IMPOSSIBLY EASY VEGETABLE PIE
My, what a pie! A savory blend of cheddar cheese and broccoli in a pie that makes its own crust while it bakes.

Steps:
- Heat oven to 400°F. Grease 9-inch pie plate. Heat 1 inch salted water to boiling in medium saucepan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender; drain thoroughly. Stir together cooked broccoli, onion, bell pepper and cheese in pie plate.
- Stir remaining ingredients until blended. Pour into pie plate.
- Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

LAYERED VEGETABLE PIE
I saw this in a magazine today & wanted to keep the recipe as I have eaten lots of things like this. Simple, easy & tasty. I have suggested some optional additions, but that's up to you. If desired, you could also add some proscuitto or other meat for a non-vegetarian pie.

Steps:
- Peel and slice pumpkin into even sized pieces, then cook until just tender.
- Roast and peel the peppers, cut into large pieces.
- Mix the ricotta with parmesan, salt, pepper and garlic.
- Sprinkle a touch of nutmeg over the spinach (if using).
- Grease a deep baking dish or pie plate and line it with a circle of the shortcrust, making sure there's an overhang to seal the top.
- Layer the filling as follows: pumpkin, spinach, ricotta, red peppers.
- Brush the pastry edge with egg, then use the puff pastry to make a lid.
- Pinch the two pastries together to seal& brush the top with beaten egg.
- Make a small hole in the top to let steam escape.
- Bake at 200C (400F) for 20 minutes or until golden.

- Melt the butter in a saucepan, then stir in the flour and mustard powder and cook for 1 min. Gradually stir in the milk until smooth with no lumps, then keep stirring until the mixture begins to bubble and thickens to a creamy sauce. Remove from the heat, then stir in all but a handful of the grated cheese.
- Heat oven to 220C/200C fan/gas 7 and bring a large pan of water to the boil. Cook the potato slices for 5 mins, tip in the broccoli and cauliflower for another 3 mins, then finally add the peas for 1 more min. Drain all the veg and pat dry. Reserve enough potato slices to cover the top of the finished dish, then gently stir the rest of the vegetables into the sauce with the chives.
- Tip into a deep ovenproof dish, arrange over the reserved potato slices, then sprinkle with remaining cheddar. Bake for 20-25 mins until the topping is golden and crisp, then serve straight from the dish.

- Preheat oven to 400. Cook bacon until crispy, set aside to drain. Add squash, zucchini, red onion to already warm skillet and saute in bacon grease for 3-4 minutes, until it's starting to soften.
- In a separate bowl, combine 1 cup of cheese and mayo. Remove squash and zucchini and layer half of the mixture into the bottom of the pie shell. Top with half of the sliced tomatoes and then spread cheese on top of mixture, then add half of the chopped bacon and top with seasonings.
- Next add remaining zucchini, squash, tomatoes, bacon and top with 1/4 cup of cheese. Bake in preheated oven for 30-35 minutes.

- First off, start with the pastry. Put the flour into a bowl and add in the cubed butter. Using your fingers rub the butter in to the flour until you have breadcrumbs. Add in the grated parmesan and mix well. Add a couple of tablespoons of cold water and start to bring the mixture together. Add a couple of tablespoons at a time until you have a non sticky dough. Wrap the dough in clingfilm and put in the fridge until needed.
- Line a baking tray with foil and add the prepared peppers, aubergine, fennel, onion and garlic cloves. Drizzle with olive oil and and a good couple of pinches of salt and pepper. Put in the oven for 30 minutes until the peppers have started to colour. You want the vegetables to keep their firmness. When ready, take them out and put to one side to cool.
- Put a glug of oil in a frying pan and put on a medium heat. Add the mushrooms and cook for 3 or 4v minutes until they start to colour. Pour in the cream and add the tarragon and parsley. Stir until there is no excess liquid. This won't take long at all, a minute tops. Leave to one side.
