Easy all-star whole roasted Spanish Mackerel Recipe. Prepared Mediterranean-style with a stuffing of garlic, fresh herbs and lemons. Roasted in foil!

3 large garlic cloves
1 tsp salt, more for later
1 tsp ground coriander
1/2 tsp ground cumin
1/4 cup finely chopped fresh parsley
1/4 cup finely chopped fresh dill
1 1/2 lb whole Spanish Mackerel, cleaned and gutted (but with head)
1 lemon, thinly sliced
Early Harvest extra virgin olive oil
2-3 tbsp fresh lemon juice
3-Ingredient Mediterranean salad recipe, or Fattoush salad recipe, Mediterranean Potato Salad or simple sliced garden veggies, salted and drizzled with olive oil
Tahini sauce
1 Lebanese rice recipe

Steps:

  • Preheat the oven to 350 degrees F and set a roasting sheet pan inside to warm.
  • Using a mortar and pestle, crush garlic with salt until smooth. Add coriander and cumin and continue crushing. Mix in parsley and dill.
  • Pat the fish dry, inside and out. Remove the dark vein that runs along the back of the cavity, if it's still there. And if needed, run your knife along the cavity to open it up some more. Salt generously inside and on both sides outside, then place on a lightly oiled piece of foil that is large enough to enclose the fish.
  • Stuff the fish cavity with lemon slices and the garlic and herb mixture you just prepared. Drizzle generously with olive oil.
  • Fold the foil over the fish lengthwise, tightly closing the top seam to trap the steam. Place the foiled fish on top of the hot sheet pan and bake in the 350 degrees F heated-oven for 30-40 minutes, depending on the thickness of the fish.
  • Remove from heat and add the lemon juice. Serve immediately with suggested sides and salads (see ingredient list).

GRILLED MACKEREL WITH TOASTED GARLIC BUTTER

2 medium mackerel, filleted, skin on
5 garlic cloves, smashed
4 ounces butter
Salt
Pepper
1 or 2 limes

Steps:

  • Preheat an outdoor grill to medium heat and oil the grates with a brush or towel.
  • In a small saucepan, melt the butter and add the smashed garlic.
  • Make 3 deep cuts on each side of the fish. Season fillets generously with salt and pepper. Place flesh side-down and cook for 2 to 3 minutes. Flip fish over and cook for an additional 2 to 3 minutes. Remove from grill and brush with some of the garlic butter (about 2 tablespoons).
  • Squeeze 1/2 of a lime over each fillet and serve immediately.

GARLIC AND LEMON OIL

2 cups extra virgin olive oil
2 lemons
2 pinches of red pepper flakes
1/2 teaspoon kosher salt

Steps:

  • Place the garlic in a small saucepan with the olive oil and bring to a boil. Lower the heat and simmer for 10 minutes.
  • With a vegetable peeler, cut large strips of zest from each lemon and add it to the garlic oil.
  • Add the red pepper flakes and salt and allow the oil to sit at room temperature until the flavors are infused. Store the oil in the refrigerator.

1/2 cup freshly squeezed lemon juice
2 tablespoons minced lemongrass
2 tablespoons minced garlic
1 tablespoon, ginger, minced
1 jalapeno chile, finely diced
1 small onion, finely diced
2 tablespoons cilantro, chopped
1/4 cup coconut milk
1/4 cup canola oil
Salt
Pepper
4 mackerel fillets, skin on

Steps:

  • In a bowl, combine the lemon juice, lemongrass, garlic, ginger, jalapeno, onion, cilantro and coconut milk. Mix well and season with salt and pepper. This mix can be made ahead of time and brought in a resealable plastic bag. Season the mackerel with salt and pepper. Place the mackerel into the marinade and marinate for 15 minutes. Remove the fish from the marinade and place on the grill, skin side up. Grill for 4 minutes per side, basting often with the marinade.

3 tbsp olive oil , plus extra for drizzling
1 bunch spring onion , sliced
1 large garlic clove , crushed
zest 1 lemon and squeeze of juice
2 x 400g can chickpeas , drained and rinsed
150ml vegetable stock
85g SunBlush tomato , halved
4 mackerel fillets, skin on
1 large bunch basil

Steps:

  • Heat 2 tbsp oil in a large, shallow pan. Add the spring onions, garlic and lemon zest, then cook for 2 mins until the onions are tender but still very green. Add the chickpeas, then stir until well coated in the onion mixture. Lightly crush with a potato masher, then add the stock and tomatoes. Simmer for 3-4 mins or until the liquid is absorbed, then set aside to cool slightly.
  • Meanwhile, heat the remaining oil in a large, non-stick frying pan over a medium heat. Season the mackerel fillets on both sides and fry for 3 mins each side, starting on the skin side. You'll probably need to cook these in two batches.
  • Add the basil and a squeeze of lemon juice to the chickpeas, then season to taste. To serve, spoon the warm chickpeas onto serving plates, drizzle with a little extra olive oil and top with the mackerel fillets.

