VIETNAMESE NOODLES WITH LEMONGRASS CHICKEN
Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

Steps:
- Combine Chicken and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4)
- Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking).
- Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total.
- Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces.
- Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside for at least 20 minutes.
- Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together.
- Individual servings: Place noodles in bowl. Top with vegetables and herbs, and sliced chicken pieces. Drizzle with a few tablespoons of Nuoc Cham Sauce (be generous, ~ 4 tbsp per serving) and serve with lime wedges.
- DIY (my preferred way): Place chicken, vegetables, herbs, noodles and sauce in separate bowls / piled on platters. Then let everyone make their own bowls!

- For the dipping sauce: Combine the ingredients in a medium bowl and mix well. Cover with plastic wrap and set aside.
- For the summer rolls:.
- Add the lemon grass, oil and salt to a resealable stoarge bag.
- Add the chicken, seal the bag and turn the chicken to coat evenly.
- Marinate in the refrigerator for 1 to 4 hours.
- Bring a small pot of lightly salted water to a boil over medium-high heat.
- Add the snow peas and cook for 1 minute.
- Transfer with a slotted spoon to a ice-water bath to halt their cooking.
- Drain, pat dry and slice snowpeas lengthwise into 3 or 4 strips each. Set aside.
- Add oil to coat the fry pan.
- Discard of marinade.
- Add chicken to fry pan and cook until cutlets turn brown and chicken is cooked through.
- Wait for cutlets to cool and then slice into long thin strips roughly 2cm thick.
- To assemble:.
- Soak rice paper wrappers in warm to hot water untill soft.
- Lightly pat dry.
- Place 2 or 3 chicken strips down the center of the wrapper, leaving a 3cm margin at each end of the wrapper.
- Next add a layer of snow peas, lettuce, capsicum, carrot, and finally a light sprinkling of cashew nuts.
- Pull one side of the rice paper tightly over the filling, folding over the two ends to form something that looks like an envelope, and then roll over the remaining portion of wrapper to form the roll. If desired, cut in half diagonally.
- Repeat with the remaining wrappers and fillings.
- Serve with Dipping Sauce.

A classic favourite, these crisp-fried snacks are one of China's greatest culinary exports. Serve with chili dipping sauce.

Steps:
- Using a sharp knife, dice the chicken into 1/4in pieces. Heat the groundnut oil in a wok over a high heat and stir-fry the chicken for 2-3 minutes, stirring all the time.
- Season with soy sauce and sprinkle with five spice powder before taking the chicken out of the wok and leaving on one side to cool.
- In a large bowl, mix the mushrooms, garlic, ginger, beansprouts, scallions, and sliced carrot. Add the cooled chicken and stir well to combine everything together.
- Place two spring roll wrappers on top of each other, and spoon two tablespoons of the chicken filling in the centre of the layered sheet.
- Mix the cornstarch with the water and use to brush over the wrapper edges - this helps stop the spring rolls from bursting open while frying. Fold each of the opposite corners in, over the filling, and roll the wrapper into a cigar shape.
- Deep fry the spring rolls in hot oil, over a medium heat, until golden brown - about 3-5 minutes. Drain on absorbent paper before serving with sweet chilli sauce.

VEGETABLE RICE PAPER ROLLS
These rolls are very delicious, easy to make and low fat. Fab as a starter, and people are always very impressed. They can be served cold, but I prefer to perpare them in advance, leave them in the fridge covered with a wet tea towel and then steam them for two minutes just before serving. I like to serve them with a sweet chili sauce and vietnamese coleslaw (I shall post this recipe also).

Steps:
- Firstly, mix the rice vinegar, water, caster sugar, salt and garlic in a large bowl and leave to sit.
- Soak the rice vermicelli in boiling water for about 10 minutes, until it is no longer hard (but not soggy!).
- Add the noodles, cabbage, carrot, coriander and spring onions to the dressing and mix well.
- Now set up your production line- get a flat bowl and fill it with hot water. Take a rice paper sheet and soak it in the water until it's soft- about 15 seconds.
- remove it from the water and place on a clean tea towel. Spoon some of the mixture onto the rice paper.
- Fold in the bottom first, then the sides, and roll to form a cigar shape.
- Continue the same with the rest of the rolls.
- These can be prepared well in advance and stored in the fridge under a wet tea towel- see the recipe description above for serving suggestions.

- Mix chicken, fish sauce, and honey together in a bowl; cover with plastic wrap and refrigerate for at least 30 minutes.
- Heat a wok or large skillet over medium-high heat; swirl in oil. Add red bell peppers, lemongrass, ginger, and garlic; cook until red bell pepper strips tender, about 5 minutes. Add chicken mixture; saute until chicken is no longer pink and the juices run clear, about 5 minutes.

Steps:
- Heat oil and fry onion with garlic for 1 minute. Add chicken, black pepper, lemon grass, fish sauce, sugar, curry and chili and stir fry for 4 minutes.

- Add water and continue to stir fry an additional 8 to 10 minutes, or until chicken is just about cooked through.
- Remove smashed Lemongrass.

- Garnish with sprinkled chopped nuts and the freshly chopped cilantro.
