Classic lebkuchen cookies with a lemon glaze. Prepared in advance, these traditional German Christmas cookies are gingerbread-like in flavor and have a soft and chewy texture. These cookies are a great festive treat for the holiday season! Recipe featured from Midwest Made from Shauna Sever.

¾ cup (250 g) clover honey
¾ cup (170 g) dark muscovado (or organic dark brown sugar)
4 tablespoons (57 g) unsalted butter (cut into chunks)
1 large egg (beaten)
2 teaspoons finely grated lemon zest
1 tablespoon freshly squeezed lemon juice
3 cups (384 g) unbleached all-purpose flour (fluffed, spooned, and leveled, plus more for dusting)
¾ teaspoon baking soda
½ teaspoon fine sea salt
2 teaspoons ground cinnamon
½ teaspoon ground allspice
½ teaspoon freshly grated nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cloves
oil for the bowl
1 cup (120 g) confectioner's sugar (sifted)
1 large egg white
1 tablespoon freshly squeezed lemon juice
⅛ teaspoon fine sea salt

Steps:

  • Prepare the Cookies: In a 1½ quart saucepan, combine the honey and muscovado sugar. Over medium-high heat, stir gently until the sugar begins to dissolve and the mixture just begins to come to a simmer. Remove the pan from the heat and stir in the butter. Let cool until warm to touch. Whisk in the egg and lemon zest and juice.
  • In the bowl of a stand mixer fitted with a paddle attachment, stir together the flour, baking soda, salt, and spices.
  • On low speed, stir in the wet ingredients until a smooth, sticky dough forms. Laura's Note: This will be slack and loose, don't worry! Scrape the dough into a lightly oiled ceramic bowl and cover with a plate - you want the dough to be able to breathe.
  • Allow the dough to "ripen" at cool room temperature for 1 to 2 days - do not refrigerate. (The large amount of honey and sugar will keep bacteria at bay.)
  • Position racks to the upper and lower thirds of the oven and preheat it to 350°F (180°C). Line two baking sheets with parchment paper.
  • Turn out the dough onto a well-floured work surface. Roll it out to a ¼-inch/6 mm thickness. Use a bench scraper or thin spatula to get under the dough and scoot it around in the flour occasionaly to prevent sticking. Cut shapes with 2-inch/5 cm cutters and place 1 inch/2½ cm apart on the prepared baking sheets. Sweep away any excess flour with a pastry brush.
  • Bake until fragrant and lightly browned, about 12 minutes, rotating the baking sheets from top to bottom and front to back halfway through the baking time. (Watch closely, as honey in the dough can make the edges catch and burn quickly.)
  • Prepare the Glaze: In a medium bowl, whisk together the confectioner's sugar, egg white, lemon juice, and salt for a smooth, thin, runny glaze. (Add a few drops of lemon juice, as needed, to achieve this consistency).
  • Let the cookies firm up and cool on the baking sheets for 5 minutes. Run an offset spatula under the cookies to gently looesn them from the parchment paper, leaving them on the sheets.
  • While still warm, brush the cookies with glaze and transfer to wire racks. Allow the cookies to cool and the glaze to dry completely.
  • The secret to a perfect lebkuchen texture is in the resting phase: place the cookies into airtight containers in layers, seperated by parchment or wax paper. Tuck a wedge of apple in the container before sealing. Store in a cool place for at least 3 days, or up to 2 weeks, to allow the cookies to ripen once more before serving.

1/2 cup almond meal (2 ounces; 57g)
2 3/4 cups sifted all-purpose flour (12 ounces; 320g)
2 tablespoons (14.8g) unsweetened cocoa (preferably dark)
1 1/2 teaspoons (7.5g) baking powder
1/2 teaspoon (2.5g) baking soda
2 teaspoons (4.2g) ground cinnamon
1 teaspoon (2.1g) ground powdered ginger
1/2 teaspoon (1g) ground nutmeg
1/2 teaspoon (1g) ground cloves
1/2 teaspoon (1g) ground allspice
1/4 teaspoon (0.5g) ground cardamom
1/2 teaspoon (2.8g) kosher salt
1/2 cup tightly packed chopped candied orange rind (4 ounces; 113g)
1/4 cup tightly packed chopped crystallized ginger (2 ounces; 57g)
4 tablespoons unsalted butter (1/2 stick; 57g)
3/4 cup dark brown sugar (5.3 ounces; 150g)
1 cup honey (12 ounces; 340g)
2 large eggs
1 tablespoon (15mL) pure vanilla extract
Nonstick spray, for greasing
For the Glaze:
3 cups confectioners' sugar (13 ounces; 375g)
1 tablespoon (15mL) kirsch, Grand Marnier, or rum (or pure vanilla extract)
3 to 4 tablespoons warm water (1.5 to 2 ounces; 45 to 60mL)

Steps:

  • If Making Individual Round Cookies: Chill dough until quite firm, about 4 hours. Working in 2 batches, line 2 large cookie sheets with parchment. Dip a 1 3/4-inch ice cream scoop (2 level tablespoons) into water, shake off excess water, and scoop level scoops of dough. Roll into balls and place 2 inches apart. Bake in the lower and middle thirds of the oven, shifting pans from top to bottom and front to back halfway through, until a toothpick inserted in center of cookies comes out clean, about 18 minutes. Slide parchment onto a wire rack to let cookies cool slightly while you bake the remaining cookies.

