- Using a fine grater or zester, grate the peel of half a lemon right over the bowl.
- Measure out oil (or melted butter/melted vegan butter/melted coconut oil), milk, and 1 tablespoon lemon juice; pour into dry ingredients.
- Stir until all mixed together.
- Pour the batter into a sprayed microwave-safe mug or ramekin.
- Microwave on high for 1 minute; if not fully cooked, add 15 second increments until a toothpick comes out clean.
- Top with ice cream, whipped cream, coconut whipped cream, or just get a fork and dig in!

- Combine melted butter and sugar in a coffee mug. Stir to combine.
- Add the milk and 2 tablespoons of lemon juice to the mug ingredients, and stir.
- Add the flour, baking soda, and salt to the wet ingredients, and stir until incorporated. Stir in the lemon zest.
- Place the mug into the microwave and heat for 75 seconds, until set and no longer wet in the middle. Check the cake at 60 seconds as microwave cooking times vary.
- Prepare the glaze by whisking together the confectioners sugar and remaining ½ teaspoon of lemon juice. Adjust sugar and lemon juice as needed to reach desired consistency. Drizzle the glaze on top of the mug cake.
- Serve the cake in the mug or turn out onto a plate.

- Heat oven to 325°F. Generously spray bottom only of 9x5-inch loaf pan with baking spray with flour.
- In medium bowl, beat cake mix, cream cheese, water, grated lemon peel and eggs with electric mixer on low speed 1 minute, scraping bowl frequently, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
- Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan to cooling rack or heatproof serving plate. Cool completely, about 1 hour.
- In small microwavable bowl, microwave frosting uncovered on High 10 to 15 seconds or until frosting is thin enough to drizzle; stir. Spoon frosting evenly over cake, allowing frosting to drip down sides.
