HEALTHY GRANOLA
This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Steps:
- Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
- Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
- Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
- Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

- Preheat the oven to 300º. Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats and nuts. In a measuring cup, whisk together the coconut oil, maple syrup, vanilla extract, cocoa powder, and sea salt. Pour over the granola mixture and stir until all of the dry ingredients are coated. Spread the granola in an even layer on a parchment-lined baking sheet and press down with a spatula or your hands.
- Bake for 30 to 45 minutes, rotating the pan halfway through to help the granola bake evenly. When it is browned and feels dry to the touch, remove it from the oven and sprinkle with chocolate chips. Let sit for about 2 minutes until chocolate chips have melted, and gently stir in the chocolate chips to coat the granola. If desired, sprinkle a bit of flaky sea salt on top. Let the granola cool completely.
- Store at room temperature in an airtight container.
CRUNCHY AND DELICIOUS GRANOLA
After searching for a healthier granola recipe, I tweaked a few to lessen the sugar. I use seeds instead of nuts due to allergies. Still very crunchy, delicious, and satisfying! Change the dried fruit to fit your tastes (blueberries, cherries, cranberries, apricots, etc.).

- Preheat the oven to 325 degrees F (165 degrees C).
- Line 2 baking sheets with parchment paper.
- Combine oatmeal, sunflower seeds, pumpkin seeds, sesame seeds, flax seeds, wheat germ, chopped dried cherries, salt, and cinnamon in a large bowl.
- Mix applesauce, maple syrup, and vanilla in a separate bowl.
- Pour applesauce mixture over the oatmeal mixture; mix until evenly coated.
- Spread the mixture onto the prepared baking sheets; smooth into a single thin layer.
- Bake in preheated oven 20 minutes, stir gently to turn, and continue cooking until crisp and golden brown, another 15 to 20 minutes.

Steps:
- Preheat oven to 350.
- Put oats in a microwaveable bowl and cook for two minutes, stirring after one. (This warms the oats helping to melt all the ingredients together).
- Add remaining ingredients, except the dried fruit, and stir until very well blended.
- Pour mixture into two large oven safe dishes and bake for 20 minutes, stirring every five.
- Add dried fruit.
- Spread on wax paper to cool.

- In your biggest mixing bowl, mix together; oats, almonds, walnuts and coconut.
- In a small bowl mix together: 1/2 C honey, 1 C applesauce, 2 Tbsp vanilla, 1/2 C brown sugar, 1/2 tsp cinnamon, 2 Tbsp vegetable oil.
- Pour the applesauce mixture over the oat mixture and combine thoroughly. Use your hands (preferred) or a spoon and mix until thoroughly combined.
- Spread the mixture over two baking sheets and bake at 250 F for about 1 hour 20 minutes.
- If the baking sheet is light it will take about 1 hour 20 minutes, if it's dark/non-stick it will take about 1 hour (these are {abouts} it will depend on your oven, you want the granola to have turned a lovely golden brown. It will get crispy after it's removed from the oven and allowed to cool.
- stir the granola every 20 minutes.
- remove from the heat and allow to cool, this is when it will crisp up.
- add in dried fruit: cranberries, raisins, cherries, apples etc....
- this recipe will yield 1 gallon sized storage bag.