1/2 teaspoon finely grated fresh lemon zest
1 1/2 tablespoons fresh lemon juice
1/3 cup extra-virgin olive oil
1/4 cup pitted Kalamata olives (1 1/4 oz), cut into slivers
3 tablespoons finely chopped fresh oregano plus 6 large sprigs
1 (3 1/4- to 3 1/2-lb) cleaned whole Spanish mackerel or bluefish (with head and tail)
2 tablespoons vegetable oil
6 (1/4-inch-thick) lemon slices
Special Equipment
a 22-inch grill; kitchen string

Steps:

  • Whisk together zest, lemon juice, and salt and pepper to taste, then add olive oil in a stream, whisking until combined well. Whisk in olives and chopped oregano.
  • Make 1-inch-long slits at 2-inch intervals down middle of fish on both sides with a sharp paring knife, then brush fish all over with vegetable oil and season with salt and pepper. Season fish cavity with salt and pepper, then evenly distribute 3 lemon rounds and 3 oregano sprigs in cavity. Close cavity, then evenly arrange remaining 3 lemon rounds and 3 oregano sprigs on top of fish and tie fish closed with string at 2-inch intervals, securing lemon slices and oregano sprigs to fish.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderate.
  • Grill fish on lightly oiled grill rack, covered only if using gas grill, 15 minutes. Turn fish over using a metal spatula and tongs, then grill until just cooked through, about 15 minutes more.
  • Transfer fish to a large platter using 2 metal spatulas, then cut and discard string. Serve fish with sauce.

ROASTED MACKEREL WITH GARLIC AND PAPRIKA

2 garlic cloves, peeled
2 tsp paprika
1 tsp sea salt, plus more to taste
Olive oil
8 mackerel fillets, skin on
1 pound new potatoes
2-3 scallions, trimmed and thinly sliced
For the vinaigrette
Pinch of saffron
1 Tbsp white wine vinegar
1 tsp Dijon mustard
1/4 cup extra virgin olive oil
Sea salt and freshly ground black pepper

Steps:

  • 1. Preheat the oven to 400°F.
  • 2. Put the garlic and paprika into a mortar, add the salt, and pound to a smooth paste. Add a few drops of olive oil, then rub the flesh side of the mackerel fillets with the paste and set aside.
  • 3. Make the vinaigrette. Put all the ingredients into a small bowl and whisk together with a fork. Season with salt and pepper to taste.
  • 4. Line a baking sheet with parchment paper and brush lightly with olive oil. Lay the mackerel fillets skin side up on the paper and season the skin with sea salt. Roast for 8-10 minutes until the skin is crisp and the fish is cooked through. Remove from the oven and leave to rest.
  • 5. Meanwhile, boil the potatoes in a large pan of salted water for about 15 minutes until tender, then drain. Return to the pan with 1 tablespoon of olive oil. Crush lightly with the back of a fork, then add the scallions and stir to combine. Season with salt, then add a couple of tablespoons of the vinaigrette.
  • 6. Serve the crushed potatoes topped with the mackerel and a drizzle of the remaining vinaigrette.

LEMON, CHILE & GARLIC PAN-FRIED MACKEREL WITH QUICK BUTTER BEAN STEW



Lemon, Chile & Garlic Pan-Fried Mackerel with Quick Butter Bean Stew image

1 tablespoon olive oil
2 whole mackerel, filleted
Knob unsalted butter
1 red chile, chopped finely
2 garlic cloves, crushed
Parsley
One 400-gram (14-ounce) can butter beans, drained and rinsed
150 grams (5 ounces) baby spinach
Finely grated zest of 1 lemon, plus a squeeze of juice
75 milliliters (1/3 cup) vegetable stock
Small handful of flat-leaf parsley
Sea salt and freshly ground black pepper

Steps:

  • Ensure you have a large frying pan over a medium-high heat. Heat the oil in a large frying pan. Season the fish fillets with salt and pepper and score the skin a couple of times. Add to the pan skin-side down and fry for 1 to 2 minutes until golden and crisp. Once you have placed the mackerel into the pan add the butter, garlic and parsley to the pan. Turn the fish, tossing the garlic. Carefully turn the fish over, and cook for another 30 seconds, transfer to a plate and keep warm.
  • Tip in the butter beans, spinach and lemon zest. Add the stock and cook for a minute to wilt the spinach. Season well. Chop the parsley and set aside.
  • Serve the spinach and butter beans in the base of a shallow bowl and top with the crispy mackerel fillets along with the parsley and a squeeze of lemon juice.
