1/2 cup dry bread crumbs
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon lemon-pepper seasoning
1/2 cup all-purpose flour
1 large egg, beaten
3/4 pound cod fillets, cut into 1-inch strips
Butter-flavored cooking spray

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix bread crumbs and seasonings. Place flour and egg in separate shallow bowls. Dip fish in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere., Place on a baking sheet coated with cooking spray; spritz with butter-flavored cooking spray. Bake 10-12 minutes or until fish just begins to flake easily with a fork, turning once.

After experimenting for a while, I came up with the closest recipe in creating the best fish-sticks every-one will love, including picky eaters. Leftover or old bread will also come to good use. However, the speedy-chefs can also use store-bought breadcrumbs, if more convenient for them.

100 g all-purpose flour
100 g fine breadcrumbs
1/2 teaspoon coriander powder
1/2 teaspoon salt
6 slices bread
2 eggs
4 tilapia fillets, about 4 to 5 oz. each
salt and black pepper
3 tablespoons lemon juice

Steps:

  • Mix the first 4 ingredients in a shallow plate and set aside.
  • Cut the tilapia fillets in long sticks with a width of about 1 inch. Marinate them in the lemon juice and season with salt and pepper to taste. Store meanwhile in the fridge. Then cover your cutting board with aluminum foil.
  • Cut away the thick crusts of the bread. Then, tear the bread in coarse pieces and fill your food-processor or blender with it. Blend it to medium sized breadcrumbs.
  • Toast your fresh breadcrumbs for 1-2 minutes at 400°F This is necessary to evaporate most of the water.for a better crunchy skin. Remove and let it cool of and toss it a bit with a fork. Dispose it in another shallow plate.
  • Pour a sizable amount of cooking oil in a deep pan, and turn your stove on low heat. Break eggs and whisk in a bowl. Place your marinated fish in front of the board, the flour-mixture next to it. Then follow the eggs and ,the breadcrumbs and finally a bowl of water.
  • Now the real deal begins! Lift a piece of fish with 2 forks and drop it into the flour-mix. Wallow the fish until fully covered and shake any excess flour off. Then transfer to the beaten eggs and do the same. At last, transfer to the plate with breadcrumbs and put away the forks in the bowl of water (dirty part in water). Use your hands to tumble and lightly press around the fish until thoroughly covered in the crumbs. Move the fish-stick to the cutting-board and wipe your forks clean with a piece of paper towel. Repeat likewise for the other fish-sticks.
  • When done, turn up the heat of your stove to high. The sticks have to rest for about 15 minutes, to get the crust set (otherwise you'll end up with a disaster). So. meanwhile you could clean up the counter in advance.
  • The easiest last step: deep-fry the fish-sticks in about 5 minutes to a nice golden-brown colour. Serve with your favourite sauce!

1/4 cup low-fat mayonnaise
1/4 cup fat free sour cream
1 tablespoon creole mustard
2 teaspoons fresh lime juice
1/2 teaspoon cajun seasoning
cooking spray
1 tablespoon canola oil
1/2 cup all-purpose flour
1/4 teaspoon ground black pepper
1/2 cup lager style beer
1 1/2 tablespoons creamy mustard
1 tablespoon fresh lime juice
2 large egg whites
1 large egg
2/3 cup panko breadcrumbs
1/3 cup pumpkin seeds
1 teaspoon ground cumin
1/2 teaspoon ground chipotle chile pepper
1 lb halibut, cod or 1 lb pollack fish fillet, cut into 4x1 inch pieces
1/4 teaspoon kosher salt
4 lime wedges

Steps:

  • Combine the first 5 ingredients in a small bowl, stirring with a whisk.
  • Cover and chill.
  • Preheat oven to 425 degrees.
  • Coat a baking sheet with cooking spray, and spread evenly with oil, and heat in oven for 12 minutes.
  • In a shallow dish combine flour and black pepper.
  • In another shallow dish, combine 1/2 cup beer, mustard blend, lime juice, egg whites, and egg, and stir until foamy.
  • Place panko, pumpkinseeds, cumin, and chipotle pepper in a food processor, and pulse 20 timesor until coarse crumbs form.
  • Place panko mixture into a shallow dish.
  • Sprinkle fish evenly with salt.
  • Working one piece at a time, dredge fishin flour mixture, then dip in egg mixture and dredge in panko mixture until completely covered.
  • Remove preheated bsking sheet from oven, place fish on pan, and return to oven, Bake 425 degrees for 15 minutes or until fish flakes easily with fork, turning once.
  • Serve with sauce and lime wedges.

1 (1 lb) package frozen white fish fillet (sole, haddock, cod or Boston bluefish)
1/4 cup dry breadcrumbs
1/4 cup wheat germ
1/4 cup sesame seeds
1 teaspoon paprika
1/4 teaspoon salt
pepper
1 egg
1 tablespoon vegetable oil

Steps:

  • Remove wrapping from fish.
  • In shallow dish, thaw on medium-low in microwave 2-3 minutes or just until fish can be cut with knife.
  • Do not separate into filets.
  • Cut crosswise into 8 even sticks.
  • In shallow dish, combine breadcrumbs, wheat germ, sesame seeds, paprika, salt and pepper to taste.
  • In a bowl, beat together egg and oil.
  • Roll fish sticks in bread crumb mixture, then in egg mixture, then again in bread crumb mixture.
  • Heat browning dish at HIGH 4 minutes or according to manufacturers directions.
  • Brush dish with oil.
  • Arrange fish sticks on dish like spokes on a wheel.
  • Microwave HIGH for 1 1/2 minutes and turn fish over.
  • Microwave HIGH for 2-3 minutes or until fish is opaque and flakes easily when tested with fork.
  • Alernatively, on roasting rack, arrange fish like spokes in a wheel and microwave at HIGH 5-6 minutes or until fish is opaque and flakes easily when tested with fork. Rotate dish once during cooking.

Working with 1 piece of fish at a time, gently coat the fish first with the flour, turning to coat both sides and shaking off any excess, then dip it into the beaten egg, coating it well. Finish the fish stick by rolling it in the bread crumbs. Repeat.
  • Heat about 1/4 inch oil in a large, deep-sided skillet until hot but not smoking. Fry the fish strips in batches, turning occasionally, until golden brown on all sides and cooked through, 6 to 10 minutes, depending on the thickness of the fish. Transfer the fish sticks to paper towels to drain.
