or Plain non-fat Greek Yogurt)
3 cups self-rising flour (or 1 1/2 C White Flour plus 1 1/2 C Whole Wheat Flour)
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon clove
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 cup buttermilk
1 cup chopped pecans or 1 cup walnuts

Steps:

  • Grease and flour a 9 1/2 x 13 inch baking pan (or bundt pan). Preheat oven to 350 degrees.
  • Beat eggs; add sugars and beat well. Add the mashed figs and applesauce. (Be sure not to over mix).
  • Sift together flour, baking soda, salt, clove, nutmeg, cinnamon and ginger.
  • Add the flour mixture alternately with the buttermilk. Beat well.
  • Fold in the chopped pecans (walnuts) and pour into your baking pan(s). (Note: This pan or pans should be greased with vegetable oil or canola oil and lightly dusted with flour.).
  • Bake at 350 degrees or until toothpick comes out clean when inserted into the center of the bread/cake.

3 eggs
2 1/2 cups sugar (may reduce to 2 cups)
2 cups ripe figs , mashed
3/4 cup vegetable oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup buttermilk , well shaken
1 cup pecans, chopped

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F/180 C/Gas 4. Grease and flour two 9 x 5 x 3-inch loaf pans (or 3 small loaf pans).
  • In a mixing bowl with an electric mixer, beat the eggs. Add the sugar and beat well.
  • With the mixer on low speed, add the mashed figs and vegetable oil.
  • Sift together flour, baking soda, salt, and cinnamon.
  • Add the flour mixture to the first mixture alternating with the buttermilk. Beat until well blended.
  • Fold in chopped pecans.
  • Bake in the preheated oven for about 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. The center may sink slightly while cooling.

The apricot jam and chopped fig swirl make this a nice breakfast bread. Rise time is not included in cook or prep time. Both bread machine and non-bread machine options. The original recipe comes from the CA fig advisory board.

1/4 ounce fast rising yeast (1 package or 1 teaspoon)
1 tablespoon Splenda brown sugar blend
2 tablespoons Splenda sugar substitute, for baking
2 tablespoons non-fat powdered milk
1/8 teaspoon ground cardamom (optional)
1/8 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1 cup whole wheat flour
2 cups bread flour
1 teaspoon salt
1 1/2 teaspoons vegetable oil
1 teaspoon lemon juice
1/4 cup egg substitute or 1 egg
3/4 cup warm water
1/2 cup dried fig, chopped (3 ounces)
1/3-1/2 cup apricot jam

Steps:

  • Non-bread machine: In large bowl mix yeast, Splenda brown sugar, Splenda for baking or sugar, powdered milk, cardmon (if using), nutmeg, cinnamon, ginger, whole wheat flour, bread flour and salt.
  • Mix oil, lemon juice, egg substitute and warm water. Add to dry ingredients and with a dough hock on a stand mixer mix till soft ball forms.
  • Bread machine: Place all ingredints, except filling into bread machine and run on dough cycle till end of dough cycle.
  • Place dough on a floured board; cover and let rest for 10-15 minutes.
  • Roll into a rectangle that is about 1/2 inch thick.
  • Spread apricot jam over dough leaving 1/2 inch edge all the way around. Sprinkle with chopped figs. Roll up, sealing edges and placing in a greased loaf pan.
  • Let rise in a warm place, till almost doubled about 1 hour.
  • Bake at 375 F for 30 to 35 minutes.
  • Cool on rack.

Adapted from Cook Now Serve Later Cookbook, this is a good tasting bread! You can substitute apricots, raisins, dates, etc. for the figs for variation. I have also halved this recipe and baked 45 minutes in a mini loaf pan. Enjoy!

1 cup apple juice
1/4 cup unsalted butter (1/2 stick, or margarine)
1/4 teaspoon salt
1 1/2 cups dried figs, stems removed, coarsely chopped
1 3/4 cups flour (I use half whole wheat)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
2 eggs
1/3 cup sugar
1/2 teaspoon vanilla
1 teaspoon grated lemon rind (or orange rind)

Steps:

  • In a small saucepan, heat the apple juice over moderately high heat just until boiling, about 3 minutes. Remove from heat, add butter, and stir until melted. Stir in the salt and figs. Cool to room temperature.
  • Preheat the oven to 350*F. In a large bowl, stir together the flour, baking powder, and baking soda. In a medium bowl, beat eggs, sugar, and vanilla until well incorporated. Stir in fig mixture and lemon rind. Add all to the dry inigredients and stir until just moistened. Do not overmix.
  • Spoon the batter into a greased 8"x4"x2" loaf pan. Bake for about 1 hour or until a toothpick inserted in the center comes out clean. Let it cool upright in the pan on a wire rack for at least 10 minutes. Remove and let cool completely.
  • Makes 1 loaf.

This time of year meatloaf is such a comfort food and so easy to make. My recipe can be made the traditional loaf way or the Bundt pan way (which I prefer). Why? Baking your meatloaf in a Bundt pan allows for a more even glaze & browning on the outside and it's easier to serve. We had this recipe last week with mashed potatoes and peas and it was so DELISH!

1 lb lean ground beef
1 lb lean ground turkey
1 medium onion, chopped
3/4 cup breadcrumbs or 3/4 cup gf breadcrumbs
1/2 cup 2% low-fat milk
2 teaspoons minced garlic
1 cup ketchup
1 tablespoon Worcestershire sauce
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup light brown sugar

Steps:

  • preheat oven to 375°. Coat a 10" Bundt pan with nonstick cooking spray. Chop your onion. Prep your backing sheet with foil.
  • in a large bowl, combine beef, turkey, onion, garlic, bread crumbs/panko, milk, ½ cup ketchup, Worcestershire, eggs, salt and pepper; mix very well. Place in the prepared Bundt pan and bake for 40 minutes.
  • remove from oven, drain off the excess juices and flip the meatloaf upside down onto a foil lined baking sheet. Important. Why? The high sides of a Bundt pan makes it hard for the meatloaf to brown properly and get crispy. How? Cover the Bundt pan with the cookie sheet upside down on top of it so the foil side is facing inwards. With oven mitts grab the top and bottom of both pans carefully and flip it over.
  • mix ½ cup ketchup with ¼ cup brown sugar. Brush the meatloaf with sauce and bake for another 20 minutes.
  • remove and let sit for 5 minutes; transfer to serving platter.