This recipe is from an OLD betty crocker cookbook and is my absolute favorite Christmas cookie. My MIL sends a batch every year and is one of my favorite things of the season. DO NOT overbake these or they will become so hard that you might need to have dental work done (lol) If the cookies are too hard she suggests placing them in an airtight container with an apple slice. I did not include chilling time in the recipe.

1/2 cup honey
1/2 cup molasses
3/4 cup brown sugar
1 egg
1 tablespoon lemon juice
1 teaspoon lemon rind, grated
2 3/4 cups flour, sifted
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon allspice
1 teaspoon nutmeg
1/3 cup citron, chopped
1/3 cup nuts, chopped
whole blanched almond
1 cup sugar
1/2 cup water
1/4 cup confectioners' sugar

Steps:

  • Mix honey and molasses and bring to a boil. Remove from heat and cool completely.
  • Stir in brown sugar, egg, lemon juice and lemon rind.
  • Sift together flour, baking soda and spices, then stir into the honey-molasses mix.
  • Mix in the citron and chopped nuts, place the dough in the refrigerator and chill overnight.
  • Roll out a small amount of dough at a time to 1/4 inch thick, keeping the rest in the fridge. You can either cut out oblong shapes about 1 1/2" x 2 1/2" or just cut out circle shapes about 2" in diameter.
  • Place on a GREASED baking sheet about 1" apart.
  • Place 3 almonds on top of each cookie in a flower shape, and place in a 400 deg oven for 10-12 min or until no imprint remains when touched lightly.
  • While cookies bake, make glaze by boiling the water and sugar to 230 degrees - until it just barely begins to thread.
  • Remove from heat and stir in confectioners sugar.
  • Brush the hot glaze lightly over the cookies (if it gets grainy reheat slightly with a little water to thin again).

Since my mother's parents came from Nuremberg and Munich, Germany, lebkuchen has been a holiday tradition in my family ever since I was little. We don't like the usual candied citrus peel, however, so I use apricots and dates instead. Great served with hot tea.

2 cups whole almonds
boiling water to cover
⅔ cup chopped dried apricots
8 Medjool dates, pitted and chopped
4 ½ cups unbleached all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons ground ginger
1 ½ teaspoons baking powder
1 teaspoon ground cloves
½ teaspoon ground cardamom
½ teaspoon salt
2 eggs
1 cup brown sugar
1 cup honey
¼ cup blackstrap molasses
1 tablespoon water
2 teaspoons almond extract
2 teaspoons grated orange zest
1 teaspoon grated lemon zest
¾ cup confectioners' sugar
2 tablespoons whole milk
1 teaspoon lemon zest

Steps:

  • Cover almonds with boiling water in a bowl. Let stand for 1 to 2 minutes and drain. Rinse with cold water and drain again. Pat almonds dry and remove skin. Allow almonds to dry on paper towels.
  • Place half the almonds in a food processor; pulse until finely chopped. Add apricots and dates; pulse until fruit is chopped. Reserve remaining 1 cup almonds.
  • Combine flour, cinnamon, ginger, baking powder, cloves, cardamom, and salt in bowl. Beat eggs, brown sugar, honey, molasses, water, almond extract, orange zest, and 1 teaspoon lemon zest in a large bowl with an electric mixer until smooth. Add apricot mixture, blending until evenly distributed. Gradually stir in flour mixture on medium speed until dough comes together. Cover dough with plastic wrap and refrigerate for 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn dough onto a lightly floured surface and roll out to about 1/2-inch thick. Cut out cookies with a 2 1/2 to 3-inch diameter cookie cutter. Arrange cookies about 1 inch apart on ungreased baking sheets.
  • Lightly press 3 almonds into each cookie with tips towards the center to create a star pattern.
  • Bake in preheated oven until cookies begin to brown, about 12 minutes. Cool in the pans for 10 minutes before removing to cool on a wire rack.
  • Meanwhile, whisk confectioners' sugar, milk, and 1 teaspoon lemon zest in a bowl until glaze is smooth. Brush warm cookies with glaze and allow cookies to cool completely.

Pour butter into the flour mixture along with the lemon zest. Mix well until the dough forms into a solid ball. It’ll be soft and sticky, but will hold its shape. Cover the bowl with a kitchen towel (so dough doesn’t dry out) and leave to cool.
  • Using your hands, roll dough into 18 balls and place all on a baking sheet lined with parchment paper, leaving some room between the cookies for when they bake and expand. Flatten each ball slightly with your fingers. Bake cookies for 10-15 mins, until they puff up and get golden brown on the bottom. (Make sure they’re not burnt at the bottom!) Remove from oven, transfer to a wire rack and cool completely.
  • Let cookies dry completely, then store in an airtight container at room temperature for 1-2 weeks. Maybe longer, but they never last that long in my home.
