CREAMY VEGETABLE CASSEROLE image

A colorful blend of broccoli, cauliflower, and carrots in a creamy sauce of Italian cheeses and herbs.

Number Of Ingredients 13

1 pound broccoli florets
1 pound cauliflower florets
½ pound baby carrots
3 tablespoons butter
3 cloves garlic, (minced)
2 tablespoons cornstarch
2 cups heavy cream
1 ½ teaspoons dried Italian seasoning
Salt and pepper, (to taste)
¼ teaspoon chili powder, (or to taste)
⅛ teaspoon ground nutmeg
¾ cup shredded Italian blend cheese
1 cup pork rind panko crumbs, (for topping (you can also use regular panko crumbs))

Steps:

  • Preheat oven to 400˚F.
  • Lightly grease a 9x13 baking dish with cooking spray and set aside.
  • Boil a large pot of water over high heat.
  • Add all vegetables to the boiling water and bring water back to a boil; cover, lower heat to a steady simmer, and cook for 8 to 10 minutes, or until veggies are fork-tender.
  • In the meantime, melt butter in a 10-inch skillet; add garlic and cook for 20 seconds.
  • Whisk in cornstarch until blended; cook for 1 minute.
  • Add heavy cream; bring to a boil, whisking frequently. Cook for 3 to 4 minutes, or until thickened.
  • Remove from heat; stir in italian seasoning, salt, pepper, chili powder, ground nutmeg, and cheese; whisk until cheese is melted.
  • Spread ½-cup of the cheese sauce on the bottom of the baking dish.
  • Drain the vegetables, then transfer to the baking dish; season with salt and pepper and stir.
  • Add remaining cheese sauce; stir to coat all the vegetables.
  • Sprinkle top with pork rinds panko crumbs.
  • Bake for 20 to 23 minutes, or until hot and bubbly.
  • Remove from oven and let stand 10 minutes. Taste for salt and pepper, and adjust accordingly.
  • Serve.

This recipe is pictured on the front of my Company's Coming Vegetables cookbook and it's something I've always wanted to try, but never gotten around to yet. It looks absolutely fabulous -- a 3-in-1 with layers of broccoli, red studded rice, and carrots topped with a rich creamy sauce. Looks very elegant on a platter surrounded by more cooked broccoli florets, carrot chunks, and pearl onions.

2 eggs
1 cup broccoli floret, cooked, drained, and finely chopped
1 tablespoon butter or 1 tablespoon margarine, softened
1/2 cup grated cheddar cheese
1/4 teaspoon onion salt
2 eggs
1 cup cooked rice
1/4 cup chopped red pepper
1 tablespoon butter or 1 tablespoon margarine, softened
1/2 cup grated mozzarella cheese
1/4 teaspoon onion salt
2 eggs
1 cup cooked mashed carrot
1 tablespoon butter or 1 tablespoon margarine, softened
1/2 cup grated cheddar cheese
1/4 teaspoon onion salt
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/4 teaspoon salt
pepper, light sprinkle
1 cup milk

Steps:

  • For first layer: Spoon-beat eggs in bowl. Measure broccoli after it has been cooked and finely chopped.
  • Add to eggs along with remaining 3 ingredients. Mix well and pack into well-greased 8x4x2-1/2 inch (20x10x6 cm) pan.
  • For second layer: Spoon-beat second amount of eggs in bowl. Mix in the next 5 ingredients and spread over broccoli layer.
  • For third layer: Spoon-beat remaining eggs and mix in the next 4 ingredients. Spread over rice layer.
  • Bake at 325F for about 1 hour or until an inserted knife comes out clean.
  • Invert on serving tray and unmold. Garnish with cooked broccoli florets, cooked carrot pieces, and pearl onions, if desired.
  • For cream sauce: Melt butter in saucepan, then mix in flour, salt and pepper. Add milk and stir until sauce boils and thickens. Makes about one cup.

