Texas chili uses light and dark chili powder. It took some searching but I found what amounts to a light chili powder - or lighter. Use this to balance out your actual chili powder

5-INGREDIENT CHILI POWDER
Gotta love chili powder. This recipe is pretty free form, but to alter the taste alter the paprika or the cayenne. To make this even better (if you can get them) grind dried ancho peppers into a powder and use them in place of the cayenne.

Steps:
- Place cumin seeds into a small nonstick pan over medium-high heat. Toast the seeds, moving the pan around constantly. This will take approx 3 to 4 minutes, you will smell the seeds toasting. make sure not to burn the seeds. Remove from heat and allow to cool completely.
- Place all ingredients into a coffee grinder or a blender and pulse until all ingredients are a fine powder.
- Store in an airtight container for up to 3 months.

- In a large, heavy-bottomed saucepan, heat oil over medium-high. Add onion and garlic, and season with salt and pepper. Cook until softened, 3 to 5 minutes.
- Add tomato paste, chili powder, and cocoa powder. Cook, stirring, until mixture is fragrant, about 1 minute. Add beef, and cook, breaking up with a spoon, until no longer pink, 3 to 5 minutes.
- Add tomatoes (with their juice) and beans. Bring to a boil over high; reduce to a simmer, and cook until chili is slightly thickened, 10 to 15 minutes. Serve with toppings, if desired.

- Add the dried guajillos, anchos and cayenne peppers to a hot pan and dry toast them a couple minutes per side, until they just start to puff up and darken in color. You will just able to start to smell them. This helps release their natural oils.
- Add the dried pods to a food processor and process them until a powder forms. You may have some coarse chunks that you can either leave in or strain out.
