FAT FREE REFRIED BEANS



Fat Free Refried Beans image

These fat free refried beans are great to use in enchiladas, tacos or even as a spread.

Number Of Ingredients 7

2 cups canned black beans, divided
½ cup water
2 cloves garlic, minced
1 teaspoon pepper
1 teaspoon salt
1 teaspoon liquid smoke flavoring
¾ cup diced onion

Steps:

  • In a small bowl mash 2/3 cup of beans to a smooth paste.
  • In a medium saucepan over medium heat, combine the remaining beans with the water. When heated through, stir in garlic, pepper, salt and liquid smoke.
  • Stir the bean paste into the whole beans and mix well. Stir in the onion and cook for 10 minutes, or until onions are slightly cooked.

This recipe was given to me by a good friend. I love Refried Beans and this is a healthier version!

3 c dry pinto beans, rinsed
1 large onion peeled and halved
1/2 fresh jalapeno pepper, seeded and chopped
2 Tbsp minced garlic
3 Tbsp salt
1/2 tsp fresh ground black pepper
1/8 tsp ground cumin
9 c water

Steps:

  • 1. Place the onion, rinsed beans, jalapeno, garlic, salt, pepper and cumin into a slow cooker. Pour in the water and stir to combine. Cook on high for 8 hours, adding more water as needed. Note: If more than 1 cup of water has evaporated during cooking, then the temperature is too high.
  • 2. Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.

When you don't have all day to make refried beans and you can't stand the canned ones, these are easy and delicious.

2 tablespoons canola oil
2 garlic cloves, peeled
2 (15 ounce) cans pinto beans
1 teaspoon cumin
1 teaspoon chili powder
salt to taste
½ lime, juiced

Steps:

  • Heat canola oil in a heavy skillet over medium heat.
  • Cook garlic cloves in hot oil, turning once, until brown on both sides, 4 to 5 minutes.
  • Smash garlic cloves in skillet with a fork.
  • Stir pinto beans, cumin, chili powder, and salt into mashed garlic and cook until beans are thoroughly heated, about 5 minutes. Stir occasionally.
  • Smash bean mixture with a potato masher to desired texture. Squeeze lime juice over smashed beans and stir until combined.

Refried beans made simple in a crock pot...a great and low fat alternative to canned beans. If you like variety, black beans can be substituted for part of the pinto beans. Note: Since reviewers commented on the salt, I've reduced the amount. If you think this may still be too much salt for you, add it at the end and to your personal taste. Enjoy!

3 cups dry pinto beans (rinsed)
¼-½ jalapeno pepper (fresh, seeded and chopped (I used about 1/4 because I wanted my kids to eat it and not think it was too hot))
2 Tablespoons minced garlic
3 teaspoons salt
1¾ teaspoons fresh ground black pepper
⅛ teaspoons ground cumin (optional)
5 cups water
4 cups chicken broth
2 cups salsa
2 cups shredded colby jack cheese
2 cups shredded pepper jack cheese
8 ounces cream cheese (1 package)
16 ounces sour cream
2 Tablespoons chili powder
½ teaspoons ground cumin

Steps:

  • Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and chicken broth and stir to combine. Cook on High for 8 hours, adding more water as needed. Note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high.
  • Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.