1 can (10.75-ounces) condensed cream of broccoli soup
3/4 cup whole milk
1 1/2 cups shredded sharp Cheddar
2 tablespoons chopped fresh chives
1/2 teaspoon minced garlic
Salt and pepper

Steps:

  • Stir in soup and milk in a heavy medium saucepan over medium heat to blend. Bring to a simmer, and then gradually whisk in cheese; stir until melted. Stir in chives and garlic. Season, to taste, with salt and pepper. Serve over broccoli, asparagus, cauliflower, potatoes, or vegetables of your choice.

1-1/2 cups sliced carrots
2 tablespoons butter
1 large egg
1 large egg yolk

BROCCOLI LAYER:
2 cups fresh broccoli florets
1 large egg
2 tablespoons butter, softened
2 tablespoons heavy whipping cream

POTATO LAYER:
1-1/2 cups diced peeled potatoes
1 cup chopped onion
1/4 cup butter, cubed
1 large egg
1 large egg yolk

Steps:

  • Lightly grease an 8x4-in. loaf pan. Line with parchment and grease the paper; set aside. In a skillet, saute the carrots in butter until tender; cool slightly. , Transfer to a food processor; cover and process until pureed. Add the egg, egg yolk, cream, sugar, nutmeg and allspice. Cover and process until well combined; set aside., For broccoli layer, place 1 in. of water in a small saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until tender. Drain; cool slightly. , Transfer to a food processor; cover and process until pureed. Add the egg, butter, cream, nutmeg and salt. Cover and process until well combined; set aside., For potato layer, in a skillet, saute potatoes and onion in butter until tender; cool slightly. Transfer to a food processor; cover and process until pureed. Add the remaining ingredients. Cover and process until well combined., Spread carrot mixture evenly in the prepared pan. Top with broccoli and potato layers. Place pan in a larger baking pan. Fill larger pan with boiling water to a depth of 1 in. , Bake, uncovered, at 350° for 50-60 minutes or until a thermometer reads 160°. Let stand for 10 minutes before inverting onto a serving platter; remove parchment. With a sharp knife, cut into slices.

  • SAUCE: Melt butter in saucepan.
  • Stir in flour, thyme, salt and pepper.
  • Slowly add broth and milk; bring to a boil.

I like to make this for family get-togethers. It's nice because you can make it up ahead of time and keep it in the fridge until you're ready to cook. In fact, I think it tastes better if you do!

1 lb dry ziti pasta
1 teaspoon kosher salt
1 teaspoon olive oil, for boiling
1 tablespoon olive oil, for frying
1 onion, sliced
4 garlic cloves, minced
1/2 lb ground beef
1/2 lb sweet Italian sausage
2 (26 ounce) jars spaghetti sauce
1 (6 ounce) package provolone cheese, sliced
3/4 cup sour cream
1 (15 ounce) container ricotta cheese
1 pinch kosher salt
1 pinch fresh ground pepper
4 green onion tops, diced
4 ounces mozzarella cheese, shredded
2 tablespoons freshly grated parmesan cheese

Steps:

  • Grease a large deep casserole dish or lasagna pan. Bring a large pot of water to a boil, adding 1 t kosher salt and 1 t olive oil. Add pasta and cook 8 minutes. Pasta should still be firm. Drain.
  • Fry onion, garlic, ground beef and Italian sausage in remaining olive oil over medium high heat until browned. (Remove casings from sausage first.) Add spaghetti sauce and reduce heat to low. Add salt if needed.
  • In prepared dish or pan, layer half the cooked pasta, all the provolone, all the sour cream, and all the ricotta. Sprinkle a tiny pinch of salt over the ricotta and some fresh ground pepper to taste. Next, Layer all the green onions, and half the meat sauce. Next layer the remaining pasta, all the mozzarella, the remaining meat sauce and top with the parmesan cheese.
  • Bake at 350 degrees for 25 - 35 minutes, or until cheeses have melted. (If you have it layered in a smaller, deep casserole dish, it will take longer to cook than if you have it layered in a more shallow larger lasagna pan.).
