Number Of Ingredients 7

1 can (12 ounces) evaporated milk
1 package (3 ounces) lemon gelatin
1 cup sugar
1-1/3 cups boiling water
1/4 cup lemon juice
1-3/4 cups graham cracker crumbs
5 tablespoons butter, melted

Steps:

  • Pour milk into a small metal bowl; place mixer beaters in the bowl. Cover and refrigerate for at least 2 hours. , Meanwhile, in a large bowl, dissolve gelatin and sugar in boiling water. Stir in lemon juice. Cover and refrigerate until syrupy, about 1-1/2 hours. , In a small bowl, combine crumbs and butter; set aside 2 tablespoons for garnish. Press remaining crumbs onto the bottom of a 13-in. x 9-in. dish. Beat chilled milk until soft peaks form. Beat gelatin until tiny bubbles form. Fold milk into gelatin. Pour over prepared crust. Sprinkle with reserved crumbs. Cover and refrigerate until set. Cut into squares.

1/2 to 3/4 cup superfine sugar, to taste
1 cup crushed ice
4 cups water

1 package (.3 ounce) sugar-free lemon gelatin

1 package (8 ounces) reduced-fat cream cheese
3/4 cup sugar
1 teaspoon vanilla extract

Steps:

  • Pour milk into a large metal bowl; place mixer beaters in the bowl. Cover and refrigerate for at least 2 hours., In a small bowl, combine graham cracker crumbs and butter; set aside 1 tablespoon for topping. Press remaining crumb mixture into a 13-in. x 9-in. baking dish. Chill until set., Meanwhile, in a small bowl, dissolve gelatin in boiling water. Stir in lemon juice; cool., In another bowl, beat the cream cheese, sugar and vanilla until smooth. Add gelatin mixture and mix well. Beat evaporated milk until soft peaks form; fold into cream cheese mixture. Pour over crust. Sprinkle with reserved crumbs. Refrigerate for at least 2 hours before serving. Refrigerate leftovers.

2 (3 ounce) envelopes unflavored gelatin
1 cup cold water
1/2 cup sugar
3/4 cup frozen pink lemonade concentrate
red food coloring (optional)
4 cups angel food cake, cubes

Steps:

  • Pour milk into a samll metal mixing bowl; place mixer beaters in the bowl.
  • Cover and chill at least 2 hours.
  • In a sauce pan, sprinkle gelatin over cold water; let stand for 2 minutes.
  • Stir in sugar; heat until sugar and gelatin are dissolved. Remove from the heat; stir in lemonade concentrate and food coloring if desired.
  • Cover and chill until slightly thickened.
  • Gradually add to chilled milk; beat until light and fluffy.
  • Fold in cake.
  • Pour into an 8-in. x 4-in. x 2-in. loaf pan coated with nonstick cooking spray.
  • Cover and chill for at least 2 hours.
  • Remove from pan; cut into eight slices.

1/8 teaspoon lemon extract
1 cup whipped topping

Steps:

  • Prepare cake batter according to package directions, adding lemon zest and extract. Bake according to package directions. After baking, immediately invert pan and cool completely. 1 ½ cups lemon juice

Steps:

  • In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
  • Remove seeds from lemon juice, but leave pulp. In pitcher, stir together chilled syrup, lemon juice and remaining 7 cups water.
