2 carrots, sliced 1/4-inch thick
1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon lemon juice
1 pinch salt and ground black pepper to taste

Steps:

  • Place carrots into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until carrots are tender, about 8 minutes. Drain.
  • Heat butter in a skillet over medium heat; cook and stir carrots, brown sugar, and lemon juice in the melted butter, stirring often, until sugar has dissolved, 2 minutes.

1-1/2 cups sliced carrots
1 tablespoon butter
1 tablespoon lemon juice
1/2 teaspoon garlic salt, optional
1/2 teaspoon dried basil
Dash pepper

Steps:

  • Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until crisp-tender. Drain. In the same pan, melt butter; stir in lemon juice, garlic salt if desired, basil and pepper. Return carrots to the pan and heat through

1 cup mayonnaise
1/4 cup fresh basil leaves
1 lemon, zested and juiced
1/2 clove garlic, finely grated
Kosher salt
Nonstick cooking spray, for the wire rack and carrots
1 1/2 cups panko breadcrumbs
1 cup grated Parmesan
1 tablespoon dried parsley
1/8 teaspoon cayenne
Kosher salt
1 tablespoon milk
3 large eggs
4 medium carrots, cut into thin 3-inch batons
2 tablespoons all-purpose flour

Steps:

  • For the aioli: Combine the mayonnaise, basil, lemon zest and juice and garlic in a blender and blend until almost smooth. Season with salt. Transfer to a bowl and refrigerate until ready to serve.
  • For the carrot fries: Preheat the oven to 425 degrees F. Fit a large baking pan with a wire rack and spray the rack with cooking spray.
  • Mix together the panko, Parmesan, parsley, cayenne and 1/2 teaspoon salt in a wide shallow bowl. Whisk the milk and eggs together in another shallow bowl.
  • Toss the carrots with the flour. Working with a few carrots at a time, shake off the excess flour, then dip them in the egg. Let the excess egg drip off, then toss them in the panko mixture, patting them so the crumbs adhere. Arrange them on the wire rack in a single layer.
  • Spray the coated carrots thoroughly with cooking spray, then bake until golden brown and crisp-tender, 10 to 15 minutes.
  • Serve the carrot fries with the aioli for dipping.

2 ½ tablespoons honey
1 tablespoon lemon juice
⅛ teaspoon ground ginger

Steps:

  • Bring carrots and enough water to cover to a boil in a saucepan; reduce heat to medium-high and continue to simmer until carrots are tender, about 10 minutes. Drain and set aside.
  • Melt butter in a large skillet over low heat; stir in honey. Add lemon juice and ginger. Increase heat to medium and stir in carrots until well coated. Continue cooking until thickened, about 5 minutes more.

5 tablespoons fresh lemon juice
4 tablespoons olive oil
4 garlic cloves, finely minced
1 teaspoon lemon zest, grated
2 tablespoons sun-dried tomatoes packed in oil
1/4 cup fresh basil, minced
4 teaspoons capers, drained
salt & freshly ground black pepper, to taste
1 lb halibut fillet

Steps:

  • Mix lemon juice, olive oil, garlic, lemon peel and sun-dried tomatoes in blender or food processor.
  • Stir in 2 tbsp fresh basil and the capers.
  • Season to taste with salt and pepper.
  • Pour half of vinaigrette over fish and marinate 15 to 30 minutes.
  • When ready to grill fish, remove from marinade.
  • Discard that marinade.
  • Prepare the grill and spray with oil to keep fish from sticking.
  • Grill fish until just cooked through 2 to 4 minutes per side.
  • Divide fish among 4 plates.
  • Stir remaining vinaigrette and drizzle over fish.

1 cup water
2 tablespoons balsamic vinegar
2 teaspoons honey
1 teaspoon olive oil
1/2 teaspoon spicy brown mustard
1 teaspoon dried basil
1/8 teaspoon ground pepper

Steps:

  • Peel the carrots and slice them. Put them in a pan with the cup of water. Bring to a boil. Cover and reduce heat. Simmer for about 10 minutes or until soft (but not mushy). Drain and return to the pan.
  • While the carrots are cooking combine the other ingredients in a small bowl. Mix well to combine.
  • When the carrots are drained add the vinegar mixture and return to the heat. Stir frequently for 2 minutes.
